DAD'S JERKY MARINADE
My dad has been making beef jerky for about as long as I can remember. He started on an outdoor smoker before graduating to an indoor dehydrator. He has gotten my husband addicted to it. You can use any type of meat that you like. I usually look for large inexpensive roasts with as little fat and marbling as possible.

- Stir together soy sauce, Worcestershire sauce, liquid smoke, and hot pepper sauce in a bowl. Season with garlic powder, onion powder, pepper, and sugar; stir until mixed.
- To use, toss one pound of thinly sliced meat with the marinade until well coated. Place into a resealable plastic bag, and squeeze out the air. Marinate in the refrigerator for 48 hours, mixing twice. Remove meat from marinade, and discard excess marinade. Prepare jerky according to the manufacturer's directions of your smoker or dehydrator.

SUGAR-FREE KETO BEEF JERKY
A simple recipe for a sugar-free keto beef jerky that you can make in your oven. There's no need to marinate the beef! The spice mix and slow cooking are responsible for the jerky's great texture and amazing flavor.

- Preheat your oven to 225 degrees F. Line two large rimmed baking sheets with parchment paper.
- Unfold the steak and place it on a cutting board. Using a sharp knife, cut the beef crosswise, against the grain (so that you sever the tough, thin fibers that you can see on the steak) into 2-inch-wide strips.
- You want the strips to be around 1/8-inch thick, so if they are thicker, slice each strip lengthwise into two thinner, 1/8-inch-thick strips. This is easier to do if the meat is partially frozen.*
- Allow the meat strips to rest at room temperature for about 15 minutes so that they fully defrost and become more pliable. Then arrange them in a single layer on a cutting board, cover them with cling wrap, and use a meat pounder to pound them so that they are thinner and more even in thickness.
- Place the beef strips in a large bowl. Add the salt, pepper, and spices and toss with your hands until the meat is thoroughly coated.
- Arrange the meat pieces on the two prepared baking sheets, not touching each other. Bake for 3 hours, rotating the position of the baking sheets midway, until the beef is browned and dry. The smell will be amazing!
- Remove the strips to a cooling rack placed on a tray or on foil (to catch any drips). Allow to cool and dry for about 30 minutes before enjoying. Refrigerate any leftovers. They're delicious straight out of the fridge.

- Using a meat slicer or sharp knife, cut beef into thin sheets and strips approximately 1/4-inch in thickness. Generally, cutting with the grain of the meat creates chewier pieces, while cutting against the grain produces a more crumbly jerky that is easy to bite into. Choose one direction or another based on desired results, or try a combination of both to see what you prefer! Remove and discard any fat, silverskin (fascia), or other connective tissue from the meat. Place the trimmed beef in a large zipper-lock bag.
- In a small bowl, whisk together the marinade. For a more traditional beef jerky flavor, combine coconut aminos (or soy sauce/liquid aminos!), garlic powder, onion powder, and smoked paprika. For a spicy marinade, combine coconut aminos with Thai garlic chili sauce and sriracha. Pour the mixture into the bag and distribute the marinade throughout the meat by massaging from outside of the bag. Seal the zipper-lock and place the beef in the refrigerator to marinate for a minimum of three hours.
- Remove the slices of beef from the marinade and pat the meat dry with paper towels once you're ready to cook. Liberally season with salt and sprinkle optional toppings if you prefer. Add pepper for peppered jerky or sprinkle red chili flakes to pair with the spicy jerky marinade. Get creative!
- Prep your smoker or fire up your Traeger grill to smoke. Once the grill/smoker is ready, lay the beef out in a single layer directly on the grill or on removable smoker racks. Close the smoker lid once the meat is arranged and smoke until the beef jerky is dry yet flexible when bent, about 4 to 5 hours.
