KITTENCAL'S JALAPEñO CHEDDAR CHEESE BREAD
This is a bakery-quality bread that is on regular rotation at my house and has been so for many years it is one of my family's favorite breads, because of the addition of egg the rising time will be slightly longer than usual --- there is very little sugar and no butter or shortening in this bread which gives this bread a spongy-like texture, perfect for dipping! If you are a jalapeño lover then by all means add in as much jalapeño peppers as you desire, this bread does not require forming into a loaf shape just shape into two large balls which makes it an easy recipe for a beginner baker :)

Steps:
- Prepare a heavy-duty stand mixer with a kneader blade.
- Proof yeast in water with 1 teaspoon sugar for 8-10 minutes, or until foamy.
- Heat milk in the microwave for about 50 seconds on HIGH.
- In the stainless steel bowl, add in 4 cups flour, chopped jalepenos, salt, sugar, egg, hot pepper sauce (if using) and warmed milk.
- After the yeast has proofed, add to the bowl and start kneading, adding in more flour as needed to create a soft smooth semi-sticky dough, keep kneading for about 8-10 minutes.
- Towards the end of the kneading add in the cubed cheddar cheese, and mix until combined (the dough can be removed from the bowl and you can add/mix in the cheese by hand if dresired).
- After the kneading, let the dough sit out on a board or counter top to rest, covered with a clean tea towel for 8-10 minutes.
- Gather up dough and knead gently for 30 seconds.
- Then place the dough in a well greased bowl, and let rise until doubled (about 1-1/2 hours or could take a little longer).
- Punch down dough and slice into two even pieces.
- Shape into two large balls, and place on a cookie/baking sheet that has been sprayed with cooking spray.
- Cover with a clean tea towel and rise again for another 1 hour or more until doubled.
- Brush tops with an egg white that has been mixed with 1 teaspoon cold water.
- Sprinkle on grated Parmesan cheese or sesame seeds.
- Bake in a 375 degree oven for about 25-35 minutes or until the crust is a dark golden brown.

KITTENCAL'S OLD FASHIONED WHITE BREAD
This recipe goes back years and I still make it today, the dough is a pleasure to work with and always produces a soft high delicious loaf of bread --- sometimes it's not the ingredients but the method used, I have been baking bread for long enough to know all the secrets, follow the directions and I think you will be very pleased with this bread! --- Canadian members use all purpose white flour, for U.S. members use white bread flour --- I suggest to make this with a heavy-duty stand mixer but if you do not have one this can be made by hand --- just a tip, to create a perfect rising temperature for yeast bread/buns, just before you start making the recipe turn your stove on to 200 degrees F and leave it on for a couple of minutes then turn it off, you can rise your dough in the oven, works every time, but don't forget to turn the oven off or you will have to rise it at room temperature lol! --- this dough can be used for many different recipes, it makes a wonderful cinnamon-raisin swirl bread --- for pan greasing see my recipe#78579

- Fit a heavy-duty stand mixer with kneader blade.
- In a small saucepan scald 1/2 cup milk with 2 tablespoons sugar and 2 teaspoons salt until very warm stirring with a spoon until no sugar or salt granules remain; set aside until luke-warm (for faster cooling place in the fridge for about 15-20 minutes on your top fridge shelf).
- Place 4 cups white flour and 3 tablespoons shortening (or lard) in the stainless steel mixing bowl along with the warm milk mixture; cover bowl with a towel to keep the milk warm.
- In a cup mix together 1-1/4 cups warm water with 2 teaspoons sugar, mix with a spoon until the sugar is dissolved; add in 1 tablespoon plus 1/2 teaspoon dry yeast, stir with a spoon for about 15 seconds.
- Place a towel over the cup and proof for about 8-10 minutes or until foamy.
- Place the water/yeast mixture in the bowl.
- Start mixing/kneading add in more flour as needed to create a soft smooth dough (about 8 minutes).
- Remove the dough to a very lightly floured surface; cover with a clean tea towel and let rest for about 5-8 minutes.
- Gather up the dough and shape into a ball, then place in a large well greased bowl.
- Cover with plastic wrap and let rise in a warm place for about 1 hour (I use my oven!).
- Punch down the dough and place on a surface.
- Using hands (not a rolling pin) flatten to a 10 x 14-inch rectangle (trust me this dough will shape beautifully, no need for a rolling pin!).
- Roll the dough up tightly then seal the long seam.
- Using a knife slice off the dough ends just enough to fit into your 8x4-inch pan, then pinch the dough ends together to seal (you can shape the two ends in a ball and freeze to make buns or discard the dough).
- Place in a dark metal 8 x 4-inch bread pan.
- Cover and let rise in a warm place for about 30-40 minutes or until doubled.
- Bake in a 375 degree oven for about 25 minutes, or until golden brown.
KITTENCAL'S SOFT SUB ROLLS RECIPE - (4/5)

- 1. Prepare a heavy-duty stand mixer fitted with a kneader attachment. Place about 3-1/2 cups flour in the bowl. Melt the shortening in the microwave; add to the bowl with the flour. 2. In a measuring cup, measure out 1 cup milk, then add in 4 tablespoons sugar and the salt; heat until quite warm in the microwave, stirring to dissolve the sugar and salt. Pour the milk into the bowl with the melted shortening and flour; cover the bowl with a towel to keep ingredients warm. 3. Proof the yeast in a 3/4 cup warm water with 1 teaspoon sugar for about 8-10 minutes or until foamy. After proofing, add to the bowl and start kneading for about 3-4 minutes, then add in more flour as needed to create a soft semi-sticky dough, knead about 8 more minutes until smooth. 4. Place the dough on a very lightly floured counter or board; let rest for 5-10 minutes, covered with a clean tea towel. Grease a large bowl, then place the dough into bowl to rise in a warm place for about 50-60 minutes (because of the amount of yeast, the dough should take a shorter rising time in a warm place). Punch down dough. 5. Cut into pieces (I usually cut into 6 pieces), and shape large balls. Let dough balls rest for about 4 minutes (or just enough time to make shaping easier). Shape the dough into desired length for buns. 6. Sprinkle a large cookie/baking sheet with cornmeal, or lightly grease with cooking spray. Place the long pieces of dough on a baking sheet (shape once again if you need to). 7. Cover and let rise for about 25 minutes, or until doubled. Set oven to 375 degrees. Bake for about 22-25 minutes, or until dark golden brown. - Set oven to 325 degrees F.
- Set oven rack to middle position.
- Grease bottom and sides of a 9-inch springform pan,.
- For the crust; in a bowl combine the cookie crumbs with melted butter; mix until well combined (I use my hands for this).
- Pat into the bottom of the springform pan; chill while making the filling.
- For the filling in a large bowl using an electric mixer beat the cream cheese and sugar until fluffy (about 4 minutes).
- Add in eggs, lemon juice and vanilla; beat until thoroughly combined.
- Add in flour; beat until completely combined.
- Add in sour cream; beat until well combined.
- Pour over the crust in the pan.
- Bake for 1 hour.
- Turn the heat off and open the oven door to stay slightly.
- Allow the baked cheesecake to remain in the oven for 1 hour (with heat turned off).
- Cool slightly at room temperature then refrigerate overnight.
- Before serving release the sides of the pan from the cheesecake.
- Slice as desired then top slices with pie filling.
KITTENCAL'S JUMBO CINNAMON BUNS/ROLLS
These are large soft tender buttery rolls, the dough is rolled up from the short end creating more layers of cinnamon filling --- Canadian members use all-purpose flour, and bread flour for U.S. members --- to speed things up place the egg in a cup with very warm water for about 15 minutes to bring to room temperature --- you may of coarse use your own favorite icing for the buns --- since every dough rises at different times, the prep times is only estimated this dough is made using egg which will need slightly more rising time then dough made without --- don't be skimpy with the butter and brown sugar mixture, the more the better! :)

- For the dough; fit a heavy-duty stand mixer with the dough hook.
- Place 4 cups flour in the stainless steel bowl; set aside.
- Proof the yeast with 2 teaspoons sugar in 1/2 cup warm water for about 8-10 minutes or until foamy.
- Meanwhile in a microwave-safe bowl place the milk with butter cubes, salt and sugar; microwave on high until just slightly warmed (about 1 minute or a little more the butter does not have to be completely melted) stir to dissolve the sugar and salt.
- Add the mixture to the bowl along with the egg.
- When the yeast is foamy add to the bowl.
- Start kneading adding in more flour as needed to create a soft smooth dough (kneading will take about 8-10 minutes).
- Remove to a lightly floured surface, cover with a clean tea towel and allow the dough to rest for 5 minutes.
- Shape the dough into a ball and place into a greased bowl; cover and rise for about 1-1/2 hours or until doubled (the rising time will vary depending on how warm your kitchen is).
- Punch down the dough and allow to rest in bowl for 5 minutes.
- In a small bowl mix together the brown sugar with cinnamon.
- Transfer to a floured surface, roll into about 18 x 13-inch rectangle with short end facing you to make rolling up easier (I just spread out the dough using my hands, the measurments do not have to be exact).
- Spread the softened butter over the dough (you can use more than 1/2 cup buter if desired, I usually do!).
- Sprinkle the brown sugar/cinnamon mixture evenly over the butter, sprinkle with raisins and/or nuts if using.
- Starting at the short end roll up the dough as tightly as possible (the dough will spread out even more while rolling).
- Pinch the long seam together as best you can, you might also want to slice a small piece off both ends to even off the roll).
- Using a serrated knife slice log into two even halves, then slice each half into 6 even slices (this will give you 12 pieces, although I sometimes get less).
- Generously butter two 9-inch round cake pans (or use one 13 x 9-inch pan and place 3 rounds across, 4 rounds down in the pan).
- In each round cake pan place 5 dough rounds around the pan and 1 dough round in the middle placing cut-side down.
- Cover with a clean tea towel and allow to rise in a warm place until doubled (this may take about 1 to 1-1/2 hours or more depending on the temperature of your kitchen).
- Set oven to 375 degrees F.
- Bake until browned about 25 minutes.
- Cool the buns slightly then drizzle the icing over the warm buns.
