- Add your chicken pieces to a large bowl, cover with milk or buttermilk, and let soak for about 30 minutes.
- Pour the seasoning mix into a large Ziploc Bag. Drain the milk (buttermilk) from the chicken, and then dip the chicken into the Kentucky Kernel Seasoning Mix.
- Spray your basket with cooking spray, and then place your covered chicken into the basket. Set the temperature to 370 degrees F, air fryer setting, for 12- 15 minutes, or until the chicken's internal temperature reaches 165 degrees F.

- Mix together all the coating ingredients and place in a clean plastic bag. Dip each piece into beaten egg, then into the flour mixture in the bag. Coat the chicken completely with the flour mixture.
- Place the oil in a skillet and heat. Brown the chicken in oil slowly (225ºF if you are using an electric skillet), uncovered. Cover the skillet and continue to fry at a very low heat until the chicken is fully cooked, approximately 30 minutes. Check for doneness before removing the chicken from the skillet. It may need longer to cook on slow heat.
- Drain well on paper towels.

- In a large bowl, mix the eggs and buttermilk, whisk to combine.
- In another bowl, mix the flour, cornstarch, paprika, garlic powder, onion powder, salt, celery salt, pepper, mustard, ginger, thyme, basil, and oregano. Whisk to combine.
- Preheat your air fryer to 375 degrees for 5 minutes.
- Dip your chicken into the buttermilk mixture, let any excess drip off.
- Then place the chicken into the flour mixture and press the flour onto the chicken to make sure it sticks. Shake off any excess.
- Spray the basket with olive oil, and then place the chicken into the basket. Generously spray your chicken with cooking spray. Air fry for 25-30 minutes, flipping halfway through and spraying with more cooking spray.
- Chicken is done with it reaches 165 degrees F, and the outside is golden brown.
- Plate, serve, and enjoy!
KENTUCKY KERNEL 'FRIED' CHICKEN USING THE VORTEX
I prefer to 'fry' my chicken on my Weber Performer using a Vortex insert. I get that perfectly juicy, crunchy skin, crazy good fried chicken flavor without all of the oil. Kentucky Kernel's seasoned flour is a perfect mix of herbs and spices, making for some of the best tasting chicken I've ever had.

- Fire up your Kettle grill with the Vortex loaded with charcoal. Don't start cooking until the coals are all lit and starting to ash over.
- Rinse the chicken and pat dry.
- Pour the seasoned flour mixture into a pie pan or shallow bowl.
- Coat chicken completely in the mixture.
- Transfer chicken to the grill along the edges, skin-side up.
- Cover and cook for 40 minutes, turning the lid 90 degrees every 15 minutes.
- Lightly brush the chicken with a little vegetable oil. Use caution as the grill will be hot.
- Cover and cook another 5 minutes or until the chicken hits 160 F.
- Remove and let rest and come to 165 F before serving.

- 1. * If you can't find Kentucky Kernel seasoned flour at the store then you are welcome to use 3 cups of self rising flour seasoned with salt and pepper* (don't worry about adding the baking powder if your using self rising flour.) I buy my KK seasoning at Walmart but you can always order it online @ Amazon or hodgsonmill.com.
- 2. Wash the chicken and set a side
- 3. In a large bowl beat the eggs.
- 4. Pour the buttermilk into a 9x13 glass baking dish and add the eggs and mix together
- 5. Place the chicken into the buttermilk and egg mixture and let marinate at least an hour. (you can also cover it and let it sit overnight in the fridge)
- 6. Mix the 1TBL baking powder together with the seasoned flour. Roll the chicken pieces one at a time in the flour and place in the skillet or fryer. Put at many pieces in the skillet or fryer that will fit without crowding. Fry until golden brown. If your frying in a skillet then it's 7-8 minutes on each side or in a fry daddy @ 360 degrees for about 15 min.

- In a small bowl combine the egg and milk.
- In a separate bowl, combine the remaining four dry ingredients.
- Dip each piece of chicken into the milk mixture until fully moistened. Roll the moistened chicken into the flour mixture until completely coated.
- Pour the oil into the pressure fryer and heat over medium heat to about 400.
- In groups of 4 or 5, drop the chicken pieces into the oil and lock the lid into place. When the steam begins shooting through the pressure release, set the timer for 10 minutes.
- After 10 minutes, release the pressure according to manufacturer's instruct ions, and remove the chicken to paper towels or a metal rack to drain.
- Repeat with remaining chicken.
- TIDBIT: If you prefer not to use MSG, you may substitute an additional 1/2 TBS. of salt. Be aware however that using MSG produces the best clone of KFC's fried chicken.
