2 c. ketchup
1 c. packed dark brown sugar
1 c. red wine vinegar
3 tbsp. Worcestershire sauce
2 tbsp. yellow mustard
2 tsp. hot sauce
1/2 tsp. kosher salt
Black pepper, to taste

Steps:

  • Whisk the ketchup, brown sugar, vinegar, Worcestershire sauce, mustard, hot sauce, salt and a few grinds of pepper in a medium saucepan and bring to a boil over medium heat. Reduce the heat to low and simmer, whisking occasionally, until the sauce has reduced slightly, about 20 minutes.
  • If not using right away, let the sauce cool, then store in an airtight container for up to 1 week.

6 ounces tomato paste ((1 standard can))
1/3 cup apple cider vinegar
1/4 cup pure maple syrup
1/4 cup molasses
2 tablespoons Worcestershire sauce
2 teaspoons smoked paprika
1 teaspoon dry mustard powder
1 teaspoon garlic powder
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1/8-1/4 teaspoon cayenne pepper ((optional but encouraged))

Steps:

  • In a medium saucepan, stir together all of the ingredients: tomato sauce, tomato paste, apple cider vinegar, maple syrup, molasses, Worcestershire, smoked paprika, dry mustard, garlic, salt, black pepper, and cayenne pepper. Bring to a simmer over medium heat.
  • Cover with a lid slightly ajar so that the pot is mostly covered to deter splattering, but steam can still escape and the sauce can reduce. Let cook, stirring occasionally, until the sauce thickens, about 10 to 15 minutes.
  • Taste and adjust seasonings as desired. Enjoy immediately or let cool and store for later use.

2 tablespoons vegetable oil
½ cup finely chopped yellow onion
2 cloves garlic, minced
1½ cups ketchup
½ cup water
¼ cup packed light brown sugar
3 tablespoons molasses
2 tablespoons apple cider vinegar
1 tablespoon Worcestershire sauce
1 tablespoon chili powder
½ teaspoon smoked paprika
½ teaspoon ground cumin

Steps:

  • In a medium saucepan, heat the oil over medium-low heat. Add the onion and cook, stirring frequently until soft, about 4 minutes. Add the garlic and cook 1 minute more. Add the ketchup, water, brown sugar, molasses, cider vinegar, Worcestershire sauce, chili powder, smoked paprika, and cumin; stir to combine and bring to a simmer. Cook, stirring occasionally, until slightly thickened, about 15 minutes. At this point, the sauce is ready to serve, but if you'd like to make it completely smooth, transfer it to a blender and blend until smooth.

I started off with some ripe tomatoes from my garden, expecting to make Stewed Tomatoes...instead, they wanted to be Barbecue Sauce. This recipe packs some heat, but it's still sweet.

2 can(s) stewed tomatoes
1 can(s) chipotle peppers in adobo sauce
12 - whole, dried cloves
3-4 teaspoon(s) cinnamon
1 tablespoon(s) nutmeg
1/2 teaspoon(s) allspice, ground or 4 whole
2-3 cup(s) brown sugar, firmly packed
1/2 cup(s) blackstrap molasses or honey
2 teaspoon(s) onion powder

Steps:

  • Take the stewed tomatoes, and cook them down (over medium heat) until they release most of their liquid in a large sauce pan (or dutch oven), remove solids and return liquids to pan.
  • Add chipotle peppers in adobo sauce (if you prefer less heat in your sauce, use 1/4-1/2 can). Continue to simmer, adding spices.
  • Slowly add sugar and honey/molasses stirring occasionally.
  • Simmer sauce over low to medium heat for as long as necessary to thicken to a sauce, allowing extra liquids to cook off.
  • Store refrigerated until use.
