MUSSELS IN GARLIC WINE SAUCE



Mussels in Garlic Wine Sauce image

A big bowl of plump, steamed Mussels in Garlic Wine Sauce, so good with grilled sourdough bread. This is a budget-friendly, easy one-pot meal. Add a glass of wine and make it a special dinner for date-night.

2 tablespoons olive oil
1 medium shallot, finely chopped
3 garlic cloves, finely chopped
Salt and freshly ground pepper
4 pounds mussels, scrubbed
1 cup chicken broth
1 1/2 cups dry white wine, (I like Sauvignon Blanc)
4 tablespoons butter,
1/4 cup coarsely chopped flat-leaf parsley, plus more for serving

Steps:

  • In a Dutch oven or large pot with a lid, heat the olive oil and add the shallot and chopped garlic, season lightly with salt and pepper and cook over medium heat, stirring, until the garlic is softened and barely golden, about 2 minutes.
  • Add the chicken broth and bring to a boil then add the mussels and wine, cook for 1 minute, giving it a stir occasionally. Cover with the lid and steam the mussels until they open, about 4-5 minutes. Remove from the heat. Using a slotted spoon, transfer the mussels to 6 serving bowls, discarding any mussels that do not open.
  • Return the pot to the heat and bring to a boil to reduce the pot broth slightly. Add the butter and parsley to the broth, and stir until the butter melts. Slowly pour the broth over each serving of the mussels. Garnish each serving with a sprinkle of chopped parsley and serve with crusty grilled bread.

4 tablespoons unsalted butter
5 cloves garlic, thinly sliced
1/2 teaspoon smoked paprika
Freshly ground black pepper
1 cup dry white wine
3 pounds mussels, rinsed
1/4 cup chopped fresh parsley
2 tablespoons chopped fresh chives
French fries, for serving

Steps:

  • Heat the butter in a large wide pot with a lid or large Dutch oven over medium-high heat. Add the garlic, paprika and a generous grinding of pepper; cook, stirring until the garlic is just turning golden, about 3 minutes. Stir in the wine and bring to a boil.
  • Add the mussels, cover and cook, stirring occasionally, until the mussels have opened wide, 6 to 8 minutes. Discard any unopened mussels. Stir in the parsley and chives and serve with french fries on the side.

This is absolutely the simplest way to cook mussels, and perhaps the most satisfying. A big pot of them makes an easy, festive dinner any night of the week.

2 tablespoons extra-virgin olive oil, plus more for toasts
2 garlic cloves, minced, plus 1 or 2 whole garlic cloves for rubbing toasts
Pinch of crushed red pepper
4 pounds mussels, cleaned
1/4 cup white wine or water
1 baguette, split lengthwise, then cut crosswise in half
1 cup roughly chopped parsley

Steps:

  • Heat broiler. Put olive oil in a large heavy-bottomed soup pot or Dutch oven over medium heat. Add the minced garlic and red pepper and let sizzle for 30 seconds without browning. Add the mussels, stir to coat and increase heat to high. Add the wine or water, and put on lid. After 2 minutes, give the mussels a stir, then replace lid and continue cooking until all mussels have opened, 6 to 8 minutes.
  • Paint cut sides of the baguette pieces with oil and place cut side up under broiler to toast. Rub toasts with the remaining garlic cloves.
  • Stir the chopped parsley into the mussels, then ladle mussels and broth into bowls. Serve with the garlic toasts.

Kettle-Seared Garlic-Pepper Mussels image

This Vietnamese-style dish infuses fresh mussels with intense flavors of garlic, pepper, and fish sauce. A cast-iron pot, the ideal cooking vessel, gets very hot, cooking the mussels quickly and heightening the flavors of the seasonings. You can also use a wok or Dutch oven.

Yield Makes 4 to 6 servings

Number Of Ingredients 9

2 tablespoons canola oil
6 cloves garlic, chopped
2 shallots, thinly sliced
1/2 teaspoon coarse sea salt
2 lb (1 kg) mussels, scrubbed and debearded
2 tablespoons each sugar and Asian fish sauce
Coarsely ground pepper
1 red jalapeño chile, seeded and finely diced
Fresh cilantro (fresh coriander) sprigs for garnish

Steps:

  • Warm a 3-qt (3-l) cast-iron kettle over medium-high heat. When hot, add the oil, garlic, shallots, and salt and sauté until golden brown, about 1 minute. Raise the heat to high, add the mussels, and toss to coat with the oil. Add the sugar, fish sauce, and 1 teaspoon pepper and stir to combine.
  • Reduce the heat to medium-high, cover, and cook until the mussels open, 3-5 minutes. Discard any that failed to open. The sauce should be the consistency of a light syrup. If the sauce is too thin, using a slotted spoon, transfer the mussels to a plate. Raise the heat to high and cook the sauce, stirring frequently, until reduced, 3-5 minutes. Return the mussels to the kettle and toss to coat.
  • Garnish the mussels with the chile and cilantro sprigs and serve right away.
  • For a more formal supper, set out a small seafood fork at each place setting. At a more casual meal, your guests can also use an empty mussel shell as a pair of pincers to pick the meats from the shells. Show diners this trick at the table. Set out a large bowl for the empty shells.
