This pasta recipe is so easy to make and so flavorful, you will want to make it part of your regular dinner routine. It is a great option for bacon lovers, and those who want something other than red sauce on their pasta.

1 pound bacon, coarsely chopped
1 onion, chopped
1 pound dry penne pasta
¼ cup olive oil
½ cup grated Parmesan cheese

Steps:

  • Place the chopped bacon and onion in a skillet over medium heat, and cook and stir until the bacon is crisp and the onion is beginning to brown, about 10 minutes.
  • While the bacon and onion are cooking, fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the penne, and return to a boil. Cook the pasta uncovered, stirring occasionally, until cooked through, but is still firm to the bite, about 11 minutes. Drain pasta, transfer to a large serving bowl, and stir in the olive oil to coat the pasta.
  • Drain the bacon grease from the skillet, leaving a couple of tablespoons or to taste. Stir the cooked bacon mixture into the pasta, and sprinkle the Parmesan cheese over the pasta. Stir to mix in the cheese, and serve.

1 (12 ounce) package penne pasta
2 tablespoons olive oil, divided
6 slices bacon, chopped
2 tablespoons minced garlic
1 (14.5 ounce) can diced tomatoes
1 bunch fresh spinach, rinsed and torn into bite-size pieces

Steps:

  • Bring a large pot of lightly salted water to a boil. Add the penne pasta, and cook until tender, 8 to 10 minutes.
  • Meanwhile, heat 1 tablespoon of olive oil in a skillet over medium heat. Place bacon in the skillet, and cook until browned and crisp. Add garlic, and cook for about 1 minute. Stir in the tomatoes, and cook until heated through.
  • Place the spinach into a colander, and drain the hot pasta over it so it is wilted. Transfer to a large serving bowl, and toss with the remaining olive oil, and the bacon and tomato mixture.

1 medium onion, chopped
1 (35 ounce) can crushed tomatoes
4 slices bacon, diced
1/2 teaspoon black pepper
1 lb penne (or rigatoni)

Steps:

  • Saute onion and bacon in large non-stick skillet over medium-high heat for about 5 minutes, or until onion is translucent (do not brown onions).
  • Pour off excess fat.
  • Add tomatoes to skillet and cook, uncovered, over medium-high heat for 8-10 minutes or until sauce is lightly thickened.
  • Add black pepper.
  • Meanwhile, cook penne or rigatoni according to package directions.
  • Drain well.
  • Toss penne and sauce in large serving bowl and serve immediately.

This was a huge success. Peas with pasta does sound strange, and my DH wasnt keen at first, but he loved it, the peas really compliment the bacon. This is a recipe from Ainsley Harriott.

8 slices bacon, cut into small slices
1 red onion, finely chopped
1 lb penne pasta (quills)
120 ml dry white wine
300 ml passata
1 teaspoon oregano
150 ml creme fraiche
4 ounces tinned sweet peas, drained
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Add a splash of water to the skillet and fry bacon for 2-3 minutes until lightly browned (no oil is needed as bacon provides plenty of fat). Add the onion and stir for another minute or two until softened.
  • Meanwhile, cook the penne according to package instructions, in a pot of salted water.
  • Pour the wine into the bacon mixture and allow to bubble down, then stir in the passata and oregano. Bring to a simmer, then stir in creme fraiche. Season to taste. Cover and simmer for 5 minutes until slightly reduced and thickened. Stir in the peas and cook for another 3-4 minutes.
  • When the pasta is cooked, drain and rinse in hot water, shaking the pasta to get water out of the tubes. Fold in the bacon and pea mixture, and season to taste.

6 bacon slices, chopped
6 large garlic cloves, finely chopped
1/2 cup dry red wine
1 28-ounce can diced tomatoes in juice
1 tablespoon tomato paste
1 1/2 teaspoons dried oregano
1/4 teaspoon dried crushed red pepper
4 tablespoons chopped fresh Italian parsley
1 pound penne
1/2 to 3/4 cup crumbled blue cheese, feta cheese or coarsely grated Parmesan cheese

Steps:

  • Sauté bacon in heavy large saucepan over medium heat until crisp. Spoon off all but 4 tablespoons drippings from pan. Add garlic to pan and stir 30 seconds. Add wine and scrape up any browned bits. Add tomatoes with juices, tomato paste, oregano and crushed red pepper. Simmer until sauce thickens slightly, stirring occasionally, about 10 minutes. Mix in 2 tablespoons parsley.
  • Meanwhile, cook pasta in large pot of boiling salted water until just tender but still firm to bite. Drain, reserving 1/2 cup cooking water.
  • Return pasta to pot. Add sauce. Toss over medium heat until sauce coats pasta, adding reserved cooking water by tablespoonfuls if mixture is dry. Mix in cheese. Season with salt and pepper. Transfer to bowl. Sprinkle with remaining 2 tablespoons parsley.
