A delicious salad with a variety of tastes and textures. Uses packaged salad mixes.

1 (3 ounce) package ramen noodles, crushed
10 ounces cashew pieces
1 (16 ounce) package shredded coleslaw mix
1 bunch green onions, chopped
½ cup white sugar
½ cup vegetable oil
¼ cup cider vinegar
1 tablespoon soy sauce

Steps:

  • In a preheated 350 degree F oven (175 degree C), toast the crushed noodles and nuts until golden brown.
  • In a large bowl, combine the coleslaw, green onions, toasted ramen noodles and cashews.
  • To prepare the dressing, whisk together the sugar, oil, vinegar and soy sauce. Pour the dressing over the salad, toss and serve.

Unlike most Chinese Cabbage Salad recipes, this one doesn't call for Ramen Noodles. If you like them in your salad, though, they can certainly be included. Taste the dressing as it's being prepared. You may want to add a bit more of something, depending on your taste.

5 cups shredded Chinese cabbage (napa)
1 1/2 cups frozen sweet peas, cooked, cooled
2 green onions, diagonally sliced
1 medium carrot, shredded
1/4 cup mayonnaise or 1/4 cup salad dressing
2 tablespoons sesame seeds, toasted
2 tablespoons rice vinegar
1 tablespoon hoisin sauce
2 teaspoons sugar
1 teaspoon soy sauce
1/8 teaspoon ground ginger

Steps:

  • In large bowl, combine first four ingredients.
  • In small bowl, combine remaining ingredients and blend well.
  • Just before serving, add dressing to salad; toss to mix and coat.

2 tablespoons sesame seeds
1 ½ tablespoons rice vinegar
½ teaspoon sesame oil
2 tablespoons white sugar
½ teaspoon salt
¼ teaspoon black pepper
⅓ cup olive oil
4 cups shredded cabbage
2 carrots, shredded
1 (3 ounce) package ramen noodles, crushed

Steps:

  • In a small skillet, toast sesame seeds over medium heat until golden brown and fragrant.
  • In a small bowl, mix together vinegar, sesame oil, olive oil, sugar, salt, pepper, and ramen seasoning packet.
  • In a large bowl, mix together cabbage, carrots, and crushed ramen noodles. Toss with dressing to coat evenly. Top with toasted sesame seeds.

"MILLION DOLLAR" CHINESE CABBAGE SALAD



This recipe is always a hit...with kids too! I used to call it my 'Million Dollar Salad' because buying the sesame seeds was so expensive. Now I buy the sesame seeds in bulk at a health food store and it's much more affordable.

½ cup vegetable oil
½ cup white sugar
¼ cup wine vinegar
1 tablespoon soy sauce
2 (3 ounce) packages ramen noodles (without flavor packets), lightly crushed
½ cup slivered almonds
1 cup sesame seeds
1 head napa cabbage, chopped
1 bunch green onions, chopped

Steps:

  • In a bowl, whisk together vegetable oil, sugar, wine vinegar, and soy sauce until the sugar has dissolved. Refrigerate the dressing while preparing the salad.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Spread the broken ramen noodles, almonds, and sesame seeds onto a baking sheet.
  • Bake the ramen noodle mixture until lightly browned, about 15 minutes, stirring often. Watch carefully to prevent burning. Allow mixture to cool.
  • Just before serving, mix together the napa cabbage and green onions with toasted ramen mixture in a salad bowl until thoroughly combined; toss with the dressing.

1 (3 ounce) package chicken flavored ramen noodles
¼ cup butter
½ cup sesame seeds, toasted
½ cup blanched slivered almonds
1 large head napa cabbage, shredded
6 green onions, chopped
¼ cup vegetable oil
¼ cup rice wine vinegar
1 tablespoon soy sauce
1 tablespoon sesame oil
⅛ cup white sugar

Steps:

  • Crush noodles, place them in a medium skillet and brown in butter over medium heat. Add almonds and sesame seeds. Stir often to prevent burning. Add seasoning mix from noodles and cool. Toss in a large bowl with cabbage and onions.
  • Prepare the dressing by whisking together the vegetable oil, rice vinegar, soy sauce, sesame oil and sugar. Pour over salad, toss and serve.

Wow! This is a terrific variation of a favorite recipe. I found this recipe in Capitol Cookin' "Politically Correct" Recipes from Idaho's Political People and then some. The pineapple is the secret ingredient. This recipe is courtesy of Former Senator Roger and Leslie Madsen. Serving size is estimated.

1 head cabbage, chopped fine
6 ounces ramen noodles, crumbled (WITHOUT SEASONING, 2 packages)
1/2 cup almonds, slivered
1/4 cup sesame seeds
1/4 cup green onion, chopped
20 ounces crushed pineapple or 20 ounces chunk pineapple
1/4 cup salad oil
1/2 cup pineapple juice (from can of fruit)
1/4 cup water
1/3 cup rice vinegar (seasoned)
1/4 cup sugar

Steps:

  • Toast almonds and sesame seeds for 1 minute in oven or broil.
  • Mix cabbage, uncooked ramen noodles, almonds, sesame seeds, green onion, and pineapple.
  • In a separate container, mix salad oil, pineapple juice, water, rice vinegar, and sugar. Mix until sugar appears dissolved.
  • Pour salad dressing over top of salad.
  • Salt and pepper to taste.
  • You may add chunks of cooked chicken if you desire.

Best 8 cents I ever spent!! I use mushroom flavored ramen because there's no "meat" or meat products in the seasoning packets

1 head cabbage or 1 (16 ounce) bag coleslaw mix
3 green onions, sliced diagonally
1 (3 ounce) package ramen noodles, with seasoning packet
6 ounces slivered almonds
1 tablespoon sesame seeds
1/2 cup vegetable oil
1/4 cup sugar
3 tablespoons white vinegar
1/4 teaspoon salt
6 -8 fresh basil leaves, shredded (optional)

Steps:

  • Preheat broiler.
  • Shred cabbage if not using coleslaw mix, and place in salad bowl with green onions.
  • Crumble noodles onto broiler pan, add almonds and sesame seeds and broil for about 2 minutes.
  • Careful not to let sesame seeds burn.
  • In a glass jar with a lid, combine oil, sugar, vinegar, salt, and contents of seasoning packet.
  • Pour dressing over salad, and toss well.
  • Add toasted noodles, almonds, sesame seeds and fresh basil (if using) RIGHT before serving.

1 (3 ounce) package chicken-flavored ramen noodles, crunched up into tiny pieces
4 tablespoons butter
1/4 teaspoon seasoning, packet save rest, set aside
0.75 (16 ounce) bag coleslaw mix (can use whole bag if desired)
1/2 cup sunflower seeds
6 green onions, thinly sliced
1 small red bell pepper, diced small
1/2 cup vegetable oil
1/4 cup vinegar
1/2 cup sugar
1 teaspoon soy sauce
1/4 teaspoon seasoning, packet save last of it for another use

Steps:

  • In frying pan, melt butter. Add ¼ teaspoons seasoning and noodles. Saute 2 minutes, stirring. Set aside on paper towel. In lg. bowl, combine coleslaw mix, kernels, green onions and red bell pepper. Toss, cover and refrigerate.
  • 30 minutes to 1 hour before serving make dressing:.
  • In small bowl, whisk rest of ingredients (except noodles) well til syrupy. Pour over salad, stir well, and refrigerate. Just before serving, stir in noodles.
  • *Variations:.
  • *Sub or add toasted slivered or chopped almonds in place of or in addition to sunflower kernels.
