A light, refreshing punch. Clipped this recipe several years ago from a magazine. Cooking time is estimated chill time- can be made and served immediately if desired.

Steps:
- Combine all ingredients except for soda and chill until serving time. Just before serving, add soda.
- Looks pretty in a punch bowl topped with sliced oranges or marichino cherries.

KENTUCKY DERBY LUCKY LEMONADE PUNCH
Lucky Lemonade is a famous Derby-day cocktail, but making one by one when hosting a party is time consuming. This punch tastes exactly like the Lucky Lemonade served at Churchill Downs and is easily made (and should be made) the day before or morning of your big derby party!

Steps:
- Peel, seed and chop the cucumber. Wash the strawberries, remove the stems, and cut each in half. In a food processor, add the cucumber and a small handful of the strawberries, purée until finely chopped. Reserve remaining strawberry halves.
- In a 1 gallon beverage container add the two cans of lemonade concentrate, cucumber/strawberry purée, green tea, water, and gin. Refrigerate and allow to sit for 2 hours.
- After two hours, strain mixture to remove purée, then return to gallon container and add remaining strawberry halves.
- Refrigerate 4 hours (or overnight) and serve over ice.

Steps:
- In a small saucepan, combine the water, sugar and 1 tablespoon of chopped mint. Stir and bring to a boil. Cook until sugar has dissolved, then remove from heat and set aside to cool. After about an hour, strain out mint leaves.
- Fill 2 cups or frozen goblets with crushed ice. Pour 1/2 of the lemonade into each glass and top with a splash of the sugar syrup. Garnish each with a mint sprig and a straw. Serve on a silver platter.
