BEST DAMN ROASTED SALSA

Best Damn Roasted Salsa image

The Best Damn Roasted Salsa is SUPER easy, quick, fresh and delicious with a lovely complex smoky flavor that can't be beat!

Provided by Kim Lee

Categories     Appetizer

Time 15m

Number Of Ingredients 8

2 1/2 pounds tomatoes, chopped (I used about 6 of varying sizes)
2 medium jalapeno peppers (leave the seeds in for an extra kick of spice)
1 small white onion
3 garlic cloves
1/2 cup fresh cilantro
2 teaspoons ground cumin
1 teaspoon sea salt + more to taste as needed
2 tablespoons lime juice, about 1 lime, juiced

Steps:

  • Clean veggies and remove stems. Slice onion in half. Keep skin on garlic. Heat broiler on high, with rack in top position. Place tomatoes, jalapenos, onion and garlic in a single layer on a rimmed baking sheet that is covered with foil.
  • Broil until vegetables are blistered and slightly softened, rotating sheet and flipping vegetables frequently, 6 to 8 minutes (garlic may need to be removed earlier, if it is browning too quickly).
  • Discard garlic skins and add all ingredients to the bowl of a food processor. Pulse about 3-4 times and until all ingredients are combined and chopped. Roasted salsa is more liquidy than regular salsa.
  • Taste the salsa and add more cumin and/or salt as desired.
  • Transfer to a bowl and enjoy with tortilla chips! Also, great served over eggs, tacos and more.
  • I prefer to refrigerate salsa for 1 day prior to serving to allow the flavors to marry and meld. Salsa will keep for about 1 week in an airtight container or jar in the fridge.

BEST DAMN SALSA EVER!

Best Damn Salsa Ever! image

This homemade salsa recipe is absolutely irresistible! It's loaded with delicious, vibrant flavor and it comes together in less than 5 minutes.

Provided by Kim Lee

Categories     Appetizer     Dip

Time 5m

Number Of Ingredients 8

4 small jalapeño peppers* ((leave the seeds in for an extra kick))
1/2 onion, chopped
3 garlic cloves
1/4-1/2 cup fresh cilantro
6 tomatoes of varying sizes, chopped
1 1/2 to 2 teaspoons ground cumin
1 teaspoon sea salt + more to taste
2 tablespoons lemon or lime juice ((about 1/2 lemon, juiced))

Steps:

  • Add all ingredients to the bowl of a food processor. I like to add in the jalapeños, onion and garlic first and then the cilantro and tomatoes, so the tomatoes do not get too liquid-y. Pulse about 10 or so times and until all ingredients are combined and diced, but be sure to stop before the salsa becomes too watery. However, you can pulse longer if you do like your salsa with more liquid.
  • Taste the salsa and add more ingredients as desired. I would advise stirring in the extra ingredients, not pulsing in the food processor. The salsa will become too watery, quickly.
  • Transfer to a bowl and enjoy!
  • I prefer to refrigerate salsa for 1 day prior to serving to allow the flavors to intensify. Salsa will keep for about 1 week in an airtight container or jar in the fridge; however, it's never lasted that long in this household.

KIM'S SALSA

This recipe is a favorite of all my friends. Whenever they come over, they want to leave with a jar. Therefore, when I make it I can 14 GALLONS each time. I figure, if I'm gonna spend all day making it, I might as well only do it once a year! I like to serve this salsa with tortillas or use it in cooking. It's great in scrambled eggs and chili.

HOMEMADE SALSA

Homemade Salsa image

Making Homemade Salsa is quite easy to do. With just a few basic ingredients and a food processor or blender you can make fresh salsa in your own kitchen!

Provided by oldworldgardenfarms

Categories     Appetizers

Time 10m

Number Of Ingredients 10

10 Roma / Paste Tomatoes / Diced
2/3 cup onion, diced
2 garlic cloves, minced
1 tsp cumin
1/2 cup cilantro
the juice of 1 lime
1/2 tsp salt
1 jalapeno pepper, diced
1 poblano pepper, diced
optional 1/2 tsp sugar

Steps:

  • Wash and dry the tomatoes. Cut them in half and squeeze out the juice and seeds. They don't have to come completely out, as long as you get the majority your salsa won't be too runny.
  • Place the tomatoes in a food processor. Pulse 4-6 times until the tomatoes reach a thick and chunky consistency.
  • Place all remaining ingredients into the food processor with the tomatoes.
  • Pulse 3-5 times until well combined, but still chunky.
  • Eat it right away or place in the fridge for an hour to allow the flavors to meld even more.

  • Garden Tomato Salsa. All you need for this garden fresh salsa is an abundance of tomatoes from the garden. Blend them together with fresh jalapeño peppers, red onions, and cilantro in the food processor.
  • Restaurant Style Salsa. This restaurant-style salsa is made with canned diced tomatoes with green chiles, so you can enjoy it all year-round. Keep it chunky and serve it up on nachos, or purée it a little further to make a smooth salsa that's easy to scoop with a chip.
  • Roasted Tomato Salsa. This salsa uses roasted tomatoes and onions to add a deeply sweet flavor to traditional salsa. Add in some fresh cilantro and lime juice and you won't be able to stop yourself from double-dipping!
  • Slow Cooker Salsa. Want the taste of fresh homemade salsa but don't have the time to put it together? Enter the slow cooker! All you need is a few hours on the high setting and your salsa is ready to blend.
  • Roasted Tomatillo Salsa. Salsa doesn't have to be all about tomatoes. Roasting the tomatillos gives this salsa a deeply robust flavor with a light, acidic edge.
  • Apple Salsa. Apples in salsa? You bet! This great recipe combines the tart flavors of green apples with spicy poblano chile peppers and chopped walnuts.
  • Black Bean and Corn Salsa. My favorite thing about this recipe? It can be made with fresh ingredients in the middle of the summer, and canned ingredients in the winter.
  • Watermelon-Peach Salsa. This salsa is almost too pretty to eat (but it's so tasty, I always gobble it down in no time at all). This is the salsa to gift when you want some seriously Pinterest-worthy attention.
  • Mango Salsa. This sweet salsa is perfect as an appetizer dish, but it also makes a great garnish for fish dishes. If you like the sweet and spicy combination, leave the seeds in the jalapeño before popping them in the blender.
  • Strawberry Salsa. This fruity salsa combines everything you love about strawberries with black pepper, red onions, and lime juice. The next time I throw a dinner party, I'm putting this salsa on my bruschetta toasts!
