2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
½ cup butter, softened
1 cup white sugar
2 eggs
2 teaspoons vanilla extract
2 ripe bananas, mashed
1 cup fresh blueberries

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 3 small loaf pans.
  • Mix flour, baking soda, and salt together in a bowl.
  • Beat butter and sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color. Add 1 egg and allow to blend into the butter mixture before adding the second egg along with vanilla extract. Beat mashed bananas thoroughly into the mixture. Add flour mixture in small increments while beating until just combined into a thick batter. Fold blueberries into the batter; pour into prepared loaf pans.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 30 to 35 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

1/2 cup shortening
1 cup sugar
2 large eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 medium ripe bananas, mashed
1 cup fresh blueberries

Steps:

  • Preheat oven to 350°. In a large bowl, cream the shortening and sugar until light and fluffy. Beat in eggs and vanilla. Combine the flour, baking soda and salt; gradually add creamed mixture, beating just until combined. Stir in bananas. Fold in blueberries., Pour into three greased 5-3/4x3x2-in. loaf pans. Bake until a toothpick inserted in the center comes out clean, 30-35 minutes or. Cool for 10 minutes before removing from pans to wire racks.

1 cup blueberries
1 tablespoon all-purpose flour (for blueberries and pan)
3 bananas (ripe)
3 tablespoon vegetable oil
3/4 cup milk
1 teaspoon vanilla extract
1 egg
3/4 cup sugar
2 1/2 cup all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1 tablespoon butter ( for greasing the pan)

Steps:

  • Preheat oven to 350 F degrees. Prepare a 8x5 inch loaf pan by greasing it with the butter and a little flour.
  • Rinse a cup of blueberries and sprinkle them with a bit of flour. This will help so that the blueberries won't sink to the bottom.
  • In a medium bowl mash the bananas with a fork. To this bowl at the oil, milk, vanilla extract, egg, sugar and whisk. Add sugar and whisk.
  • In another bowl mix together the flour, baking powder and salt. Mix the flour mixture with the wet mixture using a wooden spoon or spatula. Add blueberries and mix so that the blueberries are evenly distributed in the batter.
  • Pour batter in prepared baking loaf pan and bake for about an hour or until an inserted toothpick comes out clean.
  • Remove loaf from pan and let cool before slicing into it.

NOT bragging, but everyone says this is simply the best banana bread they've ever had. Blueberries are one of my FAV fruits and I put them in everything!I LOVE to make it, especially since it makes 2 loaves. We keep one and always give the other one away. :)

2 1/2 cups flour
1/2 cup reg. sugar
1/2 cup packed light brown sugar
1 tablespoon baking powder, plus
1/2 teaspoon baking powder
1 teaspoon salt
1/8 teaspoon cinnamon
1/4 cup coconut
3 tablespoons vegetable oil
1/3 cup milk
1 egg
2 teaspoons vanilla
3 medium mashed bananas
1 cup chopped pecans
2 cups frozen blueberries

Steps:

  • In large bowl, mix all ingredients except blueberries for about 30 seconds.
  • Fold in frozen berries.
  • Pour into 2 greased 8 1/2x4 1/2x2 1/2 loaf pans that have been greased on the bottoms only.
  • Bake in 350º oven for 55-60 minutes, til toothpick inserted in center comes out clean.
  • Cool slightly, loosen sides with knife from sides of pan, turn out onto rack to cool.
  • When cool, wrap tightly with plastic wrap, keep refrigerated.
  • Best the next day!
  • *Ialways bake blueberries frozen in breads and muffins so they hold up perfectly, and you don't end up with a hollow blue hole, lol.

LOW GI BLUEBERRY & BANANA BREAD

When I found this I really questioned whether it was low GI because of the honey used. But, I tried it anyway, I loved that it uses buckwheat, and macadamia oil. Anyhow it was really good, I also added some chopped dried pears as suggested in the recipe and it turned out beautifully. You can serve it plain or toasted with cottage cheese or ricotta and topped with fresh fruit like sliced banana, mango, passionfruit or peach and raspberry. Cooking times may vary, the recipe says 50min, but I needed to cover half way and leave it for 65 minutes.

4 egg whites or 2 whole organic eggs
1/2 cup honey or 1/2 cup pure maple syrup
1/2 cup macadamia nut oil or 1/2 cup grapeseed oil
1 teaspoon ground cinnamon
1/2 cup vanilla protein powder or 1/2 cup skim milk powder
2 teaspoons baking powder
1 1/2 cups buckwheat flour
1 1/2 cups blueberries
1/2 cup chopped dried pears (optional)
1/2 cup chopped dried dates (optional)
1/2 cup chopped dried apricot (optional)

Steps:

  • Preheat oven to 325°F.
  • Smash the banana in a large bowl, then mix in the eggs, honey, oil and cinnamon. Add the protein powder, baking powder and buckwheat flour.
  • Fold in the blueberries. Pour into a medium sized baking loaf tin, and bake for 50 minutes, or until cooked through. Cover with foil halfway through cooking if the bread starts to over brown.
  • Remove from the oven and cool for 30 minutes before turning out onto a wire rack to finish cooling.

3/4 teaspoon baking soda
1/2 teaspoon kosher salt
1 cup granulated sugar
1/4 cup butter (softened)
1 cup mashed ripe bananas
2 eggs
1/3 cup vanilla or plain yogurt
1 teaspoon vanilla extract
1 1/2 cups fresh blueberries (plus more for the top of the bread (can substitute frozen although bread may be streaked blue))
Cooking spray

Steps:

  • Preheat oven to 350 degrees F.
  • In a medium bowl, combine the 2cups of flour, baking soda, and salt.
  • Place granulated sugar and butter in a large bowl, beat with a mixer at medium speed until mixture is fluffy and well blended (about 1 minute).
  • Add mashed banana, eggs, yogurt and vanilla; beat until blended. Add flour mixture; beat at low speed just until moist.
  • Place the blueberries in a bowl with 1 tablespoon of flour and toss to coat.
  • Gently fold blueberries into the batter. Spoon batter into an 8 1/2 x 4 1/2-inch loaf pan coated with cooking spray. Press additional blueberries into the top of the batter for decoration.
  • Bake for 60-70 minutes or until a wooden pick inserted in center comes out clean. Cool the bread 10 minutes in pan on a wire rack; remove the bread from pan.
  • Cool completely on wire rack.
