Making baked sweet potatoes is an easy, healthy way to add some nutrients to any meal.

4 large sweet potatoes
4 tablespoons unsalted butter
1 teaspoon coarse salt
1/4 teaspoon ground black pepper

Steps:

  • Preheat oven to 375 degrees with rack in center position.
  • Scrub and pat potatoes dry. Pierce potatoes all over with the tines of a fork and bake in oven, directly on rack, until soft and caramelizing, 1 1/2 hours.
  • Slash the tops of potatoes open with the tip of a sharp knife and push ends of each potato toward each other to open. Divide butter, salt, and pepper among potatoes and serve.

2 tablespoons olive oil
3 large sweet potatoes
2 pinches dried oregano
2 pinches salt
2 pinches ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Coat the bottom of a glass or non-stick baking dish with olive oil, just enough to coat.
  • Wash and peel the sweet potatoes. Cut them into medium size pieces. Place the cut sweet potatoes in the baking dish and turn them so that they are coated with the olive oil. Sprinkle moderately with oregano, and salt and pepper (to taste).
  • Bake in a preheated 350 degrees F (175 degrees C) oven for 60 minutes or until soft.

8 large sweet potatoes, peeled and cut into 1/8ths
3 cups light brown sugar
1 cup water
1 cup fresh orange juice
2 vanilla beans, split in half lengthwise*
2 teaspoons orange zest
2 teaspoons ground cinnamon
1/2 teaspoon salt
1/2 cup bourbon
Note: I used 1 Tablespoon Singing Dog Vanilla Bean Paste
1 stick butter, cut into pieces

Steps:

  • Preheat the oven to 375°F. In a large heavy pot, combine the potatoes, sugar, water, orange juice, vanilla beans, orange zest, cinnamon, and salt. Bring to a simmer over high heat. Lower the heat, cover and simmer, stirring occasionally, until the potatoes are tender, about 20 minutes. Strain the potatoes out of the sauce and place in a casserole dish. Return the sauce to the pan. Add the bourbon to the sauce and continue to cook until syrup is thickened, about another 15 minutes**. **I have found that I need to reduce the sauce for closer to 30 minutes, on medium-high heat. Pour the syrup over the potatoes and place in the oven. Bake until the potatoes are browned, about 10 to 15 minutes. Remove from the heat and add the butter, stirring gently to incorporate. Serve immediately.

4 teaspoons butter, divided equally
1/2 teaspoon cinnamon
1/4 teaspoon chili powder
1/8 teaspoon cayenne
1/4 teaspoon salt

Steps:

  • Wash sweet potatoes and prick with a fork.
  • Microwave potatoes for about 5-7 minutes or until soft OR bake in a 350 degree oven for about 1 hour or until soft.
  • Mix spices together and set aside.
  • Make a slit in the potato just as you would for a regular baked potato.
  • Insert 1 tsp butter into each and sprinkle with the spice mix.
  • Fluff meat of sweet potato to mix in butter and spices.
  • Feel free to adjust the amount of spices and butter to your liking.

These twice-baked sweet potatoes are flavored with maple syrup, butter, cream cheese, and spices to kick the flavor profile up a notch. This flavorful mixture is then stuffed back into the sweet potato halves and baked again for the most delicious and healthy side dish.

2 lbs sweet potatoes (4 medium-sized potatoes)
2 tbsp light butter
2 tbsp maple syrup
2 oz reduced fat cream cheese
1/2 tsp paprika
1/2 tsp cinnamon
1/2 tsp coriander
1/2 tsp kosher salt
1/4 tsp cayenne
1/4 tsp nutmeg

Steps:

  • Preheat the oven to 400F.
  • Wash the sweet potatoes; do not peel them.
  • Place the sweet potatoes on the wire rack in the oven and roast for 45-50 minutes.
  • Remove the potatoes from the oven and cut them in half lengthwise.
  • Scoop the insides of the potatoes out into a mixing bowl.
  • Mash with a fork. Add the butter, cream cheese, syrup and spices.
  • Mix thoroughly.
  • Scoop the mixture back into the sweet potato halves and arrange them in a baking dish.

3 sweet potatoes (peeled and cut into 1/2" pieces)
1/4 teaspoon oregano
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 350 and grease a baking dish that is oven friendly with nonstick cooking spray.
  • Peel and prep sweet potatoes by dicing into 1/2 inch pieces. Make sure all pieces are similar in size to avoid over or under cooking some.
  • Add potatoes and cooking oil to the dish and mix well to evenly coat all vegetables.
  • Mix seasoning together and sprinkle on top of sweet potatoes.
  • Cover entire casserole dish with foil and cook for 20 minutes.
  • Remove foil and return to oven for an additional 20 minutes or until potatoes are fork tender.
