TANGY BEEF OR PORK MARINADE

I created this recipe by fooling around with some ingredients. The result is a wonderful tangy marinade with a bit of a kick that I use on steaks, pork chops, roast pork and even deer meat. This is especially good for a tough cut of meat. I frequently use this for london broil and marinate overnight. If I use for a pork roast, I add more maple syrup to make it sweeter and then baste the pork roast with it when it is cooking in the oven. ETA: You can also use Agave nectar in place of honey or maple syrup as a low glycemic option.

1/4 cup red wine vinegar
1/8 cup soy sauce
1/4 cup honey or 1/4 cup agave nectar
1 teaspoon ground ginger
1/2 teaspoon ground mustard
2 tablespoons sesame oil or 2 tablespoons olive oil
1 1/2 tablespoons minced garlic
1/2 teaspoon red pepper flakes (optional)

Steps:

  • Mix red wine vinegar, soy sauce, maple syrup, ginger, mustard.
  • Stir well.
  • Taste for your own taste preferences.
  • It should have a sweet tangy taste.
  • Add garlic, sesame oil and optional red pepper flakes.
  • Mix well.
  • Pour into ziploc bag, add meat and press out all air.
  • Marinate in fridge for several hours shaking the contents often as the oil will separate.
  • I usually marinate overnight, but a couple hours is fine too.
  • Marinating overnight makes the meat extremely tender and flavorful.
  • The soy sauce measurement is low for our taste preference as we don't like it's salty taste.
  • You can adjust however you wish to your liking.
  • I don't measure any of the ingredients and I add alot of ginger and red pepper flakes because we like the additional kick.

KITTENCAL'S POT ROAST MARINADE AND TENDERIZER

This is a great marinade/tenderizer for cheaper cuts of roasts like chuck etc, it really does a wonderful job of tenderizing! Powdered meat tenderizer can be found in the spice section (I buy Club House powdered meat enderizer, it is sold in a 270-gram spice bottle). Plan ahead the roast needs to marinade overnight. Do not add any salt in with the marinade as it will effect the tenderizing process, salt the roast just before cooking. When ready to cook, make certain to leave the roast out for 1 hour at room temperature before cooking. This works good on pork roasts also. Cooking time is 24 hours marinating time.

Number Of Ingredients 10

1 -2 tablespoon powdered meat tenderizer
1/4 cup finely minced onions or 1/4 cup use 1-2 teaspoons onion powder
2 teaspoons thyme
2 teaspoons marjoram
1 cup dry red wine
3/4 cup red wine vinegar
1/2 cup vegetable oil
3 tablespoons lemon juice
2 tablespoons minced fresh garlic (optional) or 1 teaspoon garlic powder (optional)
black pepper

Steps:

  • Pierce meat with a fork all over.
  • Sprinkle liberally with powdered tenderizer, then leave sit out at room temperature for 30 minutes in a large bowl.
  • In the meantime, in a smaller bowl whisk together minced onion (or onion powder (if using) thyme, marjoram, red wine, wine vinegar, oil, lemon juice and minced garlic (if using) and black pepper.
  • After the 30 minutes, pour the marinade over the roast in the bowl; rub in with hands to coat well.
  • Place the roast in a large heavy-duty ziploc freezer bag.
  • Pour the marinade from the bowl over the roast and close and seal bag.
  • Turn the bag several times to coat.
  • Place into a large bowl and refrigerate overnight (turning several times during refrigeration time).
  • When ready to cook discard the marinade, and leave the roast out at room temperature for 1 hour before cooking (this is important, it relaxes the meat fibers which creates a more tender roast!).
  • Season with salt and pepper, then cook as desired.

This is a teriyaki style marinade ---who ever said that marinades are only for flavor and not tenderizing has never tried this recipe! this marinade produces the most fabulous tasting beef and pork and tenderizes like nothing you have ever had before! I developed this recipe almost 20 years ago and still use it to this day, this works fabulous on a London Broil, it makes the best kabobs and pork tenderloins!--- the longer the meat marinades the more tender and juicy it will be, so plan ahead the meat needs to stay in the fridge for a minimum of 8 hours to 24 hours (even better if left for 24 hours!) the amounts listed are enough for 2 pounds beef or pork so you might want to double or even triple the ingredients, if I am doubling or tripling I usually cut back on the soy sauce and still only use 2-3 tablespoons fresh garlic, you can add in 1 teaspoon dry mustard powder also, the powdered meat tenderizer is only optional you do not have to use it this works great even without it! don't forget to allow the meat to come down to almost room temperature before cooking, this will relax the meat fibers and create a more tender meat --- DO NOT substitute the honey for anything else but pure maple syrup, and if possible I recommend using honey that is what works as the tenderizer

1/3 cup soy sauce
1/4 cup red wine vinegar or 1/4 cup cider vinegar
3/4 cup olive oil or 3/4 cup vegetable oil
2 -3 tablespoons fresh minced garlic
1 teaspoon black pepper
1/2 teaspoon ginger powder (if you prefer a stronger ginger flavor then add in more)
4 tablespoons liquid honey (or 4 tablespoons maple syrup, DO NOT substitute brown sugar or white sugar or pancake syrup)
3 tablespoons Worcestershire sauce
2 teaspoons powdered meat tenderizer (optional)

Steps:

  • In a large bowl combine all ingredients except the meat; mix/whisk until very well combined.
  • You may now transfer the marinade to a large resealable plastic bag if desired or leave in a large bowl.
  • Pierce the meat all over with a fork.
  • Add the meat to the marinade then turn to coat.
  • Refrigerate for at least 8 hours or overnight.
  • Remove meat and discard the marinade.
  • Leave the beef or the pork sit out on the counter and bring almost room temperature, this will relax the meat fibers and make for a more tender juicy steak or cut of beef or pork (this is a very important step!).
  • Grill or oven-broil to desired doneness.

This marinade will produce the most tender and not to mention the best tasting steak and it's enough for up to four steaks about 1-1/2-inches thick --- just remember to bring the steaks to almost room temperature before grilling this will relax the meat fibers and make for a more tender juicy steak --- the amounts may be doubled but keep the garlic at the same amount, for best results it is recommended to not substitute any ingredients, do not add any salt to the marinade and do not salt the meat until ready to grill --- this marinade may be used for any cut of steaks.

2 tablespoons chopped fresh garlic (I use 6 large cloves)
2 tablespoons Worcestershire sauce
2 tablespoons balsamic vinegar
2 teaspoons Dijon mustard (can use 1 teaspoon)
2 tablespoons soy sauce
1/3 cup oil (can use olive oil or vegetable oil)
1/2 teaspoon fresh ground black pepper (or to taste)

Steps:

  • Mix all the marinade ingredients together in a bowl.
  • Pour over steaks.
  • Cover tightly and place the steaks in the refrigerator for minimum 4 hours or even better for 24 hours.
  • Remove the steaks from the fridge.
  • Bring the steaks down to almost room temperature before grilling.
  • Season steaks with steak seasoning or seasoning of choice if desired (I like to use Montreal Steak Seasoning).
  • Grill for 6-12 minutes turning 3-4 times or until desired doneness.

I have a few favorite marinades that I have used for years this is one of them, this marinade will tenderize and add flavor to any cut of meat to absolute perfection and makes fantastic kabobs! This can also be used for chicken but because of the vinegar amount marinading time will need to be reduced to a maximum of 6 hours or the acid vinegar will start to "cook" the chicken, use only honey no other substitutions!.. you will love this marinade!

Number Of Ingredients 11

1 1/2 cups oil
3/4 cup soy sauce (can use low-sodium)
1/4 cup Worcestershire sauce
1/2 teaspoon salt (or to taste I use seasoned salt)
3 tablespoons chopped fresh parsley or 2 teaspoons dry parsley flakes
1 teaspoon fresh ground black pepper (or to taste)
1/2 cup wine vinegar
1 -2 tablespoon fresh minced garlic (or to taste, I use lots!)
1/3 cup store-bought teriyaki sauce
1/2 cup honey (do NOT use any substitutions use only honey)
2 small green onions, chopped (optional)

Steps:

  • Put all ingredients into a blender (except the green onions, if using add them in after blending).
  • Blend for 30-40 seconds.
  • Mix in in green onions.
  • This recipe makes 3-1/2 cups of marinade, but may be stored in the refrigerator tightly covered in a glass container for up to 3 weeks.
  • *NOTE* marinate the beef, pork or lamb for 8 hours or up to 24 hours chicken up to 8 hours.
