Make-Your-Own Personal Pizzas image

Let your kids (and other family members) loose with a ball of dough, a bowl of sauce, and a spread of colorful toppings, and watch their creativity unfold! All you need is fresh pizza dough (cut one 14- to 16-ounce ball into 4 pieces for individual pies), a rolling pin, baking sheets, any sauce you like, and a variety of sliced veggies, cured meats, and grated or cubed cheeses. Make-your-own-pizza night is all about individuality, and it's a great way to encourage your kids to eat their veggies and explore fun new foods.

1 (14- to 16-ounce) ball pizza dough
1½ cups super-easy marinara sauce ((or your favorite pizza sauce))
6 ounces mozzarella, Jack, Colby, or cheddar cheese, (grated or cut into ½-inch cubes)
Toppings of your choice
Extra-virgin olive oil
Salt and freshly ground black pepper
Condiments for serving ((ranch dressing, hot sauce, etc.))

Steps:

  • Preheat the oven to 500°F. Line two large rimmed baking sheets with parchment paper or grease them with a little olive oil.
  • Prep your toppings while the oven preheats, and place them all in separate bowls on a counter or table within easy reach of each pizza maker.
  • Cut the ball of dough into 4 equal-size pieces. Give one piece of dough to each person and let them roll, stretch, or press it out to a 6- to 8-inch circle. Try to avoid overworking the dough; encourage everyone to form their pieces into pizza-size circles and then get right to topping.
  • Place two rounds of dough on each baking sheet and let each person top their pizzas however they like! No combination of ingredients is off limits (as long as there's enough for everyone). As a general rule, two or three spoonfuls of sauce is plenty for individual pizzas. As far as the other toppings go, however, there are no limits! (Just know that the crust might be flimsy and wet in the middle if you pile on too much. Encourage your fellow pizza makers to grab pinches or spoonfuls rather than handfuls of toppings.) Pro tip: Making pizza faces (see photo above) or other patterns with colorful toppings will prevent pizza makers from overloading their crusts.
  • Transfer the baking sheets to the oven. Bake the pizzas for 10 to 15 minutes, rotating them halfway through, until the crust is golden and the cheese begins to brown in spots.
  • Remove the pizzas from the oven. Drizzle the pizzas with a little olive oil and season with a pinch of salt and a grind or two of black pepper if desired. Let them cool for a few minutes before slicing.
  • Serve the pizzas on their own or with ranch dressing, hot sauce, or other condiments for dipping/topping.

Burritos and tacos are such tough foods for kids to eat, because they always fall apart. These fast, easy, bean taco-burritos stay together nicely, so your little one can eat the WHOLE THING! The wedge shape keeps everything contained!

1 (17.5 ounce) package burrito-size flour tortillas
3 green onions, sliced
1 large tomato, diced
1 (4.5 ounce) can sliced black olives, drained
6 torn lettuce leaves
1 ripe avocado, sliced
1 (16 ounce) can refried beans
2 teaspoons dried onion flakes
½ teaspoon dried, minced garlic
1 teaspoon salt
½ teaspoon ground cumin
1 teaspoon chili powder
¼ teaspoon dried oregano
2 teaspoons water
1 (16 ounce) package shredded Cheddar cheese
1 (8 ounce) container sour cream

Steps:

  • In a large serving dish, arrange green onions. diced tomato, sliced olives, lettuce and avocado. Set aside.
  • Empty the can of refried beans into a microwave-safe bowl. Season with onion flakes, garlic, salt, cumin, chili powder and oregano. Stir in water, cover, and cook in microwave, on high, for about 2 minutes.
  • Take a tortilla and spread a thin layer of beans on half of it. Sprinkle on the cheese, and whatever toppings you would like. Spread sour cream over the other half of the tortilla.
  • Fold the tortilla in half, and then into quarters, and serve.

1 tube (13.8 ounces) refrigerated pizza crust
1 pound lean ground turkey
3/4 cup water
1 envelope reduced-sodium taco seasoning
1 can (16 ounces) fat-free refried beans
1-1/2 cups shredded pizza cheese blend
3 medium tomatoes, chopped
7 cups shredded lettuce
2 cups crushed baked tortilla chip scoops

Steps:

  • Unroll crust into a 15x10x1-in. baking pan coated with cooking spray; flatten dough and build up edges slightly. Bake at 425° for 8-10 minutes or until edges are lightly browned., Meanwhile, in a large nonstick skillet, cook turkey over medium heat until no longer pink; drain. Stir in water and taco seasoning. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Stir in refried beans until blended., Spread turkey mixture over crust; sprinkle with cheese. Bake at 425° for 5-7 minutes or until cheese is melted. Top with tomatoes, lettuce and chips. Serve immediately., ,

2 cups elbow macaroni
1 pound ground beef
1 (14 ounce) jar pizza sauce
1 (4 ounce) can tomato sauce
1 (4.5 ounce) can sliced mushrooms, drained
1 pound shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until cooked through but firm to the bite, 8 minutes. Drain.
  • Cook and stir ground beef in a skillet over medium heat until meat is crumbly and browned, about 10 minutes; drain excess grease.
  • Mix cooked ground beef, macaroni, pizza sauce, tomato sauce, and mushrooms in a bowl. Layer half the macaroni mixture into a 9x12-inch baking dish; top with 1/2 the mozzarella cheese. Layer remaining macaroni mixture over the top; sprinkle remaining mozzarella cheese over macaroni mixture. Cover dish with aluminum foil.
  • Bake in the preheated oven until cheese has melted and casserole is bubbling, about 35 minutes. Let cool for 3 to 5 minutes before serving.
