This recipe from the Florida Keys has been given to almost everyone I know. It is the best marinade for chicken, and it only takes 30 minutes from prep till you can grill! It's a great blend of flavors with honey, soy sauce, and lime juice. If you have time, try marinating overnight for the fullest flavor.

3 tablespoons soy sauce
1 tablespoon honey
1 tablespoon vegetable oil
1 teaspoon lime juice
1 teaspoon chopped garlic
4 skinless, boneless chicken breast halves

Steps:

  • In a shallow container, blend soy sauce, honey, vegetable oil, lime juice, and garlic. Place chicken breast halves into the mixture, and turn to coat. Cover, and marinate in the refrigerator at least 30 minutes.
  • Preheat an outdoor grill for high heat.
  • Lightly oil the grill grate. Discard marinade, and grill chicken 6 to 8 minutes on each side, until juices run clear.

These are both sweet and tangy, and a versatile twist on the usual chicken wings. They can be served for dinner, and can also be made ahead of time. The wings can also be served on a buffet line, kept warm in a buffet server or in a crock pot.

1/2 cup pineapple juice
1/2 cup ketchup
1/4 cup packed brown sugar
1/4 cup teriyaki marinade, and sauce
1/4 cup honey
2 garlic cloves, minced
2 lbs chicken wings, drummettes (about 24)

Steps:

  • Preheat oven to 350 degrees. Line a 13x9-inch pan with foil and lightly spray with an aerosol cooking spray.
  • In a 1-quart saucepan, heat all ingredients except chicken to boiling, stirring occasionally. Place chicken in pan; pour sauce over chicken.
  • Bake uncovered about 1 hour, turning chicken 2 or 3 times, until juice of chicken is clear when thickest part is cut to bone (180 degrees).
  • TO SERVE FOR A BUFFET: Place chicken wings in a buffet line or buffet server which has been sprayed with aerosol cooking spray. Cover; keep warm on low heat.
  • TO MAKE AHEAD: Prepare and bake the drummettes up to 24 hours before serving. Cover with foil and refrigerate, then reheat them in the oven.

3 lbs chicken wings, about 16
½ cup butter
1 cup hot sauce, mild to wild
½ tsp cayenne pepper, optional
¼ tsp freshly ground black pepper

Steps:

  • Arrange wings in Wave oven pan and heat on 4” rack. Turn over once, until browned and cooked through, 18 - 20 minutes total. Melt the butter in a saucepan, and mix in the hot sauce, cayenne pepper, and black pepper. Place wings in a large container with a secure lid. Pour sauce over the wings, and seal. Shake wings with the sauce until thoroughly coated.

3 tbsp. unsalted butter
1/2 c. ketchup
2 tsp. sugar
Sriracha hot sauce to taste, probably about 4-5 good shakes
12 chicken wings
Kosher salt
Freshly ground black pepper
1/2 dozen green onions, finely sliced

Steps:

  • 1. Melt butter in a saucepan and add ketchup, sugar, sriracha, salt and pepper 2. Taste sauce and adjust seasonings as necessary 3. Fill a deep pan 1/3 full with cooking oil and heat to 375 degrees 4. Cut chicken wings at the joints and discard wing tips 5. Dry wings thoroughly and leave at room temperate for a few minutes before frying to prevent oil from cooling down significantly once chicken is in 6. Add chicken to oil and stir to separate, try to keep oil temperature at 375 degrees 7. Cook until crisp and golden, about 8 minutes 8. While chicken is cooking, add green onions to sauce 9. Drain wings on paper towels and toss in sauce 10. Pile on plate and garnish with extra green onions

  • Rinse and pat dry your chicken wings and place in a gallon size sealable baggie. Then pour mixture over chicken wings. Seal the bag, toss the wings, and let the chicken wings marinade for at least 30 minutes in the refrigerator.
  • Preheat the grill to medium-high heat. Clean and then wipe grill grates with oil (on a thick coated paper towel using the cleaning brush so that your hands don't get burnt)! Place the chicken wings on the grill, close the grill, and let those babies cook for 5 minutes! While the wings are cooking make ANOTHER BATCH OF MARINADE! This will be used to pour over the wings once they are done cooking and on the plate.
  • Turn your chicken wings, and lightly drizzle honey over the wings. Cook for another 5 minutes or until the internal temperature reads 165. Once the chicken wings are done place them on a plate. Pour your second batch of marinade over the wings, then drizzle additional honey on top of the wings.
