SAUSAGE BARLEY SOUP
This is a nice soup recipe with a lot of texture and flavor. It is a welcome change for those weeks when there doesn't seem to be a lot of variety... and all 3 of my kids even loved it. This can also be cooked in a pan on the stove until the barley and carrot are tender, but I prefer the slow cooker method. The flavors seem to blend better.

Steps:
- In a skillet over medium heat, cook the sausage, onion, and garlic until the sausage is evenly brown. Season with Italian seasoning. Remove from heat, and drain.
- In a slow cooker, mix the sausage mixture, chicken broth, carrot, spinach, and barley.
- Cover, and cook 4 hours on High or 6 to 8 hours on Low.

- Roll kale leaves into tight tubes and cut crosswise into 1/4-inch strips.
- Heat oil in a large, heavy saucepan over medium heat. Cook and stir kielbasa in hot oil until browned, about 5 minutes. Stir green onion with sausage; cook until onions soften, about 3 minutes. Add kale; cook and stir until kale wilts, about 3 minutes.
- Pour chicken broth over kielbasa mixture; add beans and stir. Bring the mixture to a boil, reduce heat to low, and cook at a simmer until kale is completely tender, about 15 minutes. Season mixture with salt and pepper and top with Parmesan cheese.

- Heat the olive oil in the bottom of a deep pot.
- Add the onion and sauté until almost transparent.
- Add the celery [and carrot if used] and sauté until limp and throw in the keilbasa or sausage.

- Combine rice, water, and salt in a heavy medium saucepan. Bring to a full boil, covered, then reduce heat to low and cook, covered, until water is absorbed and rice is tender, 18 to 20 minutes. Quickly fluff with a fork, then remove from heat and keep covered.
- Bring water to a boil, covered, in a medium saucepan. Add kale and a generous pinch of salt and cook, covered, over moderately low heat, stirring occasionally, until kale is tender, 5 to 8 minutes.

- Heat a large stock pot over medium-high heat. Add olive oil. When the pan has heated up, add kielbasa. Stir occasionally until the kielbasa is browned. Use a slotted spoon to remove the kielbasa and set aside in a bowl.
- To the hot pan and fat, add the onions, carrots, and rutabaga. Stir over medium-high heat until the vegetables brown a bit and get slightly soft.
- Add the barley, chicken stock and tomatoes, bring to a simmer, and cook for 20 minutes.
- Stir in the beans and kale and simmer for another 20 minutes or until all of the vegetables and barley are tender.
- Season to taste with salt and pepper. Garnish with a sprinkle of Parmesan cheese. Enjoy!
