GERMAN KIPFELS
This is my Grandma's cookie recipe she made when she worked at a bakery in Germany before WWII. She moved to the US after the war and passed this cherished recipe on to her children and grandchildren. For pictorial instructions check out my blog: http://www.perfuzion.com/german-kipfels/

Steps:
- Preheat oven to 350°F.
- Put flour on counter.
- Make hole in the middle to put other ingredients.
- Add yeast, water, salt, vanilla, sugar, eggs, baking powder and butter to middle of flour.
- Knead dough until all ingredients are mixed. (Alternatively, use Kitchenaid with paddle blade to combine ingredients. First cream together butter and sugar; add eggs and vanilla; whisk together dry ingredients and add to wet alternating with water.).
- Roll a fourth of the dough out on to the counter to 1/8" thickiness (Make sure the dough is rolled very thin).
- Cut dough into 3x3 inch squares using a pizza cutter.
- Put 5 chocolate chips in the middle.
- Roll dough from corner. Cookie should look like a crescent roll. Make sure to pinch the dough together so they don't unroll when cooking.
- Place on parchment-lined baking sheet. Bake in the oven for 10-12 minutes.
- Let cool for ~10 minutes.
- Roll in powdered sugar using a zip lock bag.
- Put cookies in container/ziplock and store in the freezer for best taste.
SCANDINAVIAN KIFLINS
My grandmothers recipe for my favorite cookies. She always makes them around the holidays and are part of my holiday memories.

Steps:
- Cream butter and sugar.
- Add nuts, mix in flour.
- Refrigerate ½ hour.
- Form crescent shaped cookies (or any other shape with cookie cutter) 1/4" thick.
- Bake on ungreased cookie sheet at 375 degrees until lightly browned.
- Grind vanilla bean and mix with powdered sugar.
- When cookies are cool, sift sugar mixtures over cookies.

I have searched far and wide for a recipe that mimics my favorite, store-bought version of these cookies. I think, after days of thrown-out cookies, I have come as close as I can get.

Steps:
- Stir together the molasses, honey, shortening, and margarine in a saucepan over medium heat; cook and stir until creamy. Remove from heat and allow to cool to room temperature. Stir in the eggs.
- Combine the flour, white sugar, brown sugar, cardamom, nutmeg, cloves, ginger, anise, cinnamon, baking soda, pepper, and salt in a large bowl. Add the molasses mixture and stir until thoroughly combines. Refrigerate at least 2 hours.
- Preheat oven to 325 degrees F (165 degrees C). Roll the dough into acorn-sized balls. Arrange on baking sheets, spacing at least 1 inch apart.
- Bake in preheated oven 10 to 15 minutes. Move to a rack to cool. Dust cooled cookies with confectioners' sugar.

SMOKED KIPPERS WITH SCRAMBLED EGGS
My mother would make a special breakfast on occasion of fresh smoked kippers and scrambled eggs served with lashings of hot buttered toast and mugs of steaming tea. Kippers are not just breakfast food but can be served for lunch or supper.

Steps:
- In a large skillet on low heat melt 1 tablespoon of butter and add the kippers cooking 3 to 5 minutes per side.
- In a bowl whisk the eggs, curry powder, milk, 1 tablespoon of butter salt and pepper.
- Pour egg mixture into another frying pan/skillet and on low heat gently scramble the eggs.
- Serve with the hot buttered toast and lemon wedges.
