Okra Fritter Chaffles Recipe (aka...Keto Fried Okra) image

These Okra Fritter Chaffles (aka...Keto Fried Okra) are super easy, fast, adaptable and really do taste like fried okra!!!

1 egg
1 Tbsp mayo
2 Tbsp heavy cream
1/2 Tbsp Tony Chachere's Creole Seasoning
Onion powder
Salt and pepper to taste
1/4 cup almond flour
1 cup okra (fresh or frozen, thawed)
1/4 cup mozzarella (shredded)

Steps:

  • Whip together egg, mayo, heavy cream, and seasoning.
  • Add almond flour.
  • Combine well and let batter rest for 5 -10 minutes.
  • Stir in okra.
  • Add 3 tablespoons of batter to preheated waffle maker or griddle.
  • Put a little shredded mozzarella on the griddle before adding batter and a little on top after adding it.
  • Cook for 5 mins.
  • Flip and cook a couple more minutes until it reaches your desired crispiness.
  • Remove to a cooling rack and sprinkle with sea salt.

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Wash okra, then chop into bite-sized pieces. Toss with salt and let rest for several minutes. The okra will become sticky and moist, which allows the breading to stick well without additional ingredients.
  • In a medium mixing bowl, combine almond flour, Parmesan cheese, pepper, and salt to taste. Coat okra pieces in the mixture and place on a baking sheet or casserole dish in a single layer.
  • Bake for 40 to 45 minutes, or until okra becomes crispy, stirring occasionally.

2 eggs (beaten)
1/2 cup finely ground almond flour
1 cup finely ground parmesan cheese
1/2 tablespoon baking powder
1 teaspoon Cajun seasoning (sugar-free)
1 teaspoon sea salt
1/2 teaspoon fresh ground black pepper
Avocado oil (if frying)

Steps:

  • Beat the eggs in a shallow dish. In a separate dish, combine the almond flour, parmesan cheese, baking powder, cajun seasoning, salt, and pepper.
  • Dip the okra slices in the eggs and then coat them in the almond flour mixture. Transfer to a parchment-lined baking sheet and continue with the remaining okra.

10 pods okra, sliced in 1/4 inch pieces
1 egg, beaten
1 cup cornmeal
¼ teaspoon salt
¼ teaspoon ground black pepper
½ cup vegetable oil

Steps:

  • In a small bowl, soak okra in egg for 5 to 10 minutes. In a medium bowl, combine cornmeal, salt, and pepper.
  • Heat oil in a large skillet over medium-high heat. Dredge okra in the cornmeal mixture, coating evenly. Carefully place okra in hot oil; stir continuously. Reduce heat to medium when okra first starts to brown, and cook until golden. Drain on paper towels.

1 cup sliced fresh okra (slices are about 1/4-inch thick)
1 egg
1/2 cup grated parmesan cheese
salt and pepper
oil (for frying)

Steps:

  • Clean and slice okra, and sprinkle with salt and pepper.
  • Beat egg in a shallow bowl.
  • Place grated Parmesan cheese in a shallow bowl.
  • Pour okra into the beaten egg.
  • Stir until every okra slice is wet from the egg.
  • Remove with a slotted spoon, and place into the bowl with the Parmesan cheese.
  • Stir until every okra slice is covered with cheese.
  • Place oil in heavy pan to at least 2" in depth.
  • (I use a deep fryer.) Heat until a single slice of coated okra dropped into the oil starts sizzling.
  • Add the okra to the hot oil.
  • Depending on the size of the pan, you may have to do this in two batches.
  • Remove when the okra slices are golden brown and crispy.
  • Drain on paper towels, and serve immediately.
