These are my hubby's favorite onion rings (and mine too.) They are really simple, and very fast to make. The onion rings are puffy and crispy, and a beautiful golden color. Great with cheeseburgers or brats.

2 large onions
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon ground black pepper
2 eggs
1/2 cup milk
1 teaspoon vegetable oil
vegetable oil, for frying

Steps:

  • Peel onions, cut into 1/4 inch slices, and separate into rings.
  • Combine dry ingredients; stir well.
  • Add eggs, milk, and 1 teaspoon oil, and beat until mixture is smooth.
  • Dip onions into batter; fry in deep hot oil (375 degrees F) until golden brown.
  • Drain on paper towels.

I have been making these for over 20 years, I usually get about 15 patties but it depends on the size of the batter that you drop in the pan, these are better if fried to very brown and crispy, you can make a double recipe, fry them then freeze them on a tray then pop them into freezer bags, then just warm them in the oven to crisp up, they are very addicting and I can tell you I eat half before they even get to the table lol! If you plan on doubling the recipe then make two separate recipes in two bowls, I have doubled the recipe into one bowl and for some reason they just are not as good --- if desired you could add in a slightly beaten large egg and reduce the milk by 1/4 cup --- you will *love* these! also see my recipe#186700 *and* recipe#244592

2 1/2 cups onions, finely diced (I just chop about 3 medium onions for this)
1 green onion, finely chopped (optional)
3/4 cup flour
1 1/2 tablespoons sugar
2 teaspoons baking powder
1 1/2 teaspoons seasoning salt (can use regular salt)
1/8 teaspoon cayenne pepper
1/2 teaspoon garlic powder (optional, or use 2-3 teaspoons fresh garlic)
black pepper (optional)
3/4 cup milk
oil (for frying, I recommend to use vegetable oil olive oil will interact with the flavor)

Steps:

  • Chop the onions finely (I chop them about 1/4-inch) then place into a bowl.
  • In another large bowl mix together the flour, sugar, baking powder, seasoning salt, cayenne, garlic powder (if using) and a small amount of black pepper; mix to combine well.
  • Add in the milk and whisk until thoroughly combined (the batter will be thick!).
  • Add in the chopped onions and green onions and mix with a wooden spoon until combined.
  • In a large non-stick frypan, heat a small amount of oil to medium-hot, adding in more oil as needed as the patties will absorb too much oil if you add in a large amount of oil at one time.
  • Drop the batter from a tablespoon (no more than about a tablespoon!) into about 1/2-inch of hot oil (I slide the batter off using off another spoon).
  • Flatten slightly with the spoon or spatula.
  • Sprinkle with a little salt.
  • Fry until crispy and brown on both sides.
  • **NOTE** these tend to hold a bit of oil so drain well on paper towels.

Anyone who has had the onion rings at Hackney's restaurants in the Chicago area will immediately know what these rings are like. They are served in a loaf, or brick, and when it arrives at the table everyone starts pulling it apart, like taking flakes off a bale of hay. The thinly sliced onions are lightly breaded and packed into a loaf, then deep fried so that the outside of the 'brick' is usually well done and sometimes the hot oil never gets to the inside of the brick. For that reason, I would usually order ours 'well done' so that the inside gets crispy. I have moved away from Chicago and found myself craving these rings so I went on a quest to figure it out. I came up with a 'controlled pile of rings', as opposed to the 'brick', using a Fry Daddy to keep the oil temperature under control. I'm really happy with these rings!

1 large Spanish onion
1 cup milk
1/2 cup water
1 cup flour
3/4 teaspoon salt
1/2 teaspoon paprika
canola oil, for frying

Steps:

  • Slice the onion into thin rings, about 1/8 to 1/4-inch thick. Separate the rings completely, place into a bowl and pour the milk and water over them. Swish them around occasionally and let sit for about 30 minutes.
  • Place the flour, salt and paprika into a plastic bag and shake to combine. Heat oil in a frying appliance or in a large, deep frying pot to 360°.
  • Using a fork, lift a bunch of rings out of the bowl and let the milk drip, then add the rings into the flour bag. Twist the bag shut and shake it, coating the rings. Lift the rings out and shake them a little back into the bag, to remove excess flour.
  • Add the rings to the oil and let cook, stirring occasionally to keep them cooking evenly. Don't worry about trying to keep them separated -- because they're thinly sliced they're going to want to tumble around each other. Let them cook for about 2-3 minutes, until they're a nice golden brown. Remove with a large slotted spoon, letting the excess oil drip back into the pot, and place on a paper towel-lined sheet pan.
  • These are best consumed hot from the fryer.
  • One large Spanish onion is equal to about 3 batches of rings in the fryer.
  • This recipe is really easy to double, triple, etc.

1 cup club soda
peanut oil
2 -3 cups panko breadcrumbs (Japanese-style breadcrumbs)

Steps:

  • Combine flour, cornstarch, instant potatoes, and club soda in a bowl stir well and let sit for about ten minuets.
  • place 2-3 cups Panko in a pan or bowl for dredging.
  • cut onions into 1/4 size rings and separate.
  • heat oil to 350 degrees.
  • dredge onion rings in batter then coat with Panko.
  • fry onion rings 2-3 minuets flipping half way or until golden brown remove from oil and season with salt.
