This is a nice soup recipe with a lot of texture and flavor. It is a welcome change for those weeks when there doesn't seem to be a lot of variety... and all 3 of my kids even loved it. This can also be cooked in a pan on the stove until the barley and carrot are tender, but I prefer the slow cooker method. The flavors seem to blend better.

1 pound Italian sausage
½ cup diced onion
1 tablespoon minced garlic
½ teaspoon Italian seasoning
1 (48 fluid ounce) can chicken broth
1 large carrot, sliced
1 (10 ounce) package frozen chopped spinach
¼ cup uncooked pearl barley

Steps:

  • In a skillet over medium heat, cook the sausage, onion, and garlic until the sausage is evenly brown. Season with Italian seasoning. Remove from heat, and drain.
  • In a slow cooker, mix the sausage mixture, chicken broth, carrot, spinach, and barley.
  • Cover, and cook 4 hours on High or 6 to 8 hours on Low.

1 bunch kale, stems removed and discarded
1 tablespoon olive oil
8 ounces kielbasa sausage, sliced thin
1 bunch green onions, sliced
3 cups chicken broth
1 (15.5 ounce) can white beans, drained and rinsed
½ teaspoon salt
1 pinch ground black pepper to taste
1 pinch grated Parmesan cheese, or to taste

Steps:

  • Roll kale leaves into tight tubes and cut crosswise into 1/4-inch strips.
  • Heat oil in a large, heavy saucepan over medium heat. Cook and stir kielbasa in hot oil until browned, about 5 minutes. Stir green onion with sausage; cook until onions soften, about 3 minutes. Add kale; cook and stir until kale wilts, about 3 minutes.
  • Pour chicken broth over kielbasa mixture; add beans and stir. Bring the mixture to a boil, reduce heat to low, and cook at a simmer until kale is completely tender, about 15 minutes. Season mixture with salt and pepper and top with Parmesan cheese.

Steps:

  • In a large stockpot, heat oil on medium. Add onion and sauté, stirring occasionally, for about 3 minutes, until translucent. Add carrots and sauté until soft, about 5 minutes. Add garlic, tomato, barley, cumin, turmeric, salt and pepper; stir to combine. Reduce heat to medium-low. Add 4 cups water, cover and simmer for 10 minutes. 1 cup water
1 large onion, chopped
2 -4 fresh portabella mushrooms, cubed
1 (8 ounce) container sliced button mushrooms (Porcini, package size is a guess, it's just the regular size of pre-sliced you find at the store)
1 (4 ounce) package mushrooms, of choice (Shitaake, Oyster, Morel, etc.)
2 tablespoons olive oil
1 carrot, diced (optional)
1 cup celery, sliced
1 cup barley
1/2 lb kielbasa or 1/2 lb Polish sausage, cut into chunks
1 bay leaves or 1/4 teaspoon dried basil
salt & freshly ground black pepper, to taste

Steps:

  • Heat the olive oil in the bottom of a deep pot.
  • Add the onion and sauté until almost transparent.
  • Add the celery [and carrot if used] and sauté until limp and throw in the keilbasa or sausage.
  • Let the flavors blend.
  • Add the chicken or beef broth and bring it to a boil.
  • Add all of the mushroom, the barley, parsley, bay leaf, salt and black pepper.
  • Return to a boil.
  • Lower the flame and simmer for 45 minutes or until barley is tender.

2 1/4 cups water
1/2 teaspoon salt
3/4 cup water
1/2 lb kale, chopped (3 cups, including stems and ribs)
2 (15 ounce) cans lentil soup
6 ounces smoked kielbasa, sliced thin (1/4 inch, 1 cup)
2 garlic cloves, forced through a garlic press

Steps:

  • Combine rice, water, and salt in a heavy medium saucepan. Bring to a full boil, covered, then reduce heat to low and cook, covered, until water is absorbed and rice is tender, 18 to 20 minutes. Quickly fluff with a fork, then remove from heat and keep covered.
  • Bring water to a boil, covered, in a medium saucepan. Add kale and a generous pinch of salt and cook, covered, over moderately low heat, stirring occasionally, until kale is tender, 5 to 8 minutes.
  • Add soup and kielbasa. If necessary, thin soup with a little water. Simmer, partially covered, stirring occasionally, 5 minutes.

1 package (14 ounces) smoked kielbasa or Polish sausage, halved lengthwise and sliced

1 can (28 ounces) crushed tomatoes
1 package (16 ounces) dried brown lentils, rinsed
1 can (15 ounces) black beans, rinsed and drained
3/4 cup medium pearl barley
1/2 cup frozen corn
10 cups reduced-sodium chicken broth

Steps:

  • In a 6-qt. stockpot, heat oil over medium heat. Add kielbasa; cook and stir 6-8 minutes or until browned. Remove from pot with a slotted spoon., Add carrots and onion to same pot; cook and stir 6-8 minutes or until tender. Add garlic and cumin; cook 1 minute longer. 3 tablespoons olive oil
2 medium yellow onions, chopped
2 carrots, chopped
2 teaspoons minced garlic
5 cups kale, thinly sliced in approximately ¾-inch ribbons
1 teaspoon kosher salt
¼ teaspoon ground black pepper
28 ounces (2 cans) cannelloni beans, drained
1 bay leaf
7 cups chicken broth

Steps:

  • In a Dutch oven over medium heat, saute kielbasa approximately five minutes. Remove kielbasa and set aside.. Add olive oil, and saute onions and carrots 5 minutes. Add garlic and saute 1 minute. Add kale, turn to low heat, cover and let kale steam for 4 minutes. Add salt and pepper, then stir to combine.. Add beans, bay leaf, broth and kielbasa. 1 lb Polish sausage (kielbasa) (diced small)
1 tbsp olive oil
½ onion (diced small)
4 medium carrots (diced small)
1/2 rutabaga (diced small)
1/2 cup dried barley
12 cups chicken stock (homemade, boxed, or from bouillon)
28 oz canned petite diced tomato
28 oz canned small white beans
8 oz kale (chopped)
salt & pepper (to taste)
grated Parmesan cheese (to taste for garnish)

Steps:

  • Heat a large stock pot over medium-high heat. Add olive oil. When the pan has heated up, add kielbasa. Stir occasionally until the kielbasa is browned. Use a slotted spoon to remove the kielbasa and set aside in a bowl.
  • To the hot pan and fat, add the onions, carrots, and rutabaga. Stir over medium-high heat until the vegetables brown a bit and get slightly soft.
  • Add the barley, chicken stock and tomatoes, bring to a simmer, and cook for 20 minutes.
  • Stir in the beans and kale and simmer for another 20 minutes or until all of the vegetables and barley are tender.
  • Season to taste with salt and pepper. Garnish with a sprinkle of Parmesan cheese. Enjoy!
