MELTING POTATOES

4 russet potatoes
Kosher salt and freshly cracked black pepper
2 tablespoons vegetable oil
10 tablespoons unsalted butter
1 cup low-sodium chicken broth
2 sprigs fresh rosemary
2 cloves garlic
Flaky salt, to garnish

Steps:

  • Preheat the oven to 400 degrees F.
  • Peel the potatoes and slice off the ends. Cut into 1-inch slices. Season both sides of the potatoes generously with kosher salt and pepper.
  • Heat a cast-iron skillet (or other heavy-duty, ovenproof skillet) over medium-high heat. Add the oil and 4 tablespoons of the butter. Sear the potatoes on one side until golden brown, about 4 minutes. Flip the potatoes and add the broth, rosemary and garlic. Cut the remaining 6 tablespoons butter into cubes and scatter on top of the potatoes. Transfer the skillet to the oven and cook until fork-tender, about 30 minutes. Garnish with flaky salt and spoon the pan sauce all over the potatoes.

I like potato salad any time. The radishes add a nice crunch. A little chopped sweet pickle can be added for a change of pace.

2 lb potatoes, (4-5 potatoes, depending on size) cut in large cubes.
2 eggs, hard boiled, then chopped (optional)
2 radishes, thinly sliced
2 stalk(s) celery, thin sliced
3 green onions, thinly sliced
salt andpepper to taste
1/2 c mayonnaise
1 tsp yellow mustard

Steps:

  • 1. Cook potatoes in salted water until fork tender, about 5-7 minutes. (Check at 5 minutes, you don't want to over cook them) Drain and rinse under cold water.
  • 2. In a medium bowl combine potatoes, celery, eggs, radishes, green onions salt and pepper. Toss gently to mix.
  • 3. In a small bowl mix together mayonnaise and mustard. Mix well. Add to the potatoes and gently blend. Adjust seasonings and serve.

AUNT KATHY'S OLD-FASHIONED POTATO DONUTS



Aunt Kathy's Old-Fashioned Potato Donuts image

As a child, my husband loved going to his Aunt Kathy's in hopes that she would be making his favorite old-fashioned potato donuts. These are light and flavorful. They are best served fresh and warm and enjoyed with a cup of hot coffee, tea, or cocoa. You can leave them plain, dust them with powdered sugar, white sugar and cinnamon, or drizzle them with a glaze.

2 quarts vegetable oil for frying
1 cup white sugar
4 tablespoons shortening
1 cup milk
2 eggs
1 teaspoon vanilla extract
1 cup instant mashed potatoes
4 cups all-purpose flour
4 teaspoons baking powder
1 teaspoon salt
½ teaspoon ground nutmeg
¼ teaspoon ground cinnamon

Steps:

  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Beat sugar and shortening together in a bowl using an electric mixer until creamy. Add milk, eggs, and vanilla extract; stir well. Stir in mashed potatoes. Add flour, baking powder, salt, nutmeg, and cinnamon. Stir using a sturdy spoon, as mixture will be thick. Refrigerate dough for 1 hour so that dough will be less sticky and easier to work with.
  • Lightly flour a countertop and place plastic wrap on top of dough; roll out to desired thickness. Cut into strips or use a donut cutter to make traditional round donuts.
  • Lower donuts carefully into the hot oil in batches. Fry until 1 side is golden brown, 2 to 3 minutes. Turn and continue frying until other side is golden, about 2 minutes more. Transfer to a plate lined with paper towels to drain. Repeat with remaining donuts.
  • Transfer donuts to a wire rack to cool.

KATHY'S MUSHY POTATOES

My now-deceased uncle used to make these when I was a little girl. He lived with us and loved to cook. My Moms' friends would come to visit and they would beg him to make them for a snack! I have made them for years and they are a family favorite with just about any dish. I vary them sometimes by adding shredded cheeses or even Velveeta. I guess you could call them a variation of scallopped potatoes but we just like to call them 'mushy'!!

6 potatoes, peeled and thinly sliced
1 1/2 cups water
salt and pepper
1 cup heavy whipping cream
1/2 cup shredded cheddar cheese (optional)

Steps:

  • Add the peeled and sliced potatoes to a large skillet and add the water. Bring to boiling and stir the potatoes to prevent sticking until fork tender. (I try to make them al dente like pasta) You may have to add more water, play this by ear and just eyeball it. Once the potatoes are tender and most of the water has evaporated add the cream, salt and pepper and continue to heat until thickened and creamy. If you are adding cheese add it with the cream.
  • ( sometimes it is necessary to add more cream if the potatoes look dry -- remember they are supposed to be creamy and 'mushy').

Kathy's Scalloped Potatoes With Ham image

Here is another use for leftover ham and the other ingredients I always have on hand. I like this recipe because it has a hint of thyme in it. There are also directions here in the description if you wish to freeze it. If you want to bake it at 325 degrees instead of at 375 degrees notice my directions (you know how sometimes you want a certain oven temperature to orchestrate your menu-lol). If you want to freeze this start the recipe differently by cutting the potatoes in half and then parboiling them for 10 minutes. Drain, cover with cold water and allow potatoes to cool. Slice potatoes and assemble recipe as directed. Don't bake yet if freezing. Cover well with plastic wrap and foil. Label and freeze. Defrost in refrigerate, remove foil and plastic wrap, recover with the foil and then bake. Thank you Chef #128693 for helping me:)

3 tablespoons flour
1 tablespoon dried parsley
1/2 teaspoon salt
1/2 teaspoon dried thyme
1/2 teaspoon pepper
3 cups skim milk
2 tablespoons skim milk
6 cups potatoes, peeled
1 1/2 cups cooked ham, chopped
1 small onion, chopped

Steps:

  • Preheat oven to 375 degrees.
  • In a saucepan, melt butter.
  • Stir in flour, parsley, salt, thyme, and pepper.
  • Gradually add all of the milk (3C+2T); bring to a boil.
  • Cook and stir for 2 minutes; set pan aside.
  • Combine in a large bowl the potatoes, ham, and onion; place half in a greased 2 1/2 quart baking dish.
  • Top with half of the sauce; put in rest of potato mixture; and then put in last half of the sauce.
  • Cover and bake at 375 degrees for 65 to 75 minutes or until potatoes are almost tender.
  • Bake uncovered, 15-20 minutes longer, or until potatoes are fully cooked.
  • If you need to have an oven at 325 degrees b/c of the rest of the meal, cook 2 hours covered and then 15 minutes uncovered.

2 lb bag of frozen hash brown potatoes
1/3 c of melted butter
4 tsp of salt
1 tsp of pepper
1/2 c of chopped onions
1 can of cream of chicken soup
1 pt of sour cream
8 oz grated cheddar cheese
2 c crushed corn flakes plus 1/4 melted butter

Steps:

  • defrost potatoes mix in melted butter, salt and pepper and stir combine rest of ingredients pour into 3 qt casserole dish top with corn flakes bake at 350 for 40 minutes

This recipe is great for leftover mashed potatoes. From the recipe collection of Bird's sister Kathy. I have also made it using instant mashed potatoes.

2 cups mashed potatoes (leftovers with no skins in the mash)
1 teaspoon garlic powder
1/2 teaspoon paprika (plus more to garnish)
salt, to taste
black pepper, to taste
2 eggs
1/2 cup grated cheddar cheese (or parmesan)

Steps:

  • Mix all ingredients well. Cover and refrigerate for at least a few hours (up to 2 days). Note: if using leftover mashed potatoes, do this the evening you make them fresh, and then refrigerate the mixture.
  • Preheat oven to 375°F Using a piping bag with a large decorative tip (or cut the tip from the bottom of a Ziploc bag), pipe approximately 1/4 cup each of the mixture onto a parchment lined baking sheet 1 inch apart.
  • Spray rosettes with non-stick cooking spray and sprinkle with a bit more paprika. Bake for 18-20 minutes or until heated through.

KATHY'S POTATO DUMPLINGS (KARTOFFELKLOSSE)

From the recipe collection of Bird's sister Kathy. Kartoffelklösse are traditionally served alongside a Roast with lashings of gravy or with Sauerbraten and Rotkohl. Croutons are traditionally inside the dumplings to soak up any extra moisture inside the Kartoffelklösse while prunes are a common filling when accompanying a roast goose, turkey, or other fowl at Christmas. Leftover potato dumplings can be enjoyed the following day sautéed in the butter.

Number Of Ingredients 8

2 lbs potatoes
kosher salt, to taste
1/4 teaspoon freshly grated nutmeg
1/2 cup flour (more if needed)
1 egg, beaten
12 prunes (or 12 large croutons)
1/2 cup butter, melted (1 stick)
3/4 cup seasoned bread crumbs (or seasoned panko) (optional)

Steps:

  • Scrub and rinse the potatoes well and place in a large saucepan of cold water. Bring the unpeeled potatoes to the boil, add some salt and simmer the potatoes for 35-40 minutes or until just tender.
  • Drain the potatoes and cool them slightly for easy handling. You should be able to peel the skins away from the flesh of the potatoes with your bare hands.
  • Once all the potatoes are peeled, cut them into even-sized pieces and refrigerate until cold (up to overnight).
  • Mash the potatoes in a large bowl. Mix in the salt and freshly grated nutmeg. Add half a cup of flour and mix to combine. With your hands knead the mixture in the bowl until a smooth soft dough forms, add more flour by the tablespoon if the dough remains sticky. Finally, add the beaten egg to the mixture.
  • Using 1/4 cup of dough, form the mixture into balls. Insert a crouton, (or prune) into each dumpling. Sealing the filling closed around the dumpling.
  • In a large saucepan of salted simmering water (not boiling), carefully place the dumplings into the water in batches of 4-5. Do not overcrowd them where they may stick together or touch during cooking, which may cause them to fall apart. Cook the dumplings until the dumplings rise to the surface, about 10-14 minutes.
  • In a wide bowl, add melted butter. Remove dumplings with a slotted spoon or strainer. Shake gently to drain, then toss gently in a bowl of melted butter. Cover with lid and keep warm while cooking the remaining dumplings and add them to the butter as well. Sprinkle entire batch with bread crumbs (if desired) and serve.
