HOKKIEN NOODLES WITH FIVE-SPICE CHICKEN
This recipe has had RAVE reviews every time I have made it. If ever I need a simple quick dish to impress with .. this is it. From the Marie Claire Noodles recipe book. Thought I'd share it.

Steps:
- In a wok (if you don't have a wok, a large frying pan is ok) stirfry chicken until golden and tender. Make sure to get rid of the excess liquid that comes from the chicken while cooking.
- Add the garlic, onion, five spice, and black pepper and stirfry for a further 3 minutes until onion goes transparent.
- Add the asparagus and noodles. Separate the noodles as you throw them in the wok. Stir fry for another 3 minutes.
- Add the soy, oyster sauce and honey and stirfry for 5 minutes.
- Serve hot straight out of the wok.

GOLDEN FIVE SPICE CHICKEN
Five spice gives this chicken a wonderfully warm aromatic flavor that adults and children will love. Time does not include marinating.

Steps:
- Whisk together the marinade ingredients, put the chicken into a dish then pour over the marinade and mix to coat. Cover then chill for at least 20 minutes or up to a day if you have time.
- Heat the oven to 350F and lift the chicken out of the marinade into a roasting tin. Roast for 40 minutes, pour over the remaining marinade then cook for a further 30 minutes until golden and sticky.
- Sprinkle with the scallion and serve.

KIKI'S CHICKEN AND BEAN ENCHILADAS
This recipe appeared in our local newspaper, from the Supper Swap girls at GreenvilleOnlin.com. It's very important to first dip the tortillas in the sauce BEFORE assembling them.

- Pour 1/4 of the enchilada sauce into a shallow bowl. One at a time, dip a tortilla in the sauce, making sure each side is wet. Transfer to a plate and fill the center of each tortilla with a handful of chicken and then 3 tablespoons of beans. Sprinkle with some cheese and roll up. Lay the tortilla seam side down in a shallow baking pan. Repeat the process until all eight are in the pan. Pour the remaining enchilada sauce over the rolled tortillas and then sprinkle with the remaining cheese. Bake at 350 for 20 minutes or until the cheese melts.
- Garnish with lettuce, tomatoes, olives and sour cream and serve.

I have many favorite chicken salad recipes, but my family and friends love spicy food. That's when this salad fits the bill. Serve it as a side dish at BBQs or as an entree on a busy night after work.

- In a large bowl, gently mix the chicken, carrots, red bell pepper, jicama, red onion, corn, cherry tomatoes, avocados, and cilantro.
- In a separate bowl, mix the sour cream, mayonnaise, lemon juice, cumin, salt, pepper, taco seasoning, and hot pepper sauce. Pour over the salad, and toss to coat. Cover and refrigerate at least 1 hour before serving.

From 500 Low Sodium Recipes by Dick Logue. I haven't tried this one yet, but Dick Logue has some other really good salt-free seasoning recipes, so I'm posting this for future use. (The book says it makes 6 servings of 1/2 tsp. each. In practical terms, that works out to about 3 tbsp. per pound of ground beef.)

- Combine all ingredients in a resealable plastic bag and shake until completely mixed. Add to browned ground beef along with 1/2 to 1/3 cup water and cook until reduced to desired consistency.

- Preheat oven to 375. Rinse and pat dry the chicken thighs. Sprinkle chicken with the Trader Joe's 21 Salute Seasoning. Place on greased baking sheet. Roast for 20 minutes. Remove pan from the oven and place aspapagus on pan. Drizzle asparagus with olive oil and sprinkle with salt and pepper. Roast chicken and asparagus 10 minutes more or until done.
