Kincaid's Dungeness Crab Dip Recipe - (3.1/5) image

Number Of Ingredients 6

1/2 pound fresh Dungeness crab meat or thawed frozen or 8 oz premium whit lump crab meat.
1 1/2 cups mayonnaise
1 small onion, quartered and thinly sliced
1 (14-ounce) can artichoke hearts - drained, and cut into 1/4" pieces
1/2 cup grated Parmesan cheese
Minced fresh parsley

Steps:

  • Heat the oven to 350°F. Combine the crab meat, mayonnaise, onion, artichoke hearts and cheese, mixing well. Turn the mixture into an oven-safe shallow baking dish, such as a gratin dish. Bake until the dip is bubbly on the edges, 20 to 25 minutes. Garnish it with minced parsley. Serve with assorted breads, if desired. This recipe yields 8 to 10 servings.

This is a well loved pea salad served at Clinkerdagger's Restaurant. I got this recipe from our local newspaper.

1/2 cup mayonnaise
1/2 cup sour cream
1 teaspoon white pepper
1 teaspoon kosher salt
4 ounces snow peas, but and strings removed
3 1/2 lbs frozen baby peas, thawed but not cooked (see note)
5 ounces water chestnuts, sliced
3 ounces bacon, cooked crisp and chopped 1/4-inch pieces
2 1/2 ounces red onions, 1/4-inch dice

Steps:

  • Blend together mayonnaise, sour cream, white pepper and salt. Combine snow peas, baby peas, water chestnuts, bacon and red onions with dressing until ingredients are well coated.
  • Refrigerate at least 24 hours before serving. Stir twice each day to redistribute dressing.
  • Note: Peas must be naturally thawed. Slow thawing under refrigeration is best. Room temperature is acceptable, but do not place in water. Place the thawed peas on paper-towel lined pans and let stand at room temperature for 30 minutes to purge the remaining excess moisture from the peas. If peas are not thoroughly thawed or have been thawed in water and not properly drained, they will dilute the dressing.
  • Yield: 8 servings.
  • Approximate nutrition per serving: 367 calories, 19.7 grams fat (5.6 grams saturated, 48 percent fat calories), 14 grams protein, 34 grams carbohydrate, 29 milligrams cholesterol, 10 grams dietary fiber, 838 milligrams sodium.

4 King Salmon Fillets-skin off, pin bones removed, cut into 6-7 oz portions
4 Tbsp. olive oil-for basting salmon fillets
Salt and Pepper to taste
3 cups Seasonal Greens Mix (purchased)
4 Tbsp. Gorgonzola-crumbled
1/4 cup red onion-peeled, cored and thinly sliced
2 Tbsp. Olive Oil
1 Tbsp. Raspberry Vineagar
1 1/2 cups Artichoke Tartar(recipe follows)
4 lemon slices
Garnish:
4 half pieces fresh artichokes, small-trimmed, cooked tender, split in half, thistle area removed
ARTICHOKE TARTAR INGREDIENTS
1/2 cup mayonnaise
1/4 cup dill pickles-chopped 1/8"-1/4" pieces
1 Tbsp. green olives, pimento stuffed-chopped 1/8"-1/4" pieces
3/4 tsp. lemon juice
3/4 cup artichoke hearts, marinated-chopped 1/4"-1/2" pieces
1 Tbsp. capers-chopped
1 Tbsp. parsley-minced
Salt to taste
White pepper, ground to taste

Steps:

  • Preparation ARTICHOKE TARTAR PROCEDURES: Combine and blend all ingredients together. Store refrigerated until needed. GRILLED SALMON PREPARATION (20 minutes): Fire up the charcoal grill to the proper cooking temperature (500-600 degrees). To minimize grill sticking, brush grates completely free of any carbon buildup and "season" grates by brushing the surface with vegetable oil. NOTE: An over-fired range broiler can also be used if a charcoal grill is not available. Baste the salmon fillets with olive oil and season to taste with salt and pepper. Grill salmon until cooked through, but still moist and flaky (approximately 6-8 minutes). Turn and bast salmon with olive oil half way through the grilling process. Meanwhile, lightly baste artichokes halves with olive oil and place on grill to warm through. Remove and keep salmon fillets and artichokes warm from plating. Meanwhile, toss to dress the seasonal greens, gorgonzola crumbles and red onions, with the olive oil and raspberry vinegar. Mound the dressed greens on serving plates, lay the grilled salmon over the greens. Fill the artichoke halves with artichoke tartar and place along side of the salmon. Serve with lemon slices.

This recipe was shared with the Minneapolis/St. Paul Magazine by the head chef of the Palomino restaurant chain. It is delicious! It is very similar to the crab dip at Kincaid's as well (they are sister restaurants). You could probaby cut the breadcrumb topping in half because there is always extra; or, you could use it for another delicious recipe! The recipe gives you the option of using fresh or dried herbs, which is helpful.

2 cups mayonnaise or 2 cups salad dressing
2 (7 ounce) jars marinated artichoke hearts, drained and chopped
1 1/2 cups chopped cooked dungeness crabmeat (8 oz.)
1 cup grated parmesan cheese
1 large onion, very thinly sliced
1 cup soft french breadcrumbs
2 tablespoons butter or 2 tablespoons margarine, melted
2 tablespoons finely chopped parsley
1 teaspoon chopped fresh rosemary leaf (or 1/4 t. dried)
3/4 teaspoon finely chopped basil leaves (or 1/4 t. dried)
1/4 teaspoon chopped thyme leaves (or 1/8 t. dried)
1/4 teaspoon chopped oregano leaves (or 1/8 t. dried)
1/4 teaspoon chopped marjoram leaves (or 1/8 t. dried)
1 small garlic clove, finely chopped

Steps:

  • Preheat oven to 350. Mix all ingredients of Herb Crust; refrigerate in airtight container while preparing crabmeat mixture. Mix mayonnaise, artichokes, crabmeat, cheese, and onion in medium bowl. Spread crabmeat mixture in ungreased, shallow 1-1/2-qt. casserole or oven-proof dish. Sprinkle with 3 T. Herb Crust. Bake uncovered 15-20 minutes or until golden brown. Serve with crackers or bread. Yields about 3 Celsius.
