KOREAN KIMCHI DEVILED EGGS

Yield 2 dozen deviled eggs

Number Of Ingredients 7

12 large hard cooked eggs
6 Tbsp. light sour cream
2 Tbsp. French's® Dijon Mustard
1.5 Tbsp. soy sauce
24 sautéed mushrooms, shitake or similar
Kimchi
48 matchstick carrots

Steps:

  • Remove yolks from whites and place in bowl.
  • Mash yolks and blend in sour cream, mustard, and soy sauce.
  • Spoon/pipe yolk mixture into egg white halves.
  • Top each egg half with a sautéed mushroom, kimchi, and two matchstick carrots.
  • Arrange on platter.
  • Chill, covered.

Possibly my favorite appetizer that I've posted on Food.com! You can substitute quail eggs to create elegant and impressive cocktail party bites. Adapted from a recipe by Joe Yonan. Cook time is chill time.

Yield 1 dozen deviled eggs, 6 serving(s)

Number Of Ingredients 6

6 hardboiled egg
3/4 cup sour kimchee
1/4 cup cream cheese
sea salt
sriracha sauce
caviar (optional, for garnish)

Steps:

  • Drain and gently squeeze the kimchi of its liquid and process in food processor or blender until very finely chopped. Take out 1/4 cup and set aside for garnish.
  • Slice each egg lengthwise in half. Pop out each yolk half and add to the food processor. Set each white on a serving platter.
  • Add cream cheese to the food processor or blender and puree until smooth. Taste, add salt as needed, and add Sriracha a little at a time if you want it to be spicier.
  • Use a teaspoon to carefully fill each egg white half with the kimchi mixture.If you want to be fancy, spoon the filling into a pastry bag fitted with a decorative tip, or a ziploc bag with one corner cut off, and pipe it onto each egg white half.
  • Sprinkle the remaining kimchee on top of the eggs. If desired, squirt a drop of two of Sriracha on each egg, and/or garnish with caviar for a little extra color and salty flavor.
  • Refrigerate the stuffed eggs for at least 1 hour, then serve.

  • Peel the eggs and halve lengthwise with a sharp knife. Gently remove the yolks and place in a food processor. Add yogurt, mayonnaise, kimchi, shallot, mustard, chile paste, vinegar, salt and pepper and process until smooth.

  • You want to first turn your raw eggs into hard boiled eggs. So put the eggs into a small pot and fill it with some cold water. Bring the water to a boil over high heat. Once the water starts to boil, turn the heat to low and let the eggs cook for about 6 to 7 minutes.
  • After they are done cooking, remove the pot from the heat. Slowly pour out the hot water and start filling the pot again with some cold water. This will cool down the eggs. Let it rest for a few minutes.
  • Peel the eggs and slice them lengthwise. Use a spoon or a fork and gently remove the yolks and transfer the yolks to a mixing bowl. Put the egg whites on a platter to be used later.
  • With a fork or a masher, you want to mash the yolks until they are completely mashed together. Then add in the mayonnaise, kimchi, yellow mustard and vinegar and start mixing them together until you have formed a smooth paste like substance.

  • Boil water in a large deep pot. Reduce the heat to a simmer. Add eggs and cook them for about 12 to 15 minutes. As soon as they are cooked, transfer eggs to a large bowl filled with cold water and ice. The transfer of the newly cooked hard boiled eggs to cold water will help make peeling easier. You can start cracking the egg shells while under water, and continue when you take them out.
  • Place the peeled eggs on the counter. Slice each egg lengthwise, in half. Carefully remove each egg yolk from the center and place in the food processor or blender. Set aside the egg whites on a platter. Keep them chilled in the refrigerator while working on the yolks.
  • Drain the kimchi and try to remove the liquid by gently squeezing the leaves. Chop the kimchi into pieces.
  • In the food processor or blender, process together the egg yolks, chopped kimchi, cream cheese, mayonnaise. Puree until smooth for about 2 minutes. Season with salt if desired. Add sriracha a little at a time, depending on the level of spiciness desired. (Note: the kimchi is already spicy, so taste the pureed mixture first).
