8 skinless chicken drumsticks
Coarse salt and ground pepper
2 tablespoons vegetable oil
1 large yellow onion, diced large
1 large carrot, diced large
1 large celery stalk, diced large
3 garlic cloves, smashed and peeled
1 large russet potato, diced large
1 pound collard greens, stems removed, leaves torn
1 large can (48 ounces) vegetable juice
2 teaspoons Worcestershire sauce
2 teaspoons white vinegar

Steps:

  • Season chicken generously with salt and pepper. In a 6-quart Dutch oven or heavy pot, heat oil over medium-high. Cook chicken until brown on all sides, 10 to 12 minutes; transfer to a plate. Add onion, carrot, celery, and garlic to pot; cook until onion softens, 3 minutes. Add potato and collard greens; cook until greens begin to wilt, 3 minutes.
  • Return chicken to pot; add vegetable juice and Worcestershire. Bring to a boil; reduce to a medium simmer, partially cover, and cook until chicken is separating from the bone and vegetables are tender, about 45 minutes. Season with salt and pepper and stir in vinegar just before serving.

1 whole (about 3 pounds) white-fleshed, mild-flavored fish,
1 1/2 pounds ripe tomatoes
2 jalapeño or serrano chiles (or to taste)
8 garlic cloves, 5 finely chopped, (3 peeled and left whole)
1/2 cup coarsely chopped white onion
2 1/4 teaspoons kosher or coarse salt (or to taste, divided)
1/2 cup plus 2 tablespoons olive oil
1 pound cleaned squid (rinsed and sliced into 1/4" rings)
1 pound medium shrimp peeled, (shells and tails reserved if making broth)
2 cups Mahatma® Rice white rice (or jasmine white rice)
5 cups seafood or fish broth (homemade or store bought )
1 large fresh epazote sprig (or 3 cilantro sprigs)
12 small to medium fresh clams (scrubbed and rinsed)
12 small to medium fresh mussels (scrubbed and rinsed)

Steps:

  • NOTE: If you plan on making the seafood or fish broth, get the whole fish and ask your fish monger to clean it for you and to give you the head, bones and tail to use for the broth. Also, save the shrimp shells and tails to use in the broth, as well.
  • Cut the fish fillets so that you have 6 more or less equally sized pieces. Season with ¼ teaspoon salt and freshly ground black pepper to taste. Set aside.
  • Place the tomatoes, jalapeños, and the 3 whole garlic cloves in a medium saucepan, cover with water and bring to a simmer over medium-high heat. Simmer until the tomatoes are fully cooked and very soft, about 10 minutes. Transfer the tomatoes, garlic cloves, and only 1 of the jalapeños (puree one chile at a time, taste for heat, and add the other if desired) to a blender, and add the onion and 1 teaspoon of the salt. Puree until completely smooth.
  • Rinse and dry the saucepan and heat 2 tablespoons of the olive oil in it over medium heat. Once hot, add the tomato puree and cover the pan partially with a lid, as the puree will sputter and jump. Cook, stirring occasionally, until thick, dark and fragrant, about 6 to 7 minutes. Remove from the heat and set aside.
  • In a large, wide casserole, heat 1/4 cup of the olive oil over high heat. Once hot, toss in the squid, sprinkle with 1/2 teaspoon of salt, add half of the finely chopped garlic, and cook for 2 minutes, stirring halfway through. Remove the squid and the garlic with a slotted spoon and place in a heatproof bowl.
  • Add the shrimp to the casserole, along with another 1/2 teaspoon of salt and half of the remaining chopped garlic, and cook for 2 minutes, stirring and flipping the shrimp over halfway through. Remove with a slotted spoon and place in the bowl with the squid.
  • Reduce the heat to medium and add 1/4 cup of the remaining olive oil to the casserole. Once hot, add the rice and cook for about 3 to 4 minutes, stirring often and scraping the bottom of the casserole, until the rice is crackling and coated with oil, feels heavier in the pan as you stir it, and the color of the grains has changed from a pale white to a deep milky white.
  • Pour the cooked-down tomato puree over the rice; it will sizzle and smoke a bit, which is what you want. Cover partially with a lid and cook, stirring a couple of times, until the rice absorbs most of the sauce, about 2 to 3 minutes. Add the seafood broth and stir the rice, scraping the bottom of the casserole. Add the epazote or cilantro sprigs and reduce the heat to medium-low. Gently arrange the reserved shrimp and squid on top of the rice, adding any of their juices from the bowl, as well as the clams, mussels and seasoned fish fillets.
  • Cover and simmer over medium-low heat for 10 to 12 minutes, until the fish is cooked through and can be easily pulled apart with a fork, and the clams and mussels have opened up. Turn off the heat and serve immediately in soup plates. The rice should be tender and the mixture very soupy.

When we cook roasts, there's usually a good bit of leftover. These go into the freezer to use later for stews. I usually have pork, chicken, beef or lamb, so it's always a mixture that goes into the stew. Use whatever you have available.

5 cups cooked meat, cut up into bite size pieces
1 1/2 cups carrots, sliced
1 cup onion, chopped
3/4 cup celery, chopped
3/4 cup greens (spinach, lettuce, cabbage, etc.)
1/4 cup frozen corn
1/4 cup frozen peas
1 (400 g) can chopped tomatoes
3 garlic cloves, minced (or 1/2 tsp. garlic powder)
4 cups water
1 beef bouillon cube
1/2 cup red wine
1 tablespoon Worcestershire sauce
1/2 teaspoon Old Bay Seasoning
1 bay leaf
1/4 cup fresh parsley, leafy part only
1/2 teaspoon salt
fresh ground black pepper, to taste
2 potatoes, or (cut into bite size pieces)
1/2 cup cooked pasta, or (orzos or any other small shaped pasta)
1/2 cup cooked rice

Steps:

  • Put all ingredients (except later additions) into a large stew pot and cover.
  • Place on burner at medium high heat and bring to a boil.
  • Allow to boil 5 minutes.
  • Turn down heat to lowest point. Move to the smallest burner if necessary to get a lower heat.
  • Simmer 1 to 1 1/2 hours.
  • If using potatoes: Add during last 20-30 minutes and continue to simmer until potatoes are tender.
  • If using pasta or rice: Add during the last few minutes just to heat through.
  • Serve with rolls or crusty bread and butter.

Steps:

This soup is usually made up of leftover vegetables in the fridge or you can cut up fresh vegetables. The amount of vegetables you put in depends on how thick you want your soup. We like lots of veggies. This soup can be pureed and served with croutons on top. Great for a cold night supper. You can really let your imagination get carried away with this soup. I don't make it the same every time. It depends on what is in my fridge that is left over. Meat or chicken can be added. Enjoy

This soup is SO good to have around on a cold, winter's day or just any time of the year. I tend to tripple the recipe so that my family and I can have this on hand in the freezer and eat it for quick lunches or dinners. Hope you enjoy it as much as we do.

1 lb stew meat, diced
1 large onion, diced
3 stalks celery, chopped
1/4 cup celery leaves
2 garlic cloves, minced
1/4 cup red wine
4 cups beef broth (I use low sodium or make my own)
6 -10 cups water (I start with 6 and add as needed)
1 small head of cabbage, chopped
3 (14 1/2 ounce) diced tomatoes (do not drain)
2 cups carrots, sliced
1 small zucchini, diced
4 cups frozen green beans
4 cups frozen corn
4 cups frozen peas
2 cups fresh mushrooms, sliced
3 cups potatoes, peeled and diced into 2-3 inch cubes
2 cups Baby Spinach
5 cups v 8 vegetable juice (I use low sodium or sometimes spicy hot for a kick)
1 teaspoon black pepper
1 teaspoon salt (or to taste)
2 tablespoons dried parsley
1/2 tablespoon dried basil
1 teaspoon dried oregano
1 teaspoon dried thyme

Steps:

  • Brown stew meat, onions, garlic and celery in a large pot.
  • Once stew meat is browned, add red wine and deglaze bottom of pan.
  • Add all other ingredients and bring to a boil, stir well.
  • Cover and reduce heat to low, simmer for 1-2 hours until veggies are tender.
  • Serve with sandwiches, crackers or rolls.

3 tablespoons olive oil
2 pounds venison stew meat, cut into 1-inch cubes
1/4 cup all-purpose flour
Essence, recipe follows
2 cups chopped onions
1 cup chopped celery
1 cup chopped carrots
1 tablespoon chopped garlic
1 cup chopped tomatoes, peeled and seeded
1 tablespoon chopped fresh basil leaves
1 tablespoon chopped fresh thyme leaves
2 bay leaves
1 cup red wine
4 cups brown stock
Salt and black pepper
Crusty bread
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • In a large pot, over high heat, add the olive oil. In a mixing bowl, toss the venison with flour and Essence. When the oil is hot, sear the meat for 2 to 3 minutes, stirring occasionally. Add the onions and saute for 2 minutes. Add the celery and carrots. Season with salt and pepper. Saute for 2 minutes. Add the garlic, tomatoes, basil, thyme, and bay leaves to the pan. Season with salt and pepper. Deglaze the pan with the red wine. Add the brown stock. Bring the liquid up to a boil, cover and reduce to a simmer. Simmer the stew for 45 minutes to 1 hour, or until the meat is very tender. If the liquid evaporates too much add a little more stock.
  • Remove the stew from the oven and serve in shallow bowls with crusty bread.
  • Combine all ingredients thoroughly.

  • Heat butter and oil over medium-high in a large soup pot or Dutch oven and brown beef. Once beef is browned (about 7-10 minutes), transfer to a plate.
