- Spray 12-inch skillet with cooking spray; heat over medium-high heat. Add onion, garlic and bell pepper to skillet. Cover; cook 3 to 5 minutes, stirring once, until vegetables are crisp-tender.

- In a large skillet heat Sesame oil, add garlic, sliced sausage, onion and carrots. Sauté for about 5 minutes.
- Add in peas. Stir, continue to cook until sausage is browned and the veggies are the desired tenderness. About 5 minutes.
- Push the mixture to one side of your skillet and in the other, add a little sesame oil, scramble your eggs. Mix it all together.
- Add rice and soy sauce and continue cooking for another 5 minutes.
- Top with green onions and serve hot from the skillet.

- Make the rice, in a medium saucepan combine the rice and chicken stock. Bring to a boil, reduce the heat and simmer until all the stock is absorbed into the rice, about 20 minutes.
- Meanwhile heat oil in a heavy-bottomed saute pan over medium-high heat. Brown the sausage. Once browned, add the garlic, onion, celery, and green bell pepper. Cook until softened, about 5 minutes. Season with salt and pepper. Add 1 cup chicken stock and cayenne. Cook until the stock has reduced a little. Add the cooked rice and parsley and stir thoroughly. Taste and season with salt and pepper, if necessary.

- 1. Cut sausage into slices, then I found cutting them into 4 quarters gives more sausage per bite, little triangle pieces. Chop onion finely. In a dutch oven or deep pot, first brown the onions with a little bit of olive oil, I like to get mine carmalized, and really brown. Add sausage and brown it some. Add in seasonal salt (add a little and taste, then add more as you think is needed), also add in beef bouillon powder.
- 2. Once sausage is browned, add in 2 cups of parboiled rice and add 2 cups of beef broth and 2 cups of water.
- 3. Stir everything together, let it come to a boil, then cover, turn heat down to simmer. Let simmer until rice is done. Fluff with a fork add some butter (if desired), and serve.

- Cook sausage: Heat 2 tbsp oil in a large heavy based pot over medium high heat. Add sausages and cook until golden. Remove with a slotted spoon.
- Cook onion and garlic: Add remaining 1 tbsp oil. Add garlic and onion, cook for 2 minutes. Add capsicum and cook for 2 minutes until onion is translucent.
- Add rice and liquid: Add rice, chicken stock, paprika, salt, pepper and the sausage. Stir, bring to boil, then reduce heat to low so it's simmering very gently.
- Cover and cook: Cover with lid, cook 20 minutes.
- Add peas and rest: Remove pot from stove. Working quickly, remove lid, add peas, then quickly put the lid back on. Rest 10 minutes - the residual heat with cook the peas.
- Fluff and serve: Add parsley. Use a fork to fluff the rice. Serve immediately!
