HOW TO MAKE HOMEMADE BARBECUE SAUCE
Steps:
- Whisk the ketchup, brown sugar, vinegar, Worcestershire sauce, mustard, hot sauce, salt and a few grinds of pepper in a medium saucepan and bring to a boil over medium heat. Reduce the heat to low and simmer, whisking occasionally, until the sauce has reduced slightly, about 20 minutes.
- If not using right away, let the sauce cool, then store in an airtight container for up to 1 week.

- In a medium saucepan, stir together all of the ingredients: tomato sauce, tomato paste, apple cider vinegar, maple syrup, molasses, Worcestershire, smoked paprika, dry mustard, garlic, salt, black pepper, and cayenne pepper. Bring to a simmer over medium heat.
- Cover with a lid slightly ajar so that the pot is mostly covered to deter splattering, but steam can still escape and the sauce can reduce. Let cook, stirring occasionally, until the sauce thickens, about 10 to 15 minutes.
- Taste and adjust seasonings as desired. Enjoy immediately or let cool and store for later use.

KATE'S HOME-MADE BBQ SAUCE
I started off with some ripe tomatoes from my garden, expecting to make Stewed Tomatoes...instead, they wanted to be Barbecue Sauce. This recipe packs some heat, but it's still sweet.

- Take the stewed tomatoes, and cook them down (over medium heat) until they release most of their liquid in a large sauce pan (or dutch oven), remove solids and return liquids to pan.
- Add chipotle peppers in adobo sauce (if you prefer less heat in your sauce, use 1/4-1/2 can). Continue to simmer, adding spices.
- Slowly add sugar and honey/molasses stirring occasionally.
- Simmer sauce over low to medium heat for as long as necessary to thicken to a sauce, allowing extra liquids to cook off.
- Store refrigerated until use.
