Delicious vegan kidney bean burger by Veganbell.

1 cup kidney beans (raw, uncooked*)
Pinch of salt
1 cup water
1.5 cups grated carrots
1 onion, sliced & charred (optional*)
Salt
Pepper
1 teaspoon smoked paprika
1 teaspoon onion powder
1 teaspoon garlic powder
1 cup breadcrumbs
1/2 cup all-purpose flour
1/4 cup cornflour
2/3 cup cold water
2 cups breadcrumbs
Oil

Steps:

  • In a large bowl, add 1 cup kidney beans + 4 cups water. Soak overnight.
  • Drain and transfer the beans to your pressure cooker (electric or stovetop). Add a pinch of salt + 1 cup of water.
  • For electric pressure cookers, cook for 22-25 minutes on MANUAL settings, High Pressure. For stovetop pressure cookers, cook for 5-6 whistles over medium heat. Do a quick release (we don't want the beans to become mushy).
  • Drain and transfer to a large bowl. Lightly mash them using a potato masher.
  • Add grated carrots + charred onions + salt + pepper + smoked paprika + onion powder + garlic powder. Mix them gently using your hands.
  • Add breadcrumbs and mix some more.
  • Scoop a handful (around 4-5 tablespoons) of the mixture and give them the shape of a burger patty. You can also use the lid of a container jar. Simply cover the inner of a lid with a plastic wrap and place a handful of the mixture in the lid. Gently press the mixture, remove/add more if needed, and then flip.
  • Transfer the patties to a baking sheet and let them chill for at least 2 hours.
  • In a medium mixing bowl, add all-purpose flour + cornflour + 2/3 cup cold water. Mix well until smooth.
  • Dip the chilled patties and coat them on both sides.
  • Now place them in a bowl of breadcrumbs. Flip and coat on all sides.
  • Shallow-fry the patties until they're brown on both sides.
  • Layer and assemble the burger. I used vegan mayo + lettuce + tomatoes + patty + ketchup + onion in my recipe.

  • Mash up kidney beans.

  • Place patties in a baking dish and bake at 350 for 20min.

This recipe comes from www.taste.com.au. It is really simple to make but tastes great. We often make it to wrap in tortilla. Very very good. Serve it with avocado, salad leaves and store-bought salsa. I have modified to use oats rather than bread in the mix to redcue its GI.

1 (750 g) can red kidney beans, rinsed, drained
1 small red onion, finely chopped
1/4 cup chopped fresh coriander
1 egg white
1 1/2 tablespoons olive oil
1/2 cup whole oats

Steps:

  • Reserve 185g (1 cup) of the red kidney beans and place the remaining beans in the bowl of the food processor. Process, in short bursts, until roughly mashed. Add the mashed beans, onion, coriander, egg white and reserved whole beans to the oats and stir until well combined. Use damp hands to divide the mixture evenly into 4 portions. Shape each portion into a patty about 2cm thick and 8cm in diameter.
  • Heat the oil in a large non-stick frying pan over medium heat. Add the patties and cook, uncovered, for 4 minutes each side or until golden brown and heated through.

  • Wash the red kidney beans under cold running water until the water runs clear, or rinse them until the water is longer cloudy.
  • Soak them in enough water - for at least 8 hours or overnight. Or go for a quick soaking method: Take kidney beans and water (at least 2 inches above the beans) in a saucepan. Let it come to a boil on medium heat. Once it starts boiling, turn off the stove, cover it and let it sit for 1 hour.
  • Drain the soaking water. Add 2 fresh cups of water and cook the beans. Instant pot: Pressure cook (manual) high pressure 8-10 minutes. Stove-top: simmer for 30-40 minutes. You may need more water. Stove-top pressure cooker: 1 whistle on high heat, then lower the heat and cook for 10 minutes.
  • Also, boil the sweet potato. I have cooked both beans and sweet potato at the same time in the instant pot.
