Steps:
- In a Dutch oven, heat oil and butter over medium-high heat. Add onion; cook and stir 5-7 minutes or until tender. Add garlic; cook 1 minute longer., Stir in remaining ingredients; bring to a boil, stirring occasionally. Reduce heat; simmer, uncovered, 5 minutes. Remove bay leaf.

So quick and easy to make on a weeknight. I love it as a low-carb option on its own. Or serve over hot rice.

- Heat sesame oil in a large skillet over medium heat.
- Combine pork, 1 teaspoon black pepper, cornstarch, and salt in a bowl. Add to hot oil and fry until browned, about 3 minutes. Add green beans.
- Combine chicken stock, soy sauce, Worcestershire sauce, chile-garlic sauce, vinegar, garlic, and sugar in a bowl and whisk together. Add to pork and green bean mixture. Bring to a boil. Cook until slightly thickened, about 3 minutes. Reduce heat and simmer until green beans are tender, about 5 minutes more.

BBQ CHICKEN CHILI
For my BBQ Chicken Chili I decided instead of chunks of ground beef or steak, I would use chopped BBQ chicken and add it to one of my favorite chili recipes with an extra bump in bean power coming from chickpeas. Chili powder, chipotle, beer and other spices round out this spicy good family favorite.

Steps:
- In a large stock pot over medium heat add the oil and sauté the onion for 5 minutes. Add the jalapeños and garlic and continue cooking for 3 minutes. Deglaze pot with Worcestershire sauce and stir to pick up browned bits on bottom of pot.
- Next add the remaining ingredients through tomato paste, stir to combine, cover and simmer on low for 1 1/2 hours. If there is too much liquid at this time, simmer to reduce with lid off for 15 minutes.
- While chili cooks start BBQ grill and heat to 350°F. Grill chicken breasts on each side, basting on each turn with your favorite BBQ sauce. I start with 3 minutes on one side with closed lid. Turn, baste, cover for 5 minutes more. Turn once again, baste, cover for 2-3 more minutes or until internal temp reaches 160°-165°F. Remove from grill and rest 5 minutes. Chop into bite sized pieces and add to chili.
- Serve topped with a dollop of sour cream, shredded cheddar cheese and chopped cilantro (optional).

BBQ CHICKEN CHILI

- Heat a large pot over medium heat and add the olive oil, onion, jalapeño, and garlic. Cook until soft, about 5 minutes. Add the paprika, chili powder, cumin, black pepper, salt, and red pepper flakes. Stir and cook for 2 to 3 more minutes.
- Add the chicken, red peppers, beans, chicken stock, tomatoes, and barbecue sauce, stirring to combine. Cover the pot, lower the heat to medium low, and cook for 20 minutes. Remove the lid and taste, adjusting the seasoning to taste, if needed. Cover and cook another 10 minutes.
- Ladle the chili into bowls and top with cheddar cheese and cilantro. Enjoy!
- Press saute, add the olive oil, onion, jalapeño, and garlic. Cook until soft, about 5 minutes. Add the paprika, chili powder, cumin, black pepper, salt, and red pepper flakes. Stir and cook for 2 to 3 more minutes.
- Add the chicken, red peppers, beans, chicken stock, tomatoes, and barbecue sauce, stirring to combine. Cover and cook high pressure 10 minutes (if using raw chicken, 15 minutes). Natural release, adjusting the seasoning to taste, if needed.
- Ladle the chili into bowls and top with cheddar cheese and cilantro. Enjoy!

- In a large bowl, toss chicken with cumin and salt to coat. In a large skillet, cook chicken, half at a time, in hot oil over medium heat until no longer pink. Drain off fat. Place chicken in a 4- or 5-quart slow cooker. Stir in salsa, stir-fry vegetables, beans, and undrained tomatoes.
- Cover and cook on low-heat setting for 4 to 5 hours or on high-heat setting for 2 to 2-1/2 hours.
- Reserve 3 cups of the chili; store as directed below. Serve remaining chili. If desired, top with sour cream and cheese. Makes 4 (1-1/2-cup) servings and reserves.

BUBBLE UP BBQ CHICKEN AND BEANS BAKE

- Pre-heat the oven to 350. Lightly mist a 9x13 baking dish with cooking spray and set aside.
- Cook the bacon according to package directions until crisp and set on paper towels to dry. Chop into smaller pieces.
- Place the chicken, beans, barbecue sauce, tomato sauce and chopped bacon in the baking dish and stir together until combined. Add the biscuit pieces and stir in to coat. Bake for 25 minutes. Remove from the oven and sprinkle the cheddar cheese over the top. Return to the oven for another 15 minutes until the casserole is hot and the biscuits have bubbled up. Slice into 6 pieces and serve.

- Place beans and broth in a slow cooker. Cover and cook on high until beans are tender, 2 hours.
