2 prepared pie crusts
2 cups coarsely chopped leftover turkey
1 (16 ounce) package frozen vegetable blend, thawed
1 (10.75 ounce) can condensed cream of chicken soup
½ cup half and half, or to taste
salt and ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a pie plate with 1 prepared pie crust.
  • Stir turkey, vegetables, chicken soup, half-and-half, salt, and black pepper together in a bowl. Pour into prepared pie plate and top with remaining pie crust. Slice 4 slits in the top of the crust to vent.
  • Bake in the preheated oven until heated through and crust is golden, 40 to 45 minutes.

2 1/2 Cup All-Purpose Flour
1 Cup Unsalted Butter (very cold, cut into 1/2-inch cubes (2 sticks))
1 Teaspoon Salt
1 Teaspoon Granulated Sugar
8-12 Tablespoon Ice Water
1 Rotisserie Chicken (, meat removed and cut into cubes, see note)
1 Cup Carrots (, chopped)
1 Cup Frozen Corn
1 Cup Frozen Peas
1/3 Cup Unsalted Butter
1/2 Yellow Onion (, minced)
1 Stick Celery (, sliced)
2 Cloves Garlic (, minced)
1/3 Cup All-Purpose Flour
3/4 Teaspoon Salt
1/4 Teaspoon Pepper
1 Pinch Nutmeg
1 Teaspoon Fresh Thyme
1 3/4 Cup Chicken Broth
2/3 Cup Whole Milk ((or heavy cream for an extra creamy pot pie))
1 Egg
1 Teaspoon Water

Steps:

  • Place the flour, sugar and salt into a bowl and mix well.
  • Add the butter and using a pastry cutter or two forks, mix until the butter is pea sized.
  • Add the water, just a few tablespoons at a time, stirring gently with a fork until the dough is just coming together but is still crumbly. Test that the dough is ready by squeezing the dough in your hands until it holds.
  • Smash the dough together and separate into two balls.
  • Wrap in plastic wrap and rest in the fridge for 1 hour. Allow to sit out for a few minutes and then roll out dough.
  • Preheat the oven to 425 degrees F.
  • Roll out half of the dough into the pie plate. Set pie plate and remaining dough in plastic wrap in the fridge.
  • Place the carrots, corn and peas in a pan with just enough water to cover them. Heat over medium heat until soft, about 15 minutes. Drain.
  • Stir together the chicken and veggies in a bowl. Set aside.
  • In a large dutch oven or pot, add the butter and once melted add the onions, celery and garlic, cooking until translucent, about 3 minutes.
  • Stir in flour and seasonings, and herbs. Cook, stirring continuously for 30 seconds.
  • Slowly add the broth and milk, stirring frequently until thick. Remove from heat.
  • Stir in the chicken and veggies and pour into a pie dish.
  • Roll the remaining pie crust over the top and pinch the edges shut. Cut slits in the top of the pie.
  • Whisk together the egg and the water and brush it all over the top crust.
  • Bake for 30 minutes at 425 degrees F, or until golden brown.
  • Allow to cool slightly and serve!

2 lb chicken breasts, boneless and skinless
2 c chicken broth (enough to cover breasts)
1/2 tsp salt
1/4 tsp ground black pepper
1 1/2 c half and half
3 Tbsp butter (yes, 3 tablespoons!)
1 medium onion, chopped
1 c celery, chopped
1/3 c all-purpose flour
1 1/2 c frozen mixed vegetables, thawed (I use green beans, corn, carrots and peas)
2 medium potatoes, cooked and cubed (or 1 can small white potatoes, cubed)
1 Tbsp parsley, freshly chopped
1/2 tsp thyme, dried
2 pie pastry (for double crust pie)
1 egg, lightly beaten

Steps:

  • 1. In a large saucepan over medium-high heat, combine the chicken breasts, chicken broth, salt, and pepper. Bring to a boil and reduce heat to low. Cover and let simmer for 30 minutes, or until chicken is no longer pink in the center and the juices run clear.
  • 2. Remove the chicken and let cool. Pour the remaining chicken broth mixture into a measuring cup. Let stand; spoon off fat. Add enough canned broth to equal 1 cup if needed. Add half and half to the broth mixture to equal 2 1/2 cups. Cut chicken into 1/2 inch pieces.
  • 3. In the same pan, melt butter or margarine over medium heat. Add the onion and celery. Saute, stirring, for 3 minutes. Stir in flour until well blended. Gradually stir in broth mixture and the herbs. Simmer, stirring constantly, until the sauce thickens and boils. (you will think this is TOO MUCH liquid, but it's not). Add the chicken and vegetables to the broth and stir to combine.
  • 4. Line a deep pie dish with one of the pastries and pour the mixture in, almost to the top.
  • 5. Cover mixture with second pastry, making sure to "seal the edges" by pinching together the top and bottom then pressing against the lip of the dish. Cut a few vent holes in the pastry then brush pastry with beaten egg. Use any leftover scraps from the pastries to make a design on top.
  • 6. Bake at 400 degrees for 30 minutes or until the crust is golden brown and the filling is bubbling. Let cool for 10 minutes and serve. When done, the inside ingredients will be thick and creamy.
