KETO BUFFALO CAULIFLOWER WINGS
An easy recipe for keto buffalo cauliflower wings, made with no flour and served with a rich blue cheese dressing and celery.

Steps:
- Preheat the oven to 450 degrees F. Line a rimmed broiler-safe baking sheet with foil for easy cleanup.
- Make the blue cheese dressing by mixing all its ingredients in a small bowl. Cover and refrigerate until ready to use.
- Make the buffalo sauce: In a large microwave safe bowl, melt the butter. Whisk in the hot sauce and garlic powder. Set aside.
- In another large bowl, toss the cauliflower florets with the olive oil, salt and garlic powder. Spread on the baking sheet and roast until tender-crisp, about 15 minutes.
- Switch the oven to broil and set an oven rack 6 inches below the heat element (not directly below).
- Whisk the hot sauce mixture again. Add the roasted cauliflower florets and toss to coat. Return the cauliflower florets to the baking sheet and broil until browned and bubbly, keeping a close eye on them so they don't burn, 2-3 minutes.
- Serve the buffalo cauliflower hot, with the blue cheese dressing and celery sticks.

- Preheat the oven to 425 degrees F (220 degrees C).
- Place cauliflower in a large pot and cover with water and bring to a boil. Reduce heat to medium-low, cover, and simmer until fork-tender, about 5 minutes. Drain.
- Meanwhile, combine Cheddar cheese, Colby-Monterey Jack cheese, sour cream, mayonnaise, and onion in a large bowl. Add drained cauliflower and mix until cauliflower is well coated with cheese mixture. Transfer to an oven-safe casserole dish. Sprinkle 1/2 cup Cheddar cheese on top.
- Bake in the preheated oven until top is golden brown and cheese is completely melted, about 30 minutes.

- Preheat the oven to 325 degrees F (165 degrees C).
- Place cauliflower florets in a microwave-safe bowl. Cook in the microwave oven for 10 minutes.
- While cauliflower cooks, heat coconut oil in a pan over medium heat. Add chorizo, mushrooms, and onion; cook and stir until tender, 5 to 7 minutes. Transfer to a baking dish.
- Stir butter, cream, Cheddar cheese, and Parmesan cheese into the cauliflower, in that order. Mix in hot sauce. Transfer mixture to the baking dish with the chorizo mixture.
- Bake in the preheated oven until bubbly, 15 to 20 minutes.
