1 1/2 cups sweetened condensed milk
1 1/2 cups heavy whipping cream
1 cup lime juice
1 teaspoon lime zest
4 to 6 graham crackers, for garnish

Steps:

  • Mix ingredients together and refrigerate until cold. Pour into ice cream maker and mix for 12 to 15 minutes. Transfer to another container and place plastic wrap on ice cream and cover container tightly with a lid. Place in freezer for several hours.
  • When ready to serve, garnish with graham crackers.

1 package (8 oz) cream cheese, softened
1 egg
1 can (14 oz) sweetened condensed milk (not evaporated)
1 tablespoon grated lime peel
1/3 cup Key lime juice or regular lime juice
1 cup frozen (thawed) whipped topping
Additional grated lime peel, if desired

Steps:

  • Place cookie sheet on oven rack. Heat oven to 375°F. Let 1 crust thaw 10 to 20 minutes. Prick bottom and around side thoroughly with fork. Bake on cookie sheet 9 to 11 minutes or until very light golden brown.
  • In medium bowl, beat cream cheese with electric mixer on medium speed until light and fluffy. Gradually beat in egg and condensed milk. Beat in 1 tablespoon lime peel and the lime juice. Spread over crust.
  • Bake 25 to 30 minutes or until center is set. Cool 30 minutes. Cover loosely; refrigerate at least 3 hours until chilled. Just before serving, top with whipped topping. Garnish with additional lime peel. Cover and refrigerate any remaining pie.

1 (9 inch) pie crust, baked
3 eggs, beaten
1 (14 ounce) can sweetened condensed milk
½ cup key lime juice
1 teaspoon grated lime zest

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium mixing bowl, combine eggs, condensed milk, lime juice, and lime rind. Beat on medium speed with electric mixer for about 1 minute or until mixture is thoroughly blended. Pour into baked pastry shell.

1 1/4 cups graham cracker crumbs from 9 (2 1/4-inch by 4 3/4-inch) crackers
2 tablespoons sugar
5 tablespoons unsalted butter, melted
For filling
1 (14-ounce) can sweetened condensed milk
4 large egg yolks
1/2 cup plus 2 tablespoons fresh or bottled Key lime juice (if using bottled, preferably Manhattan brand)
For topping
3/4 cup chilled heavy cream

Steps:

  • Make crust:
  • Preheat oven to 350°F.
  • Stir together graham cracker crumbs, sugar, and butter in a bowl with a fork until combined well, then press mixture evenly onto bottom and up side of a 9-inch (4-cup) glass pie plate.
  • Bake crust in middle of oven 10 minutes and cool in pie plate on a rack. Leave oven on.
  • Make filling and bake pie:
  • Whisk together condensed milk and yolks in a bowl until combined well. Add juice and whisk until combined well (mixture will thicken slightly).
  • Pour filling into crust and bake in middle of oven 15 minutes. Cool pie completely on rack (filling will set as it cools), then chill, covered, at least 8 hours.
  • Make topping:

Steps:

  • Preheat fan forced oven to 170C/340F.
  • Combine almond meal, flax meal and Swerve and mix well.
  • Add the melted butter and mix well.
  • Pour mixture into the base of a 9in spring form pan and press into the base and at least 1in up the sides.
  • Bake the crust for 12 minutes, or until golden and firm. Set aside to cool.
  • Reduce the oven temperature to 150C/300F.
  • Whisk together the eggs and sugar free sweetened condensed milk in a stand mixer on medium speed.
  • Drop the speed to low and slowly pour in the lime juice, and then the cream and the lime zest.
  • Pour the mixture into the cooled base and bake in the oven for 35-40 minutes, until there is only a slight wobble in the center.
  • Leave the pie at room temperature for 20 minutes to rest before placing in the fridge for at least 2 hours to cool.
  • Slice into 16 pieces and enjoy. We recommend serving it with a dollop of softly whipped cream.
  • Whip cream and spread over the top of the cooled pie.

6 Tbsp unsalted butter (melted)
1/3 cup granulated sugar
1 cup heavy whipping cream (plus more for decorating)
14 oz can sweetened condensed milk
8 oz cream cheese (room temperature)
1/2 cup key lime juice (or lime juice)
1 Tbsp lime zest (finely grated (optional))

Steps:

  • In a medium bowl combine graham cracker crumbs, melted butter, and sugar. Stir until combined then press tightly into the bottom and up the sides of a 9-inch pie dish. Chill the crust for 30 minutes or longer.
  • In the bowl of a stand mixer fitted with the whisk attachment whip up the heavy cream until stiff, then transfer to a bowl and set aside.
  • In the same bowl of a stand mixer fitted with the paddle attachment beat cream cheese at low-medium speed until smooth, about 1 minute.
  • Add the sweetened condensed milk slowly then beat until smooth and well mixed.
  • Add the whipped cream and mix until combined.
  • With the mixer running on low speed, slowly add the key lime juice. The mixture will start to thicken and to get creamy. Continue to mix for 1 more minute.
  • Pour into prepared pie dish and refrigerate for atleast 6 hours or overnight until firm.

3 cups sweetened condensed milk (about 2.5, 14 oz cans)
1/2 cup sour cream (full fat)
3/4 cup key lime juice (about 15-20 limes, depending on how juicy they are)
1 tablespoon grated lime zest
1 cup heavy cream
1/3 cup powdered sugar
1/2 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°F. Bake the graham cracker crust for 6-8 minutes. Remove from the oven and let cool.
  • In a large bowl combine the sweetened condensed milk, sour cream, key lime juice, and lime zest. Using a hand mixer, beat until thoroughly combined. About 1 minute. If you don't have a hand mixer you can use a whisk and just whisk vigorously. Pour the mixture into the graham cracker crust.
  • Bake for 10 minutes. Tiny pinhole bubbles will begin to burst on the surface of the pie (hard to see so watch closely). Do not brown the pie.
