KATIE'S HOT SALSA
My most requested party snack! Easily made and easily doubled! If you prefer mild salsa, only use 1 jalapeno and/or do not add the seeds. Prep time does not include chill time. If you don't chill it overnight, the flavors won't mix and it won't be very juicy(although it still tastes great). *TIP* Use scissors instead of a knife for the cilantro, it's MUCH easier!

Steps:
- Seed and dice tomatoes in a large bowl.
- Add onion, jalapenos, and garlic.
- Finely chop cilantro and add.
- Toss the mixture and squeeze the lime over it.
- Season with salt and pepper to taste (tasting is a must!).
- Mix once more and chill overnight for best results.

KIM'S FLAMING HOT SALSA
This salsa has a very refreshing taste, but it is extremely hot. My hubby loves it. You can decrease or increase the heat by adding different peppers. This is a great salsa recipe. I will never by store bought again.

Steps:
- Process tomatoes, garlic clove, cilantro, and peppers in a food processor to desired consistency.
- Put in a large bowl add spices, lemon, lime, and vinegar.
- Let salsa sit for 30 minutes for the flavors to marry.
- Put salsa in canning jars and place in refrigerator. It makes about 6 pints. Store in refrigerator for approximately a month.
- ** Caution: Wear gloves while chopping peppers**.

CANNED SALSA THAT TASTES LIKE FRESH SALSA
This recipe is for canned salsa that tastes just like fresh salsa. It is mild to medium in heat, but can be adjusted by adding more or less tomatoes and peppers to taste. Unlike most salsas, you do not need to simmer this salsa for hours before canning. So it tastes very fresh!

Steps:
- Prepare jars by sanitizing them in bleach water, or in a hot rinse cycle in the dishwasher.
- Wash vegetables.
- Chop Peppers and Onions with a food processor or blender. Dump in a very large mixing bowl.
- Add spices and vinegar to the mixing bowl.
- Add Lime Juice and chopped Cilantro (optional) to the mixing bowl.
- Core and chop Tomatoes with a food processor or blender. You can peel beforehand if you'd like, but I rarely peel my tomatoes for this salsa recipe.
- Strain the juice from the tomatoes before adding to the mixing bowl. I like to catch the tomato juice and can it to use in soups.
- Combine all ingredients. Taste with a torilla chip. Adjust the heat by adding more tomatoes (for milder taste) or more jalapenos (for a spicier taste).
- Fill jars with salsa. Wipe the rim clean, and top with a lid and ring.
- Process jars for 45 minutes. (adjust based on altitude)
MANGO SALSA RECIPE

The recipe is great for using up whatever fruit or veggies you have on hand.To make the salsa, simply stir all ingredients together. CINCINNATI-STYLE CHILI

- For the chili: In a stockpot or Dutch oven, combine the tomato sauce, tomato paste, onions, chili powder, cocoa powder, sugar, kosher salt, cinnamon, cumin, garlic salt, allspice, pepper, cayenne, cloves, bay leaves, beef (do not brown first) and 2 cups water. Mix until combined. Cover and simmer over medium-low heat for approximately 2 hours. Stir in the vinegar and simmer for another 30 minutes.
- To serve: Serve on a bed of spaghetti and top with the beans, onions and a mound of cheese (or any preferred combination). Add hot sauce, if desired, and eat with oyster crackers.

- Basically, everything is going to go into a big pot to be cooked. It doesn’t really matter in what order the ingredients go into the pot. I tend to put the vinegar, tomato paste (in glass jars, no BPA!) and spices in first, if only because I’m afraid I’ll forget them at the end and have an incredibly boring (and unsafe) batch of salsa!
