PASTA SKILLET WITH KIELBASA
Inspired by several recipes here, I created this pasta skillet with what I had on hand, and everyone loved it! Nice change from regular pasta and meat, have to try it with fresh tomatoes when they are ready from the garden!

Steps:
- Bring a large pot of lightly salted water to a boil for pasta.
- Meanwhile, heat olive oil over medium-high heat in a deep skillet. Add onion and garlic to the hot oil and saute just until tender, about 5 minutes. Add kielbasa to the skillet and cook and stir until browned, 3 to 4 minutes. Stir in tomatoes, mushrooms, sugar, balsamic, salt, black pepper, and red pepper. Reduce heat and let sauce simmer while you cook pasta.
- Add penne to the pot of boiling water and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes, stirring peas into pasta during last 2 minutes of cooking time.
- Drain pasta and transfer to sauce. Stir to combine and add basil. Heat over medium-low heat so pasta can absorb liquid from sauce, about 5 minutes. Stir in Cheddar-Monterey Jack cheese and serve.

CHEESY KIELBASA PASTA
Comfort dinner x 2! This Cheesy Kielbasa Pasta makes 2 full casseroles - eat one now, and the second casserole freezes well for later!

- Preheat the oven to 350ºF.
- Bring a large pot of water to a boil, then salt generously. Add the pasta and cook according to package directions. Drain.
- Meanwhile, heat the oil in a large skillet over medium heat. Add the sausage and cook until browned on both sides. Remove the sausage from the pan to a plate and cover lightly with foil. Reserve about 1 tablespoon of oil in the pan and drain the remainder. Return the pan to the heat and add the onion, zucchini and carrots. Cook, stirring often, until softened, about 5 minutes. Add the garlic and cook until fragrant, another 30 seconds.
- Stir the spaghetti sauce and the undrained tomatoes into the vegetables. Bring to a boil, then reduce the heat. Simmer, uncovered, for 15 minutes.
- In a small bowl, combine the egg and the ricotta cheese.
- Spray 2 9×13-inch baking dishes with nonstick cooking spray. (Make sure one is freezer safe. I like to use a disposable aluminum pan.)
- In each of the pans, layer one fourth of each of the drained pasta, the tomato sauce, the sausage, the ricotta mixture, cheddar cheese, and then the mozzarella cheese. Repeat the layers.
- Cover the casserole that you are going to eat with foil, and bake for 15 minutes. Remove the foil and cook an additional 15 minutes, until heated through and the cheese is melted. Top with sliced green onions before serving.
- Let the second casserole cool completely, the place a piece of plastic wrap over the top. Cover tightly with foil and freeze.
- When ready to bake, allow the casserole to unthaw in the refrigerator for 24 hours. Remove from the refrigerator 30 minutes before baking. Carefully remove the foil and discard the plastic wrap. Recover the casserole with the foil and bake at 350º for 45 minutes, then remove the foil and bake an additional 10-15 minutes.

KIELBASA PASTA CASSEROLE II
I like kielbasa and a good casserole, and this is a delicious win win. This is basically a nicely seasoned spaghetti without the long pasta and made with flavorful kielbasa instead of a meat sauce. Since I have made some changes to this version, I could not honestly comment on the original Kielbasa Pasta Casserole recipe listed...

- 1. Bring a large pot of salted water to a boil then cook the pasta until tender, drain.
- 2. After starting the water, preheat your oven to 180 C (350 F) and get out a 9x13 baking dish.
- 3. Also after the water is starting to heat, heat a non stick pan on medium heat and when hot, add the sliced kielbasa and bell pepper. Brown the sausage, stirring them often. When the sausage is starting to brown, the pepper should be softened.
- 4. After draining the pasta, return it to the same pot, then drain any liquid from the sausage and add to the pasta, and add the spaghetti sauce, oregano, parsley, Italian seasoning, pepper, and 1/4 cup of the breadcrumbs to the pasta. Start with less spaghetti sauce than what is stated and add more as desired to your liking. I used 54 oz of sauce which was perfect.
- 5. Mix together then pour into the baking dish and spread out evenly.
- 6. Sprinkle evenly with the remaining 1/4 cup of bread crumbs, then the cheese.
- 7. Bake for 30 minutes until the cheese is starting to turn golden brown.
- 8. Serve and enjoy.
KIELBASA PASTA CASSEROLE

- 1. Preheat oven to 350 degrees
- 2. Boil large pot of water. Cook pasta for 8-10 min until al dente: Drain
- 3. In a medium skillet over medium high heat cook sausage in oil until browned about 5 min.
- 4. In a large bowl, combine ziti, sausage, stewed tomaotes, sauce, oregano, parsley and pepper. Mix well. Pour into 9x13 dish. sprinkle with bread crumbs, and top with cheese.
- 5. Cover with foil and bake in preheated oven 30 min. Remove foil and bake 10-15 min more till golden.

Steps:
- Slice kielbasa thin.
- Saute onions and kielbasa in a little shortening.
- In a 2-quart casserole dish, layer 1/2 of the sauerkraut, 1/2 of the kielbasa and onions, then sprinkle with 1/2 of the brown sugar.
- Repeat with the other half of the ingredients.
- Bake, covered, in a 325 degree oven for 1 hour.
- Serve it with mashed potatoes, glazed carrots and homemade applesauce.
