ASIAN CHICKEN SALAD ON CRACKERS



Asian Chicken Salad On Crackers image

Number Of Ingredients 8

2 tablespoons mayonnaise
2 teaspoons reduced sodium soy sauce
1/2 teaspoon toasted sesame oil
2 cups fonely chopped, cooked chicken breasts
1/2 cup finely chopped red bell pepper
1/2 cup slieced green onions
1 package Keebler® Club® Original cracker
coarse ground black pepper

Steps:

  • 1. In small bowl stir together mayonnaise, soy sauce and sesame oil.2. In medium bowl toss together chicken, bell pepper and onions. Add mayonnaise mixture. Toss to coat. Serve on crackers. Sprinkle with pepper.

Club crackers
2/3 cup sugar
1/2 cup brown sugar
1 cup crushed graham cracker
1/4 cup milk
1/2 cup margarine
2/3 cup peanut butter
1/2 cup chocolate chips
1/2 cup butterscotch chips

Steps:

  • Line a lightly greased 9x13 pan with whole club crackers.
  • Heat sugars, graham cracker crumbs, milk, and margarine to a slow boil.
  • Pour over crackers in pan and add another layer of Club crackers.
  • Melt together peanut butter, chocolate chips and butterscotch chips.
  • Pour over crackers and cool.

18 pitted kalamata olives or Tunisan olives
18 cooked, peeled and deveined medium shrimp
18 fresh mint leaves

Steps:

  • 1. In small bowl stir together cream cheese, feta cheese, harissa, cilantro and mint.2. Spread on crackers. Top with olives, shrimp and mint leaves. *NOTE: Harissa is a hot sauce from Tunisia. Look for it in cans, tubes or jars in Middle Eastern markets.

4 ounces cream cheese, softened
1/4 cup pimento-stuffed green olives, finely chopped
1 tablespoon sliced green onions
3/4 teaspoon dried thyme
1/8 teaspoon coarsely ground black pepper
CRANBERRY-ORANGE CREAM CHEESE
4 ounces cream cheese, softened
1/3 cup chopped dried cranberries
1/4 teaspoon grated orange peel
MEAT SPIRALS
6 thin slices deli ham or smoked turkey breast
24 Keebler® Club® Original crackers
fresh parsley, thyme or basil sprigs

Steps:

  • 1. In small bowl stir together 4 ounces cream cheese, olives, onion, thyme and pepper. Set aside.2. In another small bowl stir together 4 ounces cream cheese, cranberries and orange peel. Set aside.3. Carefully spread either olive mixture or cranberry mixture over ham or turkey slices. Starting from long side, roll up. Individually wrap each roll in plastic wrap. Refrigerate at least 2 hours. 4. Remove plastic wrap. With sharp knife trim ends of each roll. Cut each roll into 8 slices. Arrange two slices on each cracker. Garnish with fresh herb sprigs.NOTE: You may substitute ready-to-use garlic-and-herb cream cheese for the olive mixture or cranberry mixure.
