Enjoy this hearty kielbasa sausage, rice and vegetable skillet recipe made using Progresso® chicken broth - perfect for a 30-minute Creole-style dinner!

1 medium onion, chopped (3/4 cup)
1 clove garlic, finely chopped
1/2 cup chopped green bell pepper
1/2 lb fully cooked kielbasa sausage, cut lengthwise into fourths, sliced
3 large tomatoes, chopped (2 1/2 cups)
1 cup Progresso™ chicken broth (from 32-oz carton)
1/2 teaspoon salt
1/2 teaspoon Cajun seasoning
1 1/2 cups uncooked instant rice
Red pepper sauce, if desired

Steps:

  • Spray 12-inch skillet with cooking spray; heat over medium-high heat. Add onion, garlic and bell pepper to skillet. Cover; cook 3 to 5 minutes, stirring once, until vegetables are crisp-tender.
  • Stir in kielbasa, tomatoes, broth, salt and Cajun seasoning. Heat to boiling; stir in rice. Heat to boiling; reduce heat to low. Cook 8 to 10 minutes or until rice is tender. Fluff with fork before serving. Serve with pepper sauce.

4 cups cooked rice (this recipe works best with day old sticky rice)
12 ounce package Hillshire Farms Polska Kielbasa, sliced
4 Tablespoons Sesame Oil
1 small onion, diced
1 clove garlic, minced
1 cup carrots, diced
1 cup frozen peas
2 eggs
1/4 cup Reduced Sodium Soy Sauce
Tops of 3 green onions, sliced

Steps:

  • In a large skillet heat Sesame oil, add garlic, sliced sausage, onion and carrots. Sauté for about 5 minutes.
  • Add in peas. Stir, continue to cook until sausage is browned and the veggies are the desired tenderness. About 5 minutes.
  • Push the mixture to one side of your skillet and in the other, add a little sesame oil, scramble your eggs. Mix it all together.
  • Add rice and soy sauce and continue cooking for another 5 minutes.
  • Top with green onions and serve hot from the skillet.

Versatile and delicious. You can also add frozen/fresh vegetables, different hams or sausages or herbs to change to flavours.

Yield 2 cups of rice

Number Of Ingredients 8

4 inches hot kielbasa (or mild, if you prefer)
1/2 package liptons chicken noodle soup
5 cups water
2 cups rice
2 tablespoons butter
1 onion
1 dash dried parsley flakes
1 dash oil (for frying)

Steps:

  • heat oil in pan.
  • Add chopped onion.
  • Fry till transparent.
  • Add kielbasa (chopped in small cubes) and fry till heated through.
  • Add 1/2 pkg of noodle in soup mix (and half of seasoning found in pkg).
  • Fry till it starts to brown.
  • Add 5 cups water and bring to a boil.
  • Add 2 cups rice and butter.
  • Turn down the heat to simmer.
  • Cover and cook till all liquid is absorbed.
  • Take off the heat and let sit for 15 minutes or so.

This is my own recipe. Probably not very authentic, but it's tasty, my family loves it and there's never any left! Also great for potlucks, it can be prepared in a crockpot. Feel free to make your own additions. Enjoy!

2 (6 1/2 ounce) boxes red beans and rice mix, prepared per package directions (Rice-A-Roni)
1 onion, chopped
2 -3 celery ribs, chopped
3 garlic cloves, chopped
1 (15 ounce) can diced tomatoes
1 (14 ounce) bag frozen mixed peppers, thawed (red, green and yellow pepper strips)
1 lb smoked sausage or 1 lb kielbasa, thinly sliced
1 lb cooked chicken, cut into bite-sized pieces (you can use leftover chicken, or cook 2-3 breasts)
8 ounces frozen shrimp, thawed (optional, amount is an estimate, use as much as you like)
hot sauce (optional)

Steps:

  • Prepare Rice-A-Roni Red Beans and Rice according to package directions. While it is cooking, prepare the onions, celery and garlic and saute in a skillet in a small amount of oil until soft.
  • Open the can of tomatoes and dump into a large stockpot or crockpot. Add the sauteed veggies, cooked chicken and pepper strips to the pot as well. Heat the contents to simmering (or set the crockpot to low if you will be gone all day or high for a few hours).
  • Using the same skillet from before, saute the thinly sliced sausage and add that to the pot also.
  • When the Rice-A-Roni is done, remove the lid from the pot and continue to cook and stir until most of the liquid is evaporated, then add to the pot as well. Mix everything up well.
  • Add hot sauce to taste. If using shrimp, add them close to serving time, so they will heat through but not be overcooked. Heat through and serve.

1 pkg spanish-flavored rice-a-roni mix
1-1/2 c water
1 14.5 oz can diced tomatoes
1/2 c spicy salsa
1 15.25 oz can corn, drained
12 oz pg turkey kielbasa, sliced
1/2 lb cooked, peeled, deveined medium shrimp

Steps:

  • 1. In lg skillet, melt butter over medium heat. Add rice, reserving flavor packet. Brown as directed on pkg.
  • 2. Increase heat to high and stir in water, tomatoes, salsa, and flavoring packet from rice. Bring to boil. Reduce heat to med-low. Cover, simmer 15 mins.
  • 3. Stir in the corn, kielbasa and layer shrimp on top. Cook 5 min, or until shrimp are pink and liquid is absorbed.
