1 kilogram cooked school prawns
1 tablespoon Bertolli olive oil
1 medium (150g) brown onion, chopped
1 tablespoon tomato paste
1 tablespoon curry powder
1 tablespoon brown sugar
2 tablespoon plain flour
2 1/2 cup (625ml) milk
1 cup (120g) frozen baby peas, thawed
2 green onions (green shallots), sliced thinly

Steps:

  • Shell and devein prawns. Heat oil in a large heavy-based saucepan over medium heat; add brown onion. Cook, stirring, until soft but not coloured.
  • Add the paste; cook, stirring, for 1 minute. Add the curry powder, sugar and flour; cook, stirring, for 1 minute.
  • Gradually stir in the milk. Stir constantly until mixture boils and thickens. Stir in the prawns and peas until heated through. Season to taste with salt and freshly ground black pepper.
  • Serve with steamed rice, sprinkled with green onion.

Easy Prawn Curry image

This prawn curry uses only six ingredients and gets ready in less than 20 minutes. Prawns, curry powder, coconut milk, and a few other pantry staples are all you need. Serve it over steamed rice for a complete Indian meal.

1 lb Prawns
1 tbsp Cooking oil
1 tsp Garlic minced
3 tbsp Curry powder
1 tsp Cayenne (hot or sweet paprika)
1/2 cup Coconut milk
1/2 tsp Salt
1/4 tsp Pepper
1/4 cup Cilantro (chopped)
1 tsp Mustard seeds ((optional))
4 Curry leaves ((optional))

Steps:

  • Clean, shell, and devein the prawns or shrimps leaving the tails intact.
  • In a pan or skillet, add oil, mustard seeds and let them sputter - 30 seconds. Then, add the curry leaves and garlic. Followed by the curry powder, cayenne, or paprika - saute for 30 seconds.Pro tip - If not using mustard seeds and curry leaves - start with the oil and garlic.
  • Next, add the coconut milk - and bring it to a boil. Season with salt and black pepper. Cover and simmer on medium heat for 5 minutes. Pro tip - We partially cook the gravy first to prevent the prawn/shrimp from overcooking.
  • Open, add the prawns/shrimp and cilantro. Cover and cook for 8 minutes or until prawns are cooked through.
  • Garnish with more fresh cilantro. Serve over steamed rice.

CREAMY CHICKEN (OR PRAWN) CURRY



Creamy Chicken (Or Prawn) Curry image

This is based on an Australian Weight Watchers recipe. It's very healthy and low fat but tastes like it isn't! I often double the sauce and use it to cook up a 500g bag of defrosted frozen prawn meat. I also change up the veggies ... use whatever you have on hand. I like to throw in a handful of baby spinach right at the end. I have often thought it might be nice with a small tin of pineapple and a tsp of coconut extract ... let me know if you try this!

300 g boneless skinless chicken breasts, cut into strips or 300 g prawns, peeled and tails removed
1 teaspoon minced garlic
2 teaspoons mild curry powder (such as Keen's, see note below)
1 small onion, chopped
2 carrots, chopped
1/2 red capsicum, chopped (AKA red bell pepper)
150 ml evaporated low-fat milk
2 teaspoons chicken stock powder
2 teaspoons cornflour (AKA cornstarch)
1/3 cup water

Steps:

  • Cook chicken in a hot pan coated with cooking spray till brown and tender. (If using prawns, you can stirfry them at this point till they turn pink, or you can wait till the end and just cook them in the sauce for a few minutes.) Remove from the pan and keep warm.
  • Saute the garlic, curry powder, carrots, onion and capsicum for 4 - 5 minutes.
  • Combine cornflour and water in a small bowl.
  • Turn the heat way down low and stir in the milk, stock and cornflour/water mixture. Stir until sauce thickens. Return chicken to the pan and coat with the curry sauce.
  • Serve over rice.
  • NOTE: After a review stating this was "bland" I realised that Keen's Curry Powder (available in Australia) may be quite different from brands available overseas. Keen's brand curry powder has a fairly high salt content. You may need to add salt to this recipe if your curry powder is low in salt.

  • Start by defrosting prawns. Transfer prawns to a bowl and add enough cold water to soak them properly for 15 minutes. Before using, wash the prawns once or twice in running water and add them to the curry.
  • Grind all the ingredients mentioned under ground masala with coconut milk to a smooth paste and set aside.
  • In a pan, heat coconut oil and add ginger and onions. Saute the onions till they are a light golden brown and add tomatoes. Cook the tomatoes for 5-7 minutes till they break down easily with the back of a spoon.
  • Add the ground masala and salt to the pan and bring it to a boil. Reduce the flame and simmer the masala for 10-15 minutes till the color deepens slightly. Add the defrosted (drain the water) prawns to the gravy and cook them for 7-8 minutes. Sprinkle curry leaves on top, mix well and switch off the flame. Let the curry rest for 5 minutes before serving with steamed rice.
