SAM'S NO.3 KICKIN' GREEN CHILI

- If roasting your own chiles: Preheat an outdoor grill to high. Place the Anaheim chiles on the grill and cook, turning to cook evenly, until the skins blister and blacken. Remove from the grill and place in a plastic bag. Seal the bag and let the chiles stand for 5 to 10 minutes. Remove the skin, stems and seeds and chop into 1/4-inch pieces.
- Heat some butter in a large pot and add the cubed pork. Cook about15 minutes, and then add the onions and spices. Cook on low heat, stirring occasionally. When the pork has cooked through, add the fresh tomatoes, canned tomatoes, green chiles and jalapenos, if using. Stir occasionally.
- After 5 minutes, add 8 cups water. Bring to a low boil. Stir occasionally. Increase the heat and bring the chili to a rolling or high boil.
- In separate pan, melt the butter or margarine and whisk in the flour, stirring until creamy.
- Slowly add the roux to the chili, stirring constantly, and shut off the heat. Continue to stir so that the roux is evenly distributed. (Roux amount can be adjusted depending on desired consistency or thickness.)
- Let stand 5 minutes and serve in a bowl or smothered!
ZESTY CHILI CHEESE FRIES
Steps:
- Set up grill for direct cooking over medium heat. Oil grate when ready to start cooking. In a large bowl combine fries and chili seasoning, andtoss until well coated. Place fries on hot, oiled grill and grill for 4 minute. Turn and grill for another 5 minutes or until fries are crispy. While fries are on the grill add the chili to a medium saucepot over medium-low heat and bring to a simmer. Remove fries from the grill and place on a platter. Pour the chili over the fries, sprinkle with cheese and garnish with sliced green onion and a dollop of sour cream. Indoor: Preheat broiler. Place frozen fries on foil lined baking sheet. Toss to coat with oil and chili seasoning. Broil fries for 8 to 12 minutes, turning once or until desired degree of crispness.

Steps:
- Place french fries on a large square of heavy-duty aluminum foil.
- Top with cheese and then chili (if you put the cheese on top it will stick to the foil).
- Fold sides of foil up to form a packet and seal edges well.
- Place packet directly over campfire coals and cook 20-30 minutes until fries are soft and cooked.
- Remove packet carefully with tongs and open with care - it will be hot!

KATE'S KICKIN' SPICE BLEND
I put this together because I found myself using these same seasonings a lot in everyday cooking and I finally got tired of adding things separately! I use (with a tablespoon of olive oil) to season water before I steam greens or corn, to roast potatoes or yams (cut into 1/2 inch cubes and toss with olive oil), as a dry rub on meat for bbq, and in soups to add a little extra kick. It tastes similar to the seasoning they use in some restaurants for French fries. I use it pretty liberally because I like extra spice, can be used more sparingly if you like less. Start with a tablespoon and make it yours!

- 1. Preheat oven to 375 degrees. Grease a large cookie sheet. Fill a large bowl with cold water, add the potatoes, and allow to soak for 10 minutes. Whisk together the oil, v-8 and rest of ingredients in large bowl. Drain the potatoes, and pat dry with paper towels. Toss the potatoes with the oil and spice mixture; stir until evenly coated. Arrange fries in a single layer on the prepared baking sheet. Bake fries in preheated oven for 20 minutes. Turn and continue to bake until browned and crispy, about 20 more minutes.
