KHAO TOM (THAI RICE SOUP)
Delicious light yet filling soup. My son's favorite when eating Thai food. He begged for me to cook it at home. Found this recipe on chef2chef.net modifed it slightly - yummy!

Steps:
- In a large saucepan combine stock with gingerroot, shallots, lemon grass, rice and salt to taste.
- Bring to a boil and simmer, stirring occasionally, for 20 to 30 minutes, or until soup is a porridge-like consistency.
- Remove and discard lemon grass. Add the pork, cilantro, fish sauce and lime juice and simmer 5 minutes more.
- Garnish with scallions and cilantro.

Steps:
- Heat the oil in a wok or skillet over medium heat and stir fry teh garlic until fragrant and golden brown, 1-2 minutes. Set aside.
- In a large saucepan, bring the chicken stock to a boil over high heat. Reduce the heat to medium and add the galangal and tang chye. Season with the salt and pepper and simmer for about 7 minutes.
- Add the rice and bring the mixture to a boil.
- Add the fish pieces and simmer for about 5 minutes until fish is cooked.
- Stir in the celery and fish sauce and remove from heat.
- Serve hot garnished with the crispy fried garlic, scallions and cilantro leaves.

This is my favorite breakfast. It is easy to prepare, uses up cooked rice from the day before and is light if your stomach cannot handle anything fried in the morning. It is also very good for anyone suffering from a night of drinking. Serve with pickled chile peppers, dry-roasted Thai chile peppers, fish sauce, and fried garlic on the table so guests can season soup to their tastes.

- Bring chicken stock to a gentle boil in a large pot over medium heat. Add snapper slices, rice, cherry tomatoes, and gai lan. Simmer until snapper is cooked through, about 5 minutes. Stir in green onions and pak chi farang; season soup with salt. Simmer until flavors combine, about 5 minutes more.
- Divide soup among 4 bowls to serve.

- Step 1: Begin by adding 2 cloves of garlic and 1/2 tbsp of coriander stalk to a mortar and pestle, then crush it into a fine paste.
- Step 2: Now scoop about half of the paste out and into a mixing bowl, along with a hint of ground pepper, 125g of minced pork and 1/2 tbsp of fish sauce, then give everything a good mix, and set aside in the fridge.

Let the meatballs cook in the soup for about 5 minutes or so until they are cooked all the way through, then you can add in 1 cup of steamed rice, leftover rice is ideal for this. Mix the rice into the soup thoroughly making sure there are no lumps of rice, and once the soup begins to bubble again, turn off the heat and serve.
