4 ears corn
1 red onion, cut into small dice
1 green bell pepper, cut into small dice
1 red bell pepper, cut into small dice
Handful fresh cilantro, finely chopped
2 to 3 tablespoons extra-virgin olive oil
Juice of 1 lime
Kosher salt and freshly ground black pepper

Steps:

  • Shave the corn off the cob and place in a bowl. Add the onions, bell peppers and cilantro and mix.
  • In a separate bowl, whisk together the olive oil, lime juice and a pinch of salt and pepper. Dress the corn with the mixture, adding additional salt and pepper if needed.

5 teaspoons olive oil, divided
1 tablespoon lime juice
1/4 teaspoon salt
1/4 teaspoon hot pepper sauce
1-1/2 cups fresh or frozen corn, thawed
1-1/2 cups cherry tomatoes, halved
1/2 cup finely chopped cucumber
1/4 cup finely chopped red onion
2 tablespoons minced fresh basil or 2 teaspoons dried basil
1/4 cup crumbled feta cheese

Steps:

  • In a small bowl, whisk 4 teaspoons oil, lime juice, salt and pepper sauce; set aside., In a large skillet, cook and stir corn in remaining oil over medium-high heat until tender. Transfer to a salad bowl; cool slightly. Add the tomatoes, cucumber, onion and basil. Drizzle with dressing and toss to coat., Let stand for 10 minutes before serving or refrigerate until chilled. Sprinkle with cheese just before serving.

This Summer Corn Salad definitely can enjoyed all year round! It's a fresh corn salad made with onion, bell pepper, avocado, and corn! Fresh or frozen corn will work!

6-8 ears corn
2 Tablespoon olive oil
1/2 red onion (, diced)
1/2 red bell pepper (, diced)
1 avocado (, seeded, peeled and chopped)
4 Tablespoon olive oil
6 Tablespoon apple cider vinegar
1 teaspoon sugar
1 teaspoon dijon mustard
juice from 1 lime
salt and pepper

Steps:

  • Whisk dressing ingredients together and set aside.
  • Add 1-2 inches of water to a large skillet. Bring to a boil. Add shucked corn ears and cook for 3-4 minutes, rotating to cook on all sides. Drain water.
  • Heat grill on medium-high heat. Brush corn lightly with olive oil and grill for a few minutes, rotating it as it cooks, until golden on all sides.
  • Allow the corn to cool and then cut corn off of the cob and add to a bowl. Add remaining salad ingredients and drizzle with desired amount of dressing (you may not use it all). Toss to combine. Refrigerate until ready to serve.

1 (15.25 ounce) can whole kernel corn, drained
1 (15.25 ounce) can white corn, drained
2 tomatoes, chopped
½ (15 ounce) can sweet peas, drained
1 cucumber, diced
1 purple onion, diced
3 tablespoons pimentos
1 cup mayonnaise
salt and pepper to taste

Steps:

  • In a large bowl, mix the corn, white corn, tomatoes, sweet peas, cucumber, onion, and pimentos. Fold in the mayonnaise. Season with salt and pepper. Cover, and chill at least 1 hour in the refrigerator.

This Corn Salad recipe embraces the summer season with fresh corn, bell pepper, basil, and a homemade creamy dressing. It's so easy to make and great for a light lunch, side dish, or potluck!

5 ears fresh corn (, shucked and silks removed)
2 tablespoons extra-virgin olive oil
salt and pepper (, to taste)
1 medium red bell pepper (, ribs removed, diced)
5 large fresh basil leaves (, julienned)
1/4 teaspoon pepper
1/4 teaspoon Kosher salt
1/4 teaspoon dried Italian seasoning
1/2 teaspoon granulated sugar
pinch of cayenne (, or more to taste)
1 cloves garlic (, finely mined)
1/4 cup mayonnaise
2 tablespoons red wine vinegar
2 tablespoons extra virgin olive oil
1 teaspoon water

Steps:

  • Preheat a gas grill to high. Generously oil the grates.
  • Drizzle the corn with the olive oil and sprinkle with some salt and pepper. Place on the grill and cook, turning occasionally, until charred on all sides and fully tender, about 10 minutes total. Transfer to a cutting board and allow to cool.
  • Once cool enough to handle, remove the kernels off the cob and place in a large bowl. Add in the bell pepper and basil.
  • In a medium bowl, whisk together all the ingredients for the dressing. Taste and adjust, if necessary. Drizzle the dressing over the corn mixture and gently combine.
  • Serve and enjoy!
  • Possible Additions: Crumbled feta cheese, diced red onion, and creamy diced avocado are all good in this salad, as well.
  • NOTE: When corn isn't in season, you can use 5 cups frozen (defrosted) corn or canned corn (drained thoroughly.) They both should be patted dry, so there's no excess moisture. Then char the kernels in a skillet. You can also use this method with fresh corn if you don't own a grill.

  • To grill corn, place unhusked corn cobs directly on the hot grill for about 7-8 minutes and close the lid. Rotate/flip at the halfway point to ensure even cooking. Then carefully remove husk and place back on grill until golden brown on all sides - about 5-8 minutes more. Once cooked, all sides of the corn should be a deep golden brown color.
  • When the corn is almost ready, add zucchini to the grill and grill on each side for about 2-4 minutes, depending on how hot the grill is. You want grill marks, but you don't want the zucchini to get too soft. Set aside.
