This is a versatile recipe using your favorite herb with cream cheese, sandwiched in a chicken breast half, then breaded and baked for 30 minutes. Presto, quick and delicious dinner! I like oregano; sage or basil are other possibilities. Try 'em all!

2 boneless skinless chicken breast halves (not the monstrous ones, the "halved" ones)
2 tablespoons softened cream cheese
3 green onions, minced
4 tablespoons fresh sage or 4 tablespoons fresh basil
salt and pepper
1/2 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon paprika
1/3 cup flour
1 egg, beaten with
1 teaspoon water
1/4 cup plain dried breadcrumbs (like Progresso)
1/4 cup grated parmesan cheese
1/4 teaspoon garlic powder
2 tablespoons melted butter

Steps:

  • Preheat oven to 350 degres F.
  • Flatten open chicken breasts; spread 1 tablespoon of cream cheese on one half of each breast (resist the temptation to use more-- a little cream cheese goes a looooooong way!).
  • Evenly distribute the fresh herbs on top of that and season with salt and pepper.
  • "Fold"the chicken breasts back up and press tightly, tucking in cream cheese a bit.
  • In a shallow dish, combine the 1/2 teaspoons salt and pepper, paprika and flour.
  • In another dish, pour the beaten egg mixture.
  • In a third dish, combine bread crumbs, garlic powder and Parmesan cheese.
  • First dip chicken breasts in flour mixture, then beaten egg mixture, then bread crumb mixture.
  • Place chicken on a lightly greased baking sheet, drizzle about a tablespoon of melted butter on each breast and bake, uncovered, for 30 minutes or until cooked through and tender.

3 ounces cream cheese, softened
2 tablespoons minced onion
2 tablespoons chopped fresh parsley
1 teaspoon chopped fresh dill
1 teaspoon minced garlic
⅛ teaspoon lemon pepper
4 ounces fresh Dungeness crabmeat
4 skinless, boneless chicken breasts
1 cup all-purpose flour
2 eggs, beaten
3 cups fresh bread crumbs
2 tablespoons butter
2 tablespoons vegetable oil

Steps:

  • In a medium bowl combine the cream cheese, onion, parsley, dill, garlic and lemon pepper. Add crabmeat and mix thoroughly. Season with salt and pepper to taste. Cover and chill in refrigerator (can be prepared 2 hours ahead).
  • Using a small sharp knife, cut in half horizontally through the center of each chicken breast half, creating a pocket. Fill each pocket with 1/4 of the crab stuffing. Then dip each chicken piece into flour, eggs and finally bread crumbs to coat. Cover completely.
  • In a large skillet melt butter or margarine with oil over medium heat. Add filled, breaded chicken breast halves to skillet and saute until golden brown and cooked through (juices run clear), about 10 minutes each side. Remove from skillet, drain on paper towels and serve.

2 tablespoons olive oil
2 cloves garlic, chopped
½ onion, chopped
4 ounces chopped cooked ham
4 ounces fresh spinach
4 ounces cream cheese
4 ounces shredded Swiss cheese
4 large boneless chicken breast fillets
4 ounces Italian-style salad dressing
8 toothpicks, or as needed
½ sleeve round buttery crackers, crushed fine
4 ounces shredded Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a baking pan with cooking spray.
  • Heat a skillet over medium heat. Add oil, garlic, and onion. Cook and stir until tender, 1 to 3 minutes. Add ham and spinach leaves and stir until wilted, about 1 minute. Chop slightly in the skillet. Remove from heat and stir in cream cheese until melted and mixture has cooled a bit. Add Swiss cheese and set filling aside.
  • Cut each chicken breast to 1/2 inch thickness and place in a bowl. Pour Italian dressing over chicken. Place 1 chicken breast on a cutting board and pound thinner. Add about 1/4 of the filling and fold chicken over to form a packet. Seal using toothpicks and place in the prepared baking pan. Repeat with remaining chicken breasts and filling.
  • Combine crushed crackers and Cheddar cheese together in a bowl. Cover filled chicken breasts with cracker mixture, mashing them into the breasts.
  • Bake in the preheated oven for 45 minutes. Remove from oven and let sit for 10 minutes before transferring from the pan to a serving platter to allow filling to set up. Remove toothpicks before serving.

2 pieces bacon, Partially Cooked

Steps:

  • Pound out Chicken breast so it is about 1/4" thick.
  • Mix together cream cheese and green onions and spread cheese mixture over 1 side of chicken breast.
  • Roll Chicken breast up to conceal cream cheese.
  • Wrap partially cooked bacon around chicken breast and secure with toothpick.
  • Place on baking sheet and back for about 30 minutes at 375.
  • Broil for about 5 minute to crisp bacon.

8 slices bacon
4 tablespoons cream cheese
1/2 cup shredded monterey jack pepper cheese (cheddar, mozzarella, jack or blue cheese also work well)
2 diced jalapenos
chili powder
garlic salt
black pepper
8 toothpicks

Steps:

  • pre-heat oven to 350 degrees.
  • grease baking dish.
  • cut a pouch in each chicken breast fillet, careful not to poke through
  • spread 1 Tbsp cream cheese in each pouch.
  • add 1/4 shredded cheese in each pouch.
  • add diced jalapeños to each pouch (more or less than 1/2 a jalapeño per chicken breast depending on your spice level preference)
  • sprinkle garlic salt, chili powder and pepper on top of fillets to taste.
  • wrap 2 pieces of bacon around each fillet
  • secure each bacon piece with 1 toothpick near the opening of the pouch to keep fillet together.

This is for serious garlic lovers. The chicken bakes out so moist and tender! Grated cheese may be sprinkled on top of the breast the last 5 minutes of cooking if desired but that is optional. Double all ingredients for more than four breasts and adjust the amount of garlic to suit taste. For the coating amount you might be able to get away with 5 or maybe 6 very small chicken breasts, but I would suggest to increase the amount slightly --- to take this dish to yet another level, about 10 minutes before the cooking time is finished, drizzle the top of the chicken with a little pasta sauce, then sprinkle mozzarella cheese on top. Return to oven for about 10 minutes until the chicken is completely cooked and sauce is hot and cheese has melted. For a lemon-garlic flavor add in 3 tablespoons lemon juice to the melted butter/garlic mixture --- *NOTE* for a healthier alternative Smart Balance Butter Blend may be used in place of the melted butter --- you will love this chicken! 8 large boneless skinless chicken breasts
1/2 cup melted butter, slightly cooled (might need more)
1 1/2 cups dry breadcrumbs
1/4 cup parmesan cheese
1 teaspoon garlic powder
1/2 teaspoon seasoning salt (optional)
1/2 cup finely grated mozzarella cheese (optional) or 1/2 cup cheddar cheese (optional)
1 (8 ounce) cream cheese (very soft but not melted)

  • Place the melted butter in bowl.
  • In a shallow bowl combine the breadcrumbs with Parmesan cheese, garlic powder and seasoned salt (if using).
  • Gently dip each rolled breast firstly into melted butter then coat in the breadcrumb mixture.
  • Place the coated breasts seam-side down into a 13 x 9-inch baking dish spacing slightly apart.
  • Set oven to 375°F (set oven rack to bottom position).
  • Bake for about 30 minutes (some of the cream cheese mixture might spill out while cooking, just scoop it onto the plate when serving).
  • If using sprinkle finely grated mozzarella or cheddar cheese onto and around the breasts and return to oven for about 3 minutes to melt.
