SMOKY KENTUCKY CHILI
A uniquely Kentucky take on what is in my opinion the best winter recipe. If you can't find bourbon-smoked spices, you can substitute any kind of smoked spices. The bourbon barrel aging process adds a lovely deep almost woodsy flavor that complements the spicy flavor of the chili.

Steps:
- In a large nonstick saute pan, brown the beef and turkey. Season with smoked salt and smoked pepper. Drain and add to a large pot or slow cooker insert.
- In the same pan, toast the garlic with bourbon-smoked chili powder, chipotle chili powder, cumin, oregano, coriander, smoked paprika, and turmeric until fragrant. Add to pot or slow cooker insert and stir to combine with meat mixture. Add beer, beef stock, crushed tomatoes, black beans, pinto beans, Worcestershire sauce, and chipotle pepper sauce. Stir to combine.
- Simmer on low in large pot or cook in slow cooker on low for at least 2 hours, longer if possible. Make sure to taste the chili before serving and adjust the seasonings as necessary.
- Serve chili with sour cream, shredded cheddar cheese, diced onions, tortilla strips, or any other toppings of your choice.

- 1. IN A SOUP KETTLE; COOK MEATS OVER A MEDIUM HEAT UNTIL NO LONGER PINK; THEN DRAIN.
- 2. ADD THE ONIONS, BELL PEPPER,CELERY AND GARLIC; COOK UNTIL ALL IS TENDER.
- 3. STIR IN ALL THE REMAINING INGREDIENTS.
- 4. BRING TO A BOIL; REDUCE HEAT AND SIMMER FOR 1-1/2 TO 2 HOURS. GIVE A STIR NOW AND THEN WHILE SIMMERING.
- 5. IF IT LOOKS LIKE IT MAY NEED SOME LIQUID WHILE SIMMERING, ADD SOME WATER.
KENTUCKY CHILI

- In a Dutch oven, cook beef and onion over medium heat until meat is no longer pink; drain. Add the tomato juice, water, chili beans, chili powder, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes., Meanwhile, cook spaghetti according to package directions. Drain and stir into chili.

KENTUCKY CHILI
A secret ingredient, no-bean chili courtesy of the Official Chili Cookbook. Don't worry about the alcohol...it cooks out, leaving only flavor. Cornmeal may be substituted for the corn flour (masa), if unavailable.

Steps:
- Brown meat, a handful at a time in oil in a large frying pan.
- Transfer to a Dutch oven or stockpot, add bourbon, beer and tomato paste.
- Cover and let simmer 20 minutes.
- Add all remaining ingredients, except the corn flour.
- Stir, cover and let simmer for two hours, stirring frequently.
- Combine two cups of the liquid to the corn flour to make a smooth paste.
- Slowly add the paste into the meat mixture to thicken.
- Add additional water if mixture is too thick for your taste.

KENTUCKY SOUP BEANS (PINTO BEANS)
Soup beans are Appalachia's answer to Northern bean soups -- pinto beans in a thick bean and meat broth, hot, tasty and filling. No visit to my grandmother was complete unless she made these and a couple pones of her wonderful cornbread, and there were never any leftovers, either! Crumble in a piece of cornbread to soak up...

- 1. Rinse beans and pick out any stones or clumps of dirt. Put in a pot, cover with a couple inches of water and bring to a boil. Reduce to a simmer and allow to simmer for 10 minutes. Remove from heat and allow to soak overnight.
- 2. When you're ready to cook, drain soaking water and beans into a colander and rinse. Put beans into a big pot with a lid. Cover with water again to about an inch above the beans. Cut up hog jowl or salt pork (rinse the salt pork first) and add to pot. Peel and chop onion and garlic and add both to pot. DO NOT ADD SALT.
- 3. Bring to a boil and boil uncovered for five minutes, then turn heat down to a simmer. Simmer for two to three hours, stirring occasionally, or until beans are very soft and the skins break open if you scoop out a spoonful and blow across it. Taste to make sure they're done to your liking. [Note: Cooking in a covered pot results in more liquid than cooking in an uncovered pot. If you like a lot of 'soup', cover the pot; if you prefer your beans to be thicker, leave off the cover. My grandmother half-covered hers, and I do as well.]
- 4. Take the meat from the pot, separate the fat from the meat, chop up the meat and add it back to the pot. Take a half cup of beans from the pot, mash them lightly with a fork until they're a paste, and stir them back into the beans to thicken up the 'soup'. Add salt, pepper and Fiesta pinto bean seasoning (if desired) to taste and serve.

- Put the beer and ground beef in an unheated medium saucepan. Use your fingers to gently rub the beef until it makes a slurry with the liquid. You want this to be a very fine-grained chili which means you don’t want any chunks or lumps. (Some folks use a potato masher rather than their fingers.)
- Lightly paint the inside of a hot dog bun with yellow mustard. Pack 3 or 4 heaping teaspoons chili into the bun, starting with a spoonful in the center and smoothing it over the mustard with the back of the spoon. Add more chili sauce, pressing it out to either end and smoothing it lightly as you go, until the bun is lightly filled, using about 1/3 cup chili sauce total. (Keep in mind you’re not making a sloppy joe. You want the chili should be packed firmly in the bun.) Top with chopped white onion to taste. Serve your chili buns immediately and pass hot sauce on the side.
- Heat the hot dogs by submerging them in boiling water for 5 minutes. Meanwhile, paint the inside of the chili buns’ hot dog buns with yellow mustard, and sprinkle in chopped white onion to taste. Drain the hot dogs and pat them dry. Place them in the buns and cover each with about 2 tablespoons chili sauce, then about 2 tablespoons slaw. Serve your slaw dogs immediately and pass hot sauce on the side.
