KITTENCAL'S HEARTY CHICKEN SOUP

This is a thick hearty delicious soup I make using my recipe#118258 but can be made using using canned broth. Add in some cooked rice or egg noodles also if desired! The spinach is only *optional* if you are not a spinach-lover then you can omit, I like to add it in! The success of this soup will depend on the quality of your chicken broth, so make certain to use the best broth available! You can adjust all amounts to suit taste and increase the chicken broth if desired, the exact amounts do not really matter for all ingredients.

2 tablespoons olive oil
1 large onion, finely chopped
1 stalk celery, finely diced
2 tablespoons minced fresh garlic (or to taste)
2 teaspoons dried thyme
8 1/4 cups chicken stock (use homemade or good-quality canned, set 1/4 cup cold broth aside)
2 small russet potatoes, peeled and diced
2 -3 large carrots (peeled and sliced about 1/4-inch thick)
1 (10 ounce) package frozen spinach, thawed (use all or half amount of spinach) (optional)
3 cups cooked chicken or 3 cups cooked turkey
2 tablespoons flour
salt and black pepper (use lots black pepper)
cayenne pepper (or to taste) (optional)
grated parmesan cheese, cheesse (optional)

Steps:

  • Heat oil and butter in a large pot over medium heat; add in onion, celery, garlic and thyme; cook stirring for about 4 minutes.
  • Add in 8 cups chicken stock with diced potatoes; bring to a boil, reduce heat and simmer until the potates are tender (about 15-20 minutes).
  • Using a potato masher mash the potatoes in the the stock.
  • Add in sliced carrots, spinach (if using) and cooked chicken; bring to a boil, reduce heat cover and simmer for about 30 minutes over low heat.
  • Season with salt, pepper and cayenne (if using) to taste.
  • In a small bowl combine 1/4 cup room temperature or cold stock with flour until smooth; add into the simmering broth and cook until thickened (about 5 minutes).
  • Ladle into serving bowls and sprinkle with grated parmesan cheese if desired.

I make this soup using my recipe#118258 but since everyone might not have time or want to make homemade stock I have listed amounts for canned soup, you have the choice of using either, *please* do not omit the fresh ginger, it really brings out so much extra flavour in the soup, if you are using canned broth make certain to use a good-quality broth, the success of the soup will depend on it --- cooked rice may be used in place of the egg noodles, the veggie amounts may be adjusted to taste, and chicken bouillon is only optional, if you are using canned chicken broth you might want to add in for extra flavor ;-)

2 -3 tablespoons vegetable oil
1 large onion, chopped
2 -3 tablespoons fresh minced garlic
1 teaspoon fresh minced ginger (can use a bit more)
3 carrots, peeled and finely diced
1 large celery rib, diced
4 (14 ounce) cans good-quality condensed chicken broth, undiluted
3 cups water
1 tablespoon oxo chicken bouillon powder (or use 1 small package) (optional)
3 cups cooked chicken breasts, chopped
4 cups wide cooked egg noodles (or use as much as desired)
fresh ground black pepper (use lots black pepper!)
1 pinch cayenne pepper (or to taste)
salt (and to taste) (optional)

Steps:

  • In a large Dutch oven or pot heat oil over medium heat.
  • Add in onions, garlic, ginger, carrots and celery; cook stirring for about 3 minutes.
  • Add in canned broth, water and bouillon powder (if using) bring to a boil over medium-high heat.
  • Reduce heat to low, cover and simmer until veggies are tender (about 25 minutes).
  • Add in the cooked chicken breast and cooked egg noodles; simmer about 5 minutes or heated through.
  • Season with salt and lots black pepper.
  • Add in a pinch cayenne pepper if desired.

KITTENCAL'S BEST CHICKEN STOCK/BROTH (CROCK POT OPTION)



Kittencal's Best Chicken Stock/Broth (Crock Pot Option) image

Plan ahead this method takes 2 days to create the best most richest flavorful stock, far better and cheaper than any canned broth, once you try this you will never purchase cans of broth again! --- this can be done either on a stove top or in a crock pot but start the stock firstly on the stove top then transfer to a crock pot --- the same method may be used for turkey stock use the carcass and leftover legs, thigh and wing bones from your roasted turkey in place of the chicken pieces, also save your carcass and bones from roasted chickens and freeze them to throw in the pot, roasted bones will produce a richer golden colored stock but uncooked chicken works just as well --- I freeze the cooled cooked broth in 2 or 4-cup plastic freezer containers and store in the freezer until ready to use, you may do a quick defrost in the microwave when needed --- yield depends on size of pot and how much water is used, use this broth to make the best tasting chicken soup, don't remove the skins from onions they add color and taste to the stock adding in another onion won't hurt :)

4 lbs uncooked chicken pieces (bone and skin on, or use 1 large chicken carcass along with chicken pieces)
2 large onions, do not peel the skin off, and cut in large pieces
2 large unpeeled carrots, washed
2 large celery ribs, cut in half
10 -12 peppercorns
1 head garlic, broken into cloves (can leave the skin on)
2 tablespoons salt (or to taste)
cold water, to cover all ingredients

Steps:

  • Place the chicken pieces and/or carcass (or the turkey carcass) in an extra large stock pot, along with all remaining ingredients.
  • Fill with cold water to cover ingredients, and up to almost three quarters of the stock pot.
  • Place on stove element; cover and bring to a full boil.
  • Reduce heat; simmer and remove any fat or scum that is floating on top of the water.
  • At this point you can transfer to a crockpot.
  • Simmer covered with a lid on low heat for about 4-5 hours for stove top (or 9-12 hours on LOW setting for a crockpot).
  • Adjust salt to suit taste.
  • After the 5-6 hours of simmering time turn off heat and allow the pot to sit until room temperature with all ingredients still in the pot, DO NOT REMOVE BONES OR VEGGIES.
  • Transfer the pot to the fridge (with all ingredients still in it) and chill overnight.
  • THE FOLLOWING DAY: Remove the pot from the fridge (mixture will be a jelly consistency).
  • Remove any fat that has gathered on top.
  • Heat again until just to a liquid (this will make it easier to strain).
  • Remove all chicken pieces and strain in a large strainer, if desired you may strain again in a cheesecloth, but it is not necessary.
  • Let cool completely and freeze in containers.

This is my own creation and I make it every week, much to the delight of my DH. It has the richest, yummiest flavor and is really hearty. Your family will love it! We always eat this Friday night, so I make it Thursday evening, chill it, and then skim the hardened fat off the soup before serving it. The remaining broth is so light and low-fat, it's amazing! 2 chicken carcasses (bones from entire chicken)
1 -2 onion, cut into 1/8ths
2 leeks, cut into 2-inch chunks
2 cups baby carrots (or shredded)
6 garlic cloves, sliced into around 4 pieces
2 cups white wine (cooking wine is fine)
3 tablespoons chicken soup powder
1 tablespoon pepper (black or white)
3 -5 inches fresh ginger, peeled and cubed (thumb size pieces)
1 bunch flat leaf parsley, stems removed
1/2 bunch chopped fresh dill
4 -6 scallions, chopped into 'largish' pieces (long green onions)

Steps:

  • Place all ingredients into a very large soup pot.
  • Fill pot with water, almost to the top and bring to a boil.
  • Skim off any scum once the soup boils.(Optional).
  • Allow to boil for 1 hour, before tasting and adjusting seasoning, if necessary.
  • Boil for an additional 30-45 minutes, before removing bones and setting them aside. You can strip the bones of the chicken at this time, or wait until later.
  • Continue boiling the soup on a low simmer for anywhere between 45 minute- 3hours. A longer, slower boil will yield a very nice, rich flavor.
  • Once the bones have cooled off, peel and pick all the chicken pieces off the bones and put the chicken into the pot of soup. Discard the bones.
  • I sometimes make this soup and then transfer it into the crockpot to simmer on 'low' for up to 24 hours (we observe the Sabbath, so this ensures we get a hot soup for lunch). The slowly simmered broth is so rich and delicious.

Cooking the chicken in the broth and using dark meat gives you a richer soup and more flavor. The cumin and chilli powder in this soup add a punch of taste and fill the house with a wonderful smell! I prefer using orzo pasta, but you can use any other soup pasta that you prefer. I overlapped the directions and had a complete dinner in less than 30 minutes!

1 tablespoon olive oil
6 chicken drumsticks, skinned
8 cups chicken broth (I prefer organic)
2 cups carrots, diced
1 cup celery, diced
1 1/2 cups onions, chopped
3 garlic cloves, minced
2 teaspoons cumin
2 teaspoons chili powder
1 cup orzo pasta
2 cups zucchini, diced
1 cup whole kernel corn (if frozen, thaw first)
salt and pepper (optional)

Steps:

  • In a large pot, heat half of the oil over medium heat. Add drumsticks, turn and brown on all sides, approximately 5 minutes.
  • Meanwhile, heat remaining oil in frying pan over medium heat. Add carrots, celery, onion and garlic. Saute until slightly soft, about 5 minutes. Add cumin and chilli powder, stir to coat vegetables and let spices toast for a couple of minutes and turn off heat.
  • In chicken pot, add 6 cups of broth and be sure to scrape any chicken bits from the bottom of the pot. Bring to a boil, reduce heat and simmer drumsticks for 10 minutes. Remove chicken with tongs to cool and skim any foam off the top of the broth.
  • Add remaining 2 cups of broth to frying pan, to help spices release from the pan. Scrape bottom of pan and pour contents into large pot. Add orzo and zucchini and bring to a simmer for 10 minutes.
  • Remove chicken meat from drumstick bones. Be sure to remove the hard rubbery bits that can be found at the end of the tendons. Cut meat into large chunks. Add meat and corn to soup and simmer until heated through and orzo is cooked to your liking.
  • Add salt and pepper if you prefer but we found that it really didn't need it.
