KIDNEY BEAN SALAD



Kidney Bean Salad image

A simple and delicious combination of hard-cooked eggs, beans, onion, celery, and sweet pickle relish. A little mayo holds it all together.

2 eggs
2 (15 ounce) cans kidney beans, drained
½ onion, diced
1 stalk celery, diced
2 tablespoons sweet pickle relish
½ cup mayonnaise
salt and pepper to taste

Steps:

  • Place eggs in a saucepan with enough cold water to cover. Bring to a boil. Remove saucepan from heat. Cover, and let eggs stand in hot water for 10 to 12 minutes. Drain, cool, peel, and chop.
  • In a bowl, mix the hard-cooked eggs, kidney beans, onion, celery, relish, and mayonnaise. Season with salt and pepper. Chill at least 1 hour in the refrigerator before serving.

This is a complimentary dish served by a local upscale restaurant. They serve it before you receive your salad along with a dish of fresh vegtable sticks and olives. I can make a meal on just on the veggies and this bean salad. (Prep time does not include the overnight chilling).

3 (16 ounce) cans red kidney beans, drained & rinsed
1 cup chopped onion
1 cup chopped celery
1 cup mayonnaise
1/4 cup oil
1 tablespoon regina red wine vinegar
1/4 cup sweet pickle relish, drained
1 pinch sugar
salt & pepper

Steps:

  • Mix mayonnaise, oil vinegar, sugar, salt and pepper.
  • Add onions and stir well.
  • Then add the celery, beans and relish.
  • Chill overnight.

½ white onion, diced
2 hard-boiled eggs, diced
1 cup diced sweet pickles
1 cup mayonnaise
2 stalks celery, diced
salt and ground black pepper to taste

Steps:

  • Combine kidney beans, onion, hard-boiled eggs, pickles, mayonnaise, and celery in a large bowl until well combined. Season with salt and black pepper.
  • Refrigerate 8 hours to overnight to allow flavors to combine.

My dad's friend used to serve this as an appetizer in his restaurant in Ipswich, Mass. He shared it with us many years ago and it has been a family favorite ever since. Serve with crackers or favorite crudites.

½ cup minced onion
1 clove garlic, minced
2 cups mayonnaise
2 cups sweet relish
1 teaspoon salt
1 dash white pepper
2 teaspoons dry mustard

Steps:

  • In a medium bowl, stir together beans, onion, garlic, mayonnaise, and relish. Season with salt, white pepper, and mustard. Mix well, and refrigerate for several hours before serving.

1 red onion, chopped coarsely
1/4 cup white vinegar
1/4 cup vegetable oil
1/2 teaspoon chives, chopped
1/2 teaspoon oregano

Steps:

  • Drain the kidney beans well.
  • Add chopped onion to kidney beans.
  • Combine remaining ingredients and pour over beans and onion, mixing well.
  • Salt and pepper to taste.
  • Refrigerate at least two hours before serving.

1 small onion, minced
½ cup mayonnaise

1 dash Worcestershire sauce

⅛ teaspoon salt
⅛ teaspoon ground black pepper

Steps:

  • Rinse the kidney beans, and set aside to drain. In a medium bowl, stir together the onion, mayonnaise, relish, dry mustard, Worcestershire sauce, horseradish, garlic powder, salt and pepper. Gently mix in kidney beans until coated with dressing. Refrigerate until serving.

  • Put the chopped onions and half the vinegar into a large heavy-based saucepan and bring to a simmer. Cook for 15-20 minutes until tender.
  • Meanwhile, top and tail the beans, run a vegetable peeler down each side, then cut them diagonally into 1cm slices. Drop the sliced runner beans into a large pan of well-salted boiling water and cook for 3 minutes or until just tender. Drain and refresh under cold water, then set aside.
  • In a bowl, make a paste with the cornflour, mustard powder, turmeric and 5-6 tbsp of the remaining vinegar. Stir into the pan of simmering onions with the remaining vinegar, the sugar and salt. Simmer for 2-3 minutes, stirring, until thick. Add the beans to the pan and simmer for another 10 minutes, stirring regularly, until the beans are completely tender.
  • Meanwhile, heat a frying pan over a medium-high heat, then add the mustard seeds and sesame seeds and toss until the sesame seeds are lightly golden. Tip onto a plate and set aside to cool completely.
