* 2 Tablespoons olive oil
* 1 medium onion, chopped
* 1/2 green pepper, chopped
* 1/2 red pepper, chopped
* 2 to 3 boiled potatoes, chilled and diced with skins still on (nutrition info. uses 2)
* 1 15-ounce can kidney beans
* 1/2 cup water
* dash of salt
* dash of pepper
* dash of garlic powder
* dash of Tabasco sauce
* dash of Mrs. Dash seasoning

Steps:

  • Heat the olive oil in a large frying pan. Saute the onion until it's soft. Add the green and red peppers and saute briefly.
  • Add the diced potatoes and mix well. Cook for 10 minutes, turning with a spatula every 2 minutes.
  • While the potato mixture cooks, rinse the beans well to remove the "goo," then mash 1/2 to 2/3 of the beans with a potato masher. Mix the beans into the mixture in the frying pan, add 1/2 cup water, and cover. Cook over medium heat for another 5 minutes.
  • Season to taste. Serve and enjoy.
  • Makes 5 servings.

1 can (16 ounces) kidney beans, rinsed and drained
1-1/2 teaspoons chili powder
1/2 teaspoon ground cumin
3 teaspoons canola oil, divided
3/4 cup chunky salsa, divided
6 corn tortillas (6 inches)
1 cup shredded lettuce
2 tablespoons reduced-fat sour cream

Steps:

  • In a large nonstick skillet coated with cooking spray, cook the beans, chili powder and cumin in 1 teaspoon oil for 3 minutes. Stir in 1/2 cup salsa; bring to a boil. Reduce heat; simmer, uncovered, for 3-6 minutes or until thickened. , Meanwhile, brush both sides of tortillas with remaining oil. Place on an ungreased baking sheet. Bake at 400° for 5-8 minutes or until crisp. , Spoon bean mixture over tortillas. Top with lettuce, sour cream and remaining salsa.

Steps:

  • Heat the olive oil in skillet.
  • Saute the onion until translucent; add peppers and saute briefly.
  • Add potatoes and mix well.
  • Cook for 10 minutes, turning gently with a spatula every 2 minutes.
  • While the potato mixture cooks, mash 1/2 to 2/3 of the beans with a potato masher.
  • Mix the beans and mashed beans into the mixture in the frying pan, add 1/2 cup water, and cover.
  • Cook over medium heat for another 5 minutes.
  • Season to taste and serve hot.

2 onions, peeled and finely chopped
2 garlic cloves, peeled and crushed
1 sprig rosemary
500g (1lb) cooked butter beans
1 lemon, juiced and zested

Steps:

  • Gently fry the onion, garlic and rosemary in the oil until the onions are soft and cooked through.
  • Add the butter beans to the pan, stir and heat through.
  • Drizzle with lemon juice and stir in the zest.
  • Mash the beans manually. Alternatively, pour half the mixture into a food processor and blend until smooth, stirring in the remaining butterbean mixture.
  • Serve immediately.
