Number Of Ingredients 10

4 tablespoons unsweetened 100% cocoa powder
⅓ cup boiling water
1 can coconut milk
1 cup macadamia nut milk or other nut milk
⅓ cup confectioners Swerve (or powdered sweetener of choice)
pinch of salt
⅓ cup keto approved chocolate chips
2 teaspoons vanilla extract
2 egg whites
¼ cup confectioners Swerve

Steps:

  • In a small bowl, whisk cocoa in ⅓ cup boiling water. Set aside.
  • In a saucepan, mix together coconut milk, macadamia nut milk, ⅓ cup confectioners Swerve and salt. Simmer until combined, about 2 minutes.
  • Whisk in hot cocoa and chocolate until smooth.
  • Remove from heat. Stir in vanilla.
  • For the meringue topping, beat the egg whites on medium speed until they start to foam (about 1 minute), slowly sprinkle in the remaining confectioners Swerve.
  • Beat until soft peaks form.

1, 14-oz. can unsweetened coconut milk (full-fat)
1 cup unsweetened vanilla almond milk (or plain almond milk)
1/4 cup granulated monk fruit sweetener (see notes for substitutions)
1/4 cup unsweetened cocoa powder
1 teaspoon vanilla
optional add-ins/toppings: pinch of sea salt, 1-2 tablespoon keto-friendly chocolate chips, cinnamon, or coconut whipped cream for topping

Steps:

  • In a medium sauce pan, stir together the coconut milk, almond milk, monk fruit sweetener, cocoa powder, vanilla and pinch of salt. Whisk until combined.
  • Over medium heat, cook the chocolate mixture until hot, about 10 minutes. Whisk frequently. If you're adding chocolate chips, add them in toward the end, stirring until they've completely melted.
  • Pour and serve. Cool down with extra almond milk or serve with coconut whipped cream or toppings of choice.

2.5 tbsp unsweetened cocoa powder
2 squares dark chocolate
15 drops liquid stevia
1 tsp vanilla extract
1/4 tsp pink salt
1 cup nut milk ((optional for more volume))
sugar free whipped cream ((optional))

Steps:

  • Add coconut milk, cocoa powder, dark chocolate, stevia, vanilla extract and salt to a small saucepan over low heat.
  • Whisk to combine until everything is completely dissolved.
  • Bring to a simmer and add nut milk to increase volume, if desired.
  • Remove from heat and pour into two mugs. Serve immediately.

You start with a basic recipe mix and can add some festive cheer with spiced cinnamon, boozy or orange and cardamom flavors.

1/2 ounce sugar free chocolate ((or at least 85%), grated course or ultra course)
2 tablespoons collagen ((marine or grass-fed bovine))
3/4 tablespoon cacao powder (raw (can substitute with cocoa))
1/2 teaspoon sweetener (optional (or to taste))
10 ounces unsweetened almond milk ((option to substitute 2 tbsp with heavy cream, not dairy-free))
1/2 teaspoon vanilla extract
1/2 tablespoon nut butter (optional)

Steps:

  • Mix grated chocolate with collagen powder, raw cacao and optional sweetener in a bowl.
  • In a large pan (deep enough to use a hand blender) bring almond milk and vanilla extract to just under boiling on a medium/ low heat.
  • Turn off the heat and add Hot Chocolate Mix and optional nut butter, if using.
  • Stir with a spatula to combine then blitz with a hand blender until smooth and frothy. This is essential to get the creaminess without cream and also to get rid of any lumps. Option to use a blender like a Vitamix.
  • Adjust the sweetness to taste and level of raw cacao.
  • Optional: Serve with whipped coconut cream or whipped cream.
