3 cups sugar
1 cup water
1/2 cup butter or 1/2 cup margarine

Steps:

  • Combine all ingredients.
  • Cook over medium heat but do not stir after mixture starts to boil.
  • Continue boiling until mixture reaches 265 degrees on a candy thermometer.
  • Pour on marble slab or cool hard surface.
  • As edges cool, push toward center once.
  • When cool enough to handle, pull with buttered hands (Keep hands cool with damp cloth).
  • Pull and fold over in a half twist.
  • When pulling is completed, cut into pieces with scissors.
  • Makes approximately 30 half twists.

  • Candy is not hard like taffy but has a softer and smoother consistency.

  • Combine sugar, water, soda, and salt in a large Dutch oven; cook over medium heat, stirring constantly, until sugar dissolves. Cover and continue to cook over medium heat 2 to 3 minutes to wash down sugar crystals from sides of pan. Uncover and cook, without stirring, until mixture reaches soft ball stage (234°).
  • Gradually add whipping cream, without stirring. Continue cooking over medium heat until mixture reaches hard ball stage (260°).
  • Remove from heat; pour mixture into a well-buttered 15- x 10- x 1-inch jellyroll pan. Allow mixture to cool slightly.
  • Work mixture into a mound, using a buttered spatula or candy scraper. Pick up mound with buttered hands; pull, fold, and twist until candy is opaque and begins to stiffen. Divide candy in half, and pull each half into a rope, 1/2-inch in diameter. Twist ropes together, and cut into 1-inch pieces. Wrap each piece in waxed paper.

  • Combine sugar, salt and boiling water in a large pan. Bring to a boil over high heat. Cover the pan with a lid and let mixture cook for exactly 5 minutes.
  • Remove lid and reduce heat to medium. Add a candy thermometer to the side of the pan. Slowly add the cream, a little bit at a time, making sure that the mixture does not stop bubbling. DO NOT stir. Cook until candy reaches 260 degrees on a candy thermometer or forms a hard ball when tested in cold water
  • Remove candy from heat and immediately pour onto a very cold buttered marble slab. DO NOT scrap the insides of the pan. Drizzle the vanilla over the surface of the candy. Using a metal spatula, turn each long side of the candy inward. Flip the candy over to cool the top side.
  • When cool enough to handle, cut the candy in half, (if two people are pulling it). Using your fingertips, pull the candy for at least 3-4 minutes until it’s no longer shiny and sticky and has started to look satiny and lighter in color. Pull the candy into long twisted ropes and place on the marble slab. Using scissors, immediately cut the candy into pieces about 1 1/2″ long. Make sure the candy pieces are not touching since they are still sticky at this point. The candy will now be a consistency of taffy. It’s delicious but try not to eat it.
