CREAMY GREEN BEANS
If you're looking for something different as a side dish these green beans are a must. This recipe is so easy; that's the second best part (the taste being the first!). You don't have to measure anything, even the beans, just take a good sized amount that will please you and alter it to taste!

Steps:
- Preheat your oven to 400°F.
- Cut ends off of beans.
- Fill a small lasagna pan, cake pan, or casserole dish with the beans, mushroom soup and onion soup mix.
- Mix together well.
- Cook, uncovered, for 45 minutes up to an hour, stirring occasionally.
- Remove from oven, and serve.

- Step 1 - Prepare the green beans by snipping of the ends, boil in water until tender and drain off the water
- Step 2 - In a small sauce pan, melt the butter
- Step 3 - Stir in the flour, salt and pepper
- Step 4 - Whisk in the milk and stir until the mixture thickens
- Step 5 - Pour the cream over the green beans. Add more salt and pepper to taste and enjoy!
CREAMY GREEN BEANS AND POTATOES
A recipe I really liked based on one from JoAnna Lund's Cooking Healthy with Splenda. So, you can substitute Splenda back in if you so desire. JoAnna's hint: "Thaw green beans by placing in a colander and rinsing under hot water for 1 minute."

Steps:
- In a medium saucepan, combine green beans, potatoes, and water. Bring mixture to a boil. Continue cooking for 10 minutes or until beans and potatoes are tender. Drain well.
- In a covered jar, combine evaporated milk, flour, and sugar. Shake well to blend.
- Pour milk mixture into same saucepan. Stir in parsley flakes and lemon pepper. Cook over medium heat until mixture thickens, stirring often. Add drained green beans and potato mixture. Mix well to combine. Continue cooking for 5 minutes or until mixture is heated through, stirring often.

- 1. In a non-stick skillet, melt the butter, then add the green beans (drained). Saute the beans for 3-4 minutes until thoroughly heated.
- 2. Cube the cream cheese into a few small pieces and add to the skillet. Stir until cream cheese is melted and forms a creamy sauce.
- 3. Season with salt & pepper and move to serving dish - sprinkle with parmesan cheese right before serving.

- In a small saucepan, melt 1 tablespoon butter; stir in cornflakes and set aside. Melt remaining butter in a large saucepan. Stir in flour, salt, pepper, onion and sugar; heat and stir until bubbly. Reduce heat; add the sour cream and stir until smooth. Cook and stir over low heat for 2 minutes (do not boil). Fold in the beans. , Spoon into a greased 1-1/2-qt. baking dish. - Fill large bowl with ice water and set aside.
- In a large pot over high heat, bring 4 quarts water and 1 cup vinegar to boil. Add sugar, salt, and beans and cook until beans are just tender, about 3 minutes.
- Add onion to pot and cook until just softened, about 30 seconds.
- Drain vegetables in colander and immediately transfer to ice water.
- Once beans and onion are cool, drain again and dry thoroughly with paper towels.
- Whisk mayonnaise, yogurt, oil, and 1 tablespoon vinegar in large bowl. Add chilled beans and onions and toss until well coated. Season with salt and pepper.
