1 cup brown sugar
½ cup white sugar
2 eggs
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
1 pinch salt
3 cups old-fashioned oats
1 (12 ounce) bag semisweet chocolate chips

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
  • Beat butter, brown sugar, and white sugar together until creamy. Add eggs and vanilla extract; stir to combine. Sift flour, cinnamon, baking soda, and baking powder together in a separate bowl; stir into butter-sugar mixture until thick and free of clumps. Gradually stir oats, 1 cup at a time, into batter until evenly mixed. Fold in chocolate chips.
  • Scoop 1 to 2 tablespoons batter and drop onto prepared baking sheet. Repeat with remaining batter, keeping about 2 inches between each scoop.
  • Bake in the preheated oven until edges of cookies are lightly browned, 9 to 10 minutes. Let cookies cool on the baking sheet before removing, 30 minutes.

I modified Beatrice's Excellent Oatmeal cookies very slightly. I came up with something that my boyfriend went CRAZY over! I've never seen him enjoy cookies to that extent! He said I blew his mother's recipe away.

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).

Steps:

1 cup light brown sugar, lightly packed
3 tablespoons granulated sugar
1 stick unsalted butter, at room temperature
1 large egg
1/3 cup white miso paste
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 1/2 cups semisweet chocolate chips (sometimes I use chunks)
Nonstick cooking spray, for the baking sheet

Steps:

  • Beat both sugars and butter together in a medium bowl with an electric mixer until creamy. Add egg, miso and vanilla and beat until well mixed. Add flour and baking soda and mix until just combined. Stir in chocolate chips. Cover with plastic wrap and refrigerate at least 1 hour (this is very important in order to have a chewy cookie that doesn't spread out too much).
  • Preheat oven to 350 degrees F. Spray 2 baking sheets with nonstick cooking spray.
  • Use a medium ice cream scoop to portion cookie dough on the prepared pans. Use two fingers to lightly flatten each scoop of dough. Bake, rotating and switching the pans halfway through, 13 to 14 minutes for a chewy cookie (a few minutes longer if you like a more well-done cookie). Eat warm with a glass of milk and cool the rest on a wire rack.

scant 1/2 cup applesauce or mashed banana
1/4 cup almond or cashew butter OR allergy-friendly sub
1/2 tsp pure vanilla extract
1/16 tsp salt
2-3 tbsp mini chocolate chips or sugar free chocolate chips
2 1/2 tbsp freeze-dried raspberries OR 2 tbsp dried fruit or more chocolate chips
optional 2 tbsp sugar or pinch stevia ((see note below))
optional add-ins, (such as chia seeds, shredded coconut, etc.)

Steps:

  • *Especially if using banana, you can easily omit the added sweetener entirely for a wholesomely delicious taste that's like eating mini muffins in the form of a cookie. If you'd prefer more of a dessert taste, add extra sweetener as desired, starting with the listed 2 tbsp and going from there - if you want to use a liquid sweetener, just cut back on the banana or applesauce.Preheat the oven to 350 degrees. Mash the applesauce or banana with the nut butter until smooth, then stir in all other ingredients until well-combined. Shape into cookies-I used a mini cookie scoop-and bake on a greased cookie sheet for around 15 minutes. Let cool 10 minutes before removing from sheet. I needed to use up some oatmeal and I happened to have some chocolate chips on hand... Voila, the world's best chocolate chip oatmeal cookies!

1 c butter at room temperature
1 c packed light brown sugar
1/2 c cane sugar
2 eggs
4 tsp vanilla extract
1 1/4 c all purpose flour
1/2 tsp baking soda
1 tsp salt
3 c quick cooking oats
2 c semi-sweet chocolate chips

Steps:

  • 1. Preheat to 325 degrees
  • 2. In a large bowl, cream together the butter, brown sugar, and cane sugar until smooth. Beat in eggs one at a time, then stir in vanilla.
  • 3. In a separate bowl combine flour, baking soda, and salt. Stir into the creamed mixture gradually until just blended.
  • 4. Mix in the oats and chocolate chips.
  • 5. Drop by heaping spoonfuls onto greased baking sheet(s).
  • 6. IMPORTANT: Baking time is APPROXIMATELY 12 minutes. The edges of the cookies should be golden brown and the centers still soft.
  • 7. Remove from heat and allow cookies to cool for 5 minutes on the baking sheet before transferring to a wire rack to finish cooling.
  • 8. Enjoy!

1 teaspoon baking powder
1/4 teaspoon salt
1 cup gluten-free rolled oats
1 cup semi-sweet chocolate chips, (plus some extra to sprinkle on top if desired)

Steps:

  • Preheat oven to 375°F. Line a 9-inch square pan with parchment paper. Lightly grease pan as well.
  • Cream together the butter and sugars.
  • Blend in the egg and vanilla.
  • Whisk together the dry ingredients and then blend into the creamed mixture.
  • Stir in the oats and chocolate chips until just combined.
  • Spread evenly into the pan. Sprinkle a few extra chocolate chips on top and press them into the dough.
  • Bake at 375°F for 25-30 minutes. The bars should be golden brown on top and a toothpick inserted in the center should come out clean.
  • Cool completely before cutting into squares.

1/8 teaspoon ground clove
1 cup quick-cooking oats
2 cups chopped pecans
2 teaspoons freshly grated orange zest
12 ounces semisweet chocolate chips

Steps:

  • Preheat oven to 350°F. Line a large cookie sheet with parchment or a Silpat (rubber nonstick baking mat). Using an electric mixer, beat the butter in a bowl until light and fluffy. Add both sugars, salt, and vanilla, and beat until well mixed, about 3 minutes. Stir in eggs, one at a time. Sift together the flour, baking soda, cinnamon, nutmeg, and clove in a separate bowl. Add half of the flour mixture to the butter with the mixer on low speed. Once the flour has been incorporated, add the second half. Stir in the oats, pecans, orange zest, and chocolate chips.
