Macaroni and Cheese with Sausage, Peppers and Onions image

Macaroni and cheese is perfect supper food. It's a kids' favorite, and adults like it too. My recipe is simple and almost as quick as the boxed variety. Try this variation with Italian sausage and bell peppers.

1 recipe Creamy Macaroni and Cheese
1 pound Italian sausage, removed from casings
1 medium-large onion, thinly sliced
1 bell pepper, thinly sliced
¼ cup fresh basil, torn in pieces

Steps:

  • Follow the recipe for Creamy Macaroni and Cheese.
  • Heat a 10-inch skillet over medium-high heat. Cook sausage, breaking it up as it fries, until it loses its raw color, 3 to 4 minutes. Add onion and pepper slices, and saute until soft, about 5 minutes. Add basil, then stir mixture into macaroni. Serve hot.

This is a fantastic blend of southwest flavors and oozy cheeses. Very good. I would also add 4-6 oz. of cooked chorizo or other hot sausage to make this a one dish meal. To make it more colorful, add chopped red pepper or green onions after you take it from the oven. Rachael Ray is always joking about how she burns stuff in the broiler. The first time I made this, I set it on fire. No joke! The entire top of the macaroni had flames coming off it--I had to hit it with the back of a spoon to stop it. Just make sure you leave it under the broiler for seconds, not minutes!

1 lb macaroni
1 lb tomatillo
1 onion
2 garlic cloves
2 jalapenos
2 cups milk
2 teaspoons honey
1 teaspoon cumin
1 lime
1/2 cup fresh cilantro
3 tablespoons butter
1 cup vegetable broth
1 cup swiss cheese
1 cup monterey jack cheese
2 cups tortilla chips
1 cup monterey jack pepper cheese
1 cup sour cream (optional)

Steps:

  • Husk and rinse tomatillos, cut in half. Put in food processor and pulse until chopped.
  • Peel onion, halve and add to food processor, chop.
  • Clean and seed jalapenos and add to food processor, chop.
  • Add this mixture to a medium saucepan, add cumin and garlic.
  • Season with salt. Simmer mixture over low heat for 10 minutes.
  • Add the juice of one lime.
  • Add finely chopped cilantro.
  • Cook macaroni to al dente. Drain, return to hot pot.
  • In another saucepan, melt butter.
  • Over medium heat, whisk in flour for one minute.
  • Whisk in milk and broth. Season with salt and pepper.
  • Bring to a simmer and cook until thickened.
  • Add swiss and monterrey jack cheeses. Stir until melted.
  • Preheat the broiler.
  • Add the cheese sauce to the pasta and toss to coat.
  • In a 9 x 13 baking dish, add half the pasta.
  • Add the green tomatillo mixture.
  • Top with the other half of pasta.
  • Sprinkle with crushed tostada chips and pepperjack cheese.
  • Broil until browned --keep a very close eye on this.
  • Serve with sour cream if desired.
  • Garnish with chopped red pepper or green onions.

Kosher salt
1 pound elbow macaroni
1 tablespoon olive oil
1 pound sweet Italian sausage, casings removed
1 red bell pepper, seeded and chopped
1 onion, chopped
2 1/2 cups half-and-half
1/4 teaspoon cayenne pepper
Two 8-ounce packages cream cheese, at room temperature
One 8-ounce block sharp Cheddar, grated
1 cup grated Gruyere

Steps:

  • Preheat the oven to 425 degrees F.
  • Bring a large pot of salted water to a boil. Add the macaroni and cook according to package directions for al dente. Reserve 1 3/4 cups of the pasta cooking water and then drain the pasta; set aside.
  • Heat the oil in a large Dutch oven or saucepot over medium-high heat. Add the sausage and cook until lightly browned, breaking up the meat into small pieces, about 5 minutes. Transfer the browned meat to a plate with a slotted spoon. Add the bell pepper, onion and a pinch of salt to the drippings in the pot and cook, stirring occasionally, until softened and lightly browned, 10 to 12 minutes; transfer to the plate with the sausage.
  • Carefully wipe out the pot, add the half-and-half and cayenne and bring to a simmer over medium heat. Simmer until reduced to 1 1/2 cups, about 15 minutes. Add the cream cheese and stir until melted. Gradually whisk in the Cheddar and Gruyere, 1 handful at time, until all the cheese is melted and the sauce is smooth. Remove from the heat.
  • Add the cooked pasta and reserved pasta cooking water to the cheese sauce and stir to combine. Stir in the sausage and vegetables; adjust the seasoning with additional salt. Pour into a 9-by-13-inch baking dish and bake until bubbly and lightly browned, about 10 minutes.

9 tablespoons unsalted butter
1/2 pound elbow macaroni
1 pound homemade-style spicy pork sausage, removed from casings and crumbled
1 cup chopped yellow onions
1/2 cup chopped green bell peppers
1 tablespoon Essence, recipe follows
4 teaspoons minced garlic
1/2 teaspoon anise seeds
1/2 cup all-purpose flour
3 cups whole milk
1 teaspoon salt
1/2 teaspoon ground black pepper
1/8 teaspoon cayenne
3 cups grated sharp cheddar cheese (8 ounces)
1/2 cup fine dry bread crumbs
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme

Steps:

  • Preheat the oven to 350 degrees F.
  • Butter a large casserole dish with 1 tablespoon of the butter and set aside.
  • Bring a large pot of salted water to a boil. Add the macaroni and cook until al dente, about 10 minutes. Drain in a colander and rinse under cold running water. Drain well.
  • In a large skillet over medium-high heat, cook the sausage, stirring, until browned and the fat is rendered. Remove with a slotted spoon and drain on paper towels. Pour off all but 1 tablespoon of fat from the pan. Add the onions, bell peppers, and 1 teaspoon of the Essence, and cook, stirring, over medium-high heat until soft, about 3 minutes. Add the garlic and anise seeds, and cook, stirring, for 1 minute. Remove from the heat.
  • Melt the remaining stick of butter in a large, heavy saucepan over medium heat. Add the flour, and stirring constantly with a wooden spoon, cook over medium heat until thick, 3 to 4 minutes, being careful not to let the flour brown. Using a whisk, add the milk in a steady stream and cook, whisking constantly, until thick and smooth, 4 to 5 minutes. Remove from the heat. Add the salt, pepper, cayenne, and 2 cups of the cheese, and stir well. Add the noodles, cooked sausage and vegetables, and stir well to combine. Pour into the prepared baking dish.
  • In a mixing bowl, combine the remaining 1 cup of cheese with the breadcrumbs and remaining 2 teaspoons of Essence. Sprinkle over the macaroni and bake until golden brown and bubbly, about 25 minutes.
  • Remove from the oven and let rest for 5 minutes before serving.
  • Combine all ingredients thoroughly and store in an airtight jar or container.

I just can't do boxed mixes. I just can't do it. Those "helpers" they sell are so easy to make from scratch and so much healthier that there's just no excuse. Although Velveeta probably isn't the "cheese of choice" to use, I do use it on rare occasion because it does melt nicely and isn't oily and doesn't separate. At least most of the unwanted chemicals have been reduced to a minimum. It's quick, easy, very good tasting and you can adjust the heat level by using your preferred salsa! 1 - lb. sweet italian johnsonville sausage (or mild or hot to preference)
1 - small onion, chopped
2 - cups (16 oz.) homemade or jarred salsa (mild, medium or hot to taste)
2 - cups water
1 - tsp. beef bouillon (*see note)
1 - tsp. chili powder
1/2 - tsp. garlic powder
1/2 - tsp. cumin
1/2 - tsp. coarse ground black pepper
1/4 - tsp. cayenne
2 - cups uncooked macaroni
12 - oz. velveeta cheese, cubed
TOPPINGS OF CHOICE:
- sour cream
- guacamole or diced avocado
- black olives
- sliced green onion
- jalapeño rings

Steps:

  • In large deep frying pan, brown onion and meat, breaking up as you go, until no longer pink in the middle. Remove with slotted spoon to a medium-sized bowl. Drain grease from pan and wipe out with a paper towel.
  • Add salsa, water, bouillon and spices. Bring to a boil over medium-high heat. Add noodles, reduce to medium-low, cover and simmer for 10-12 minutes until noodles are tender and water has been absorbed. (*If you have excess water, just uncover, increase heat and lightly boil until water evaporates.) Stir in sausage mixture and Velveeta. Stir until cheese has melted. Serve with toppings of choice!
  • *I always use Superior Touch Better than Bouillon Beef Base. It's in the same aisle as regular bouillon. It's much better than cubes or dried granules.
