A quick recipe for Shrimp and Sausage Pasta means that an easy dinner is on the table in about 30 minutes!

2 tablespoons olive oil
1 (16-20 ounce) package uncooked sweet Italian sausage
2 cloves garlic, minced
1 small onion, chopped
2 (14.5 ounce) cans diced tomatoes with basil, garlic and oregano, NOT drained
1 (8 ounce) can tomato sauce
2 teaspoons fresh minced basil ((or ½ teaspoon dried basil))
1 lb. peeled and deveined shrimp ((I used "Extra Large" shrimp 26-30 count per pound))
1 cup half-and-half or heavy cream, at room temperature
Kosher salt and ground black pepper, to taste
Cooked pasta, for serving

Steps:

  • Heat olive oil in a large skillet over medium-high heat. Brown the sausage in the skillet until no longer pink (about 6-8 minutes per side). Remove to a cutting board and slice into rounds.
  • In the same skillet, sauté the garlic and onion over medium-high heat until onion is transparent (about 5-7 minutes). Add the tomatoes, tomato sauce and basil. Bring to a boil, reduce heat to low. Stir in the sausage and shrimp. Simmer just until the shrimp turn pink (about 3 minutes).
  • Stir in the cream and simmer for about 1 more minute, or just until heated through. Season with salt and pepper. Serve sauce over cooked pasta.

13 1/2 ounces kielbasa
3 tablespoons olive oil
5 tablespoons butter
4 -5 teaspoons minced garlic
1/2 medium onion
2 cups pasta (any kind)
1 cup broccoli floret
salt and pepper
1/4-1/2 cup white wine
cayenne pepper or red pepper flakes
1/2 cup mozzarella cheese

Steps:

  • Start cooking noodles as directed.
  • Add olive oil to the pan and heat on medium heat. Slice Kielbasa to desired thickness and add to pan (make sure the package says fully cooked). Add onions to pan, saute onions and brown edges of Kielbasa.
  • Meanwhile, cook broccoli until soft.
  • Add butter, garlic, and wine to the pan with Kielbasa. Turn down heat and allow flavors to mix.
  • Once pasta and broccoli are done, add to the pan of Kielbasa and mix well.
  • Add salt/pepper and cheese to taste. May also add cayenne pepper or red pepper flakes (I use creole seasoning).

One Pot Sausage, Shrimp and Rice image

One pot sausage, shrimp and rice is a dish reminiscent of Jambalaya. Everything cooks in one pot and comes together so easily; the flavors build on each other as each component cooks. Smoky turkey kielbasa, peppers, onion, fluffy white rice, and fresh shrimp are the main stars of this show. With a good amount of seasoning and some fresh scallions, this dish is flavorful and a nice change up from your usual dinner routine, but you won't be stuck in the kitchen for hours. One pot sausage, shrimp and rice is sure to please!

13 oz turkey kielbasa
olive oil spray
2 bell peppers
1 onion
1 pint cherry tomatoes (halved)
1 tsp paprika
1 tsp oregano (dried)
1/2 tsp onion powder
1/2 tsp kosher salt
1/4 tsp cayenne pepper
1.5 cups white rice (raw, uncooked)
3 cups reduced sodium chicken broth
1 lb shrimp (raw, deveined)
3 scallions (chopped)

Steps:

  • Slice the kielbasa into 1/4" rounds.
  • Spray the bottom of a Dutch oven (or large pot) with olive oil spray and turn the heat onto medium high.
  • Add the kielbasa slices and cook them for about 10 minutes. They are fully cooked, but we are looking for the outsides to get brown and the flavor to render.
  • Dice the peppers and onion and add them to the pot with the kielbasa after the 10 minute cooking time.
  • Cook the peppers and onion for 10 minutes or until tender.
  • Use the moisture from the peppers and onions to pick up the burnt bits from the bottom of the pot, and use your wooden spoon to scrape them up.
  • Add the paprika, onion powder, oregano, cayenne and salt.
  • Half the cherry tomatoes and add them to the pot. Stir to combine.
  • Add the dry, uncooked rice and stir to combine. Add the broth and stir again.
  • Bring this mixture to a boil and then cover the pot, and reduce to simmer.
  • Cook for 15-20 minutes or until the rice is cooked and tender (taste to be sure).
  • Add the shrimp to the pot, stir to combine, and cover again. Cook for another 5 minutes or until the shrimp is opaque and firm.
  • Chop the scallions and toss to combine.
  • Taste for seasoning: add more salt if desired, or more cayenne for heat.

1 pound angel hair pasta
2 tablespoons olive oil
1 pound large shrimp, peeled and deveined
4 cloves garlic, minced
1/2 teaspoon red pepper flakes
1 lemon, juiced, plus 1/2 lemon, zested
1/2 cup dry white wine
5 tablespoons butter
1/4 cup chopped parsley leaves

Steps:

  • Add the pasta to a large pot of boiling salted water, over medium heat, and cook until al dente.
  • Meanwhile, heat a large 12-inch skillet over medium-high heat. Add the olive oil. Once shimmering and hot, add the shrimp and saute until just cooked through, about 2 to 3 minutes. Remove to a plate and reserve. Add the garlic and red pepper flakes to the skillet, then saute for until the garlic is fragrant, about 1 minute. Add the lemon juice and white wine and raise the heat to high. Let the liquid reduce for 2 to 3 minutes. Whisk in the butter, add a ladleful of the pasta cooking water and return the shrimp. Remove from the heat.
  • Drain the pasta in a colander, and add it to the skillet along with the chopped parsley and toss. Add the lemon zest and adjust the seasonings with salt and pepper, to taste. Transfer to a serving platter and serve immediately.

Scampi are tiny, lobster-like crustaceans with pale pink shells (also called langoustines). Italian cooks in the United States swapped shrimp for scampi, but kept both names. Thus the dish was born, along with inevitable variations. This classic recipe makes a simple garlic, white wine and butter sauce that goes well with a pile of pasta or with a hunk of crusty bread. However you make the dish, once the shrimp are added to the pan, the trick is to cook them just long enough that they turn pink all over, but not until their bodies curl into rounds with the texture of tires.

2 tablespoons butter
2 tablespoons extra-virgin olive oil
4 garlic cloves, minced
1/2 cup dry white wine or broth
3/4 teaspoon kosher salt, or to taste
1/8 teaspoon crushed red pepper flakes, or to taste
Freshly ground black pepper
1 3/4 pounds large or extra-large shrimp, shelled
1/3 cup chopped parsley
Freshly squeezed juice of half a lemon
Cooked pasta or crusty bread

Steps:

  • In a large skillet, melt butter with olive oil. Add garlic and sauté until fragrant, about 1 minute. Add wine or broth, salt, red pepper flakes and plenty of black pepper and bring to a simmer. Let wine reduce by half, about 2 minutes.
  • Add shrimp and sauté until they just turn pink, 2 to 4 minutes depending upon their size. Stir in the parsley and lemon juice and serve over pasta or accompanied by crusty bread.
