KITTENCAL'S 1-GRAM LOW FAT BANANA-BLUEBERRY MUFFINS
Less than 1 gram of fat in each muffin but you wouldn't even know they are low-fat, these are even better the next day, and are just as delicious without the berries, of coarse you can use full-fat sour cream or yogurt, flavored yogurts only add to the taste of these muffins, I like to sprinkle a sugar/cinnamon mixture on top of each muffin before baking but that is optional, see note on bottom for doubling the recipe. Steps:
- Set oven to 350 degrees.
- Grease or line 12 regular-size muffin tins with paper liners.
- In a large bowl mix together flour, baking powder, baking soda, salt cinnamon, nutmeg (if using) and blueberries.
- In another bowl beat banana, sour cream, sugar, egg and vanilla until just blended; stir into the dry blueberry mixture JUST until combined (do not over mix a few small lumps are fine!).
- Scoop/divide the mixture between the muffin tins.
- Bake for 15-20 minutes or until the muffins test done.
- *NOTE* for a double recipe; because of the large amount of baking powder prepare each recipe in two separate bowls, do not double one recipe into one bowl.

- Preheat oven to 400°F.
- Spray twelve 2 to 2 1/2 inch muffin pan cups.
- Into large bowl, sift flour with soda, powder and salt.
- Into medium size bowl beat egg whites and milk.
- Add sugar, then egg mixture into large bowl.
- With spatula, blend until throughly combined (mixture should be slightly lumpy).
- Gently fold blueberries into mixture.
- Spoon batter into prepared muffin cups about 2/3 cups from top.
- Bake 18 to 22 minutes.

- Preheat oven to 350 degrees F (175 degrees C). Grease muffin cups or line with paper muffin liners.
- In a large bowl combine mashed bananas, sugar, baking powder, salt and flours; mix until smooth. In a small bowl or cup combine egg replacer and water; stir into banana mixture. Fold in blueberries.
- Spoon batter evenly, about 1/4 cup each, into muffin cups.
- Bake in preheated oven for 20 to 25 minutes, or until golden brown.

SKINNY BANANA BLUEBERRY MUFFINS

(Then again, they eat pretty much everything...) I did toss the frozen blueberries in a heaping tablespoon of flour, to prevent blue muffins. This is definitely a keeper!

- Preheat oven to 325F degrees. Spray 15 muffin tins with nonstick spray.* Set aside.
- In a large bowl, gently toss the flour, baking soda, salt, and cinnamon together until combined. Set aside.
- In a separate bowl, mix the honey and brown sugar together - it will be thick and lumpy. Try to get out as many lumps as you can - a fork works well to break it up. Add the mashed banana, yogurt, and beaten egg. Slowly pour the wet ingredients into the dry ingredients. Gently begin to fold it all together. It will be very thick. Add the milk slowly and continue to gently mix the ingredients together. The milk will thin everything out, but the batter will still remain thick. Gently fold in the blueberries. Do not overmix the batter, which will lend tough, dry muffins.
- Divide the batter between 12 muffin tins. Fill all the way to the top. Bake for 20 minutes until very lightly browned on the edges. A toothpick inserted in the center should come out clean. Allow the muffins to cool completely.
- *Note: Do not use cupcake liners; muffins will stick to them.
