1 unbaked 9-inch pie crust
2 cups walnut pieces
1/4 cut butter, melted
1 teaspoon vanilla
2 tablespoons flour
1/2 teaspoon salt
3 eggs, beaten
1 cup pure maple syrup
1 cup skim milk

Steps:

  • Preheat oven to 375. Spread nuts evenly on the bottom of the 9 inch unbaked pie shell; set aside. In mixing bowl, mix melted butter, vanilla, and flour. Add salt. Add eggs and beat til thoroughly mixed. Add maple syrup, and skim milk. Mix well. Pour the filling over the walnuts in the unbaked pie shell. The nuts will float to the top, use a spatula to gently push them under the liquid. (Making sure they are well saturated with the mix will keep them from burning)
  • Bake for 50 to 60 minutes, until a knife inserted in the center comes out clean. Allow to cool for 15 minutes before slicing. May be served with whipped cream. (note-Place in oven with care. I let the mix spill up onto the pie crust edge as I put in the oven. These spots of crust burned -- see picture).

This is Planters' alternative to a traditional pastry pie crust. With Splenda substituted for the sugar, it would be an ideal crust for low carbers.

2 cups pecans or 2 cups almonds
3 tablespoons melted butter or 3 tablespoons margarine
1 tablespoon sugar (or equivalent amount of sugar substitute)

Steps:

  • Combine the ground nuts, butter and sugar.
  • Press the mixture evenly into the bottom and sides of a 9-inch pie plate.
  • Bake at 350°F for 10 to 12 minutes.
  • Cool and fill, as desired.

A delicious bar with a buttery crust that melts in your mouth and a sweet nutty topping similar to pecan pie. I have decreased the amount of liquid in the recipe since the first review.

1 1/2 cups flour
2 tablespoons brown sugar
1/2 cup butter
2 eggs
1/2 cup brown sugar, packed
1 cup walnuts, chopped or 1 cup pecans
1/4 cup maple syrup
2 tablespoons butter, melted
1 teaspoon vanilla

Steps:

  • Combine flour and 2 tbsp brown sugar; cut in butter until coarse crumbs.
  • Press into an ungreased 9x9 or 11x7 bar pan.
  • Bake at 350 degrees for 15 minutes.
  • Beat eggs with 1/2 cup brown sugar, add the nuts, syrup, melted butter and vanilla. Pour over the crust.
  • Return to the oven for 25 more minutes or until set.
  • Cool slightly before cutting into bars.

Sounds strange, but tastes great! This is my mother-in-laws recipe and my husband insisted I share it with you! Make sure you serve it with whipped cream on top!

21 Ritz crackers, finely crushed
1/2 cup walnuts, finely chopped
1 teaspoon baking powder
3 egg whites
1 cup sugar
1 teaspoon vanilla
1 (8 ounce) container whipped topping (like Cool Whip)

Steps:

  • Preheat oven to 325 degrees.
  • Prepare an 8" pie pan with cooking spray (Pam).
  • In a gallon size ziplock bag, crush the 21 Ritz Crackers until almost powder-like.
  • Add the finely chopped walnuts and 1 teaspoon baking powder.
  • Toss with a fork and set aside.
  • In a stand mixer or medium bowl using a hand mixer, beat the 3 egg whites until fluffy.
  • Slowly add 1 cup of sugar and 1 teaspoon vanilla. Beat until stiff and glossy in appearance.
  • Fold the crackers/nuts into the egg whites and pour into the pie pan.
  • Bake for 30 minutes.
  • Allow to cool completely in refridgerator and top with whipped topping before serving. (Optional- add chocolate shavings on top). Enjoy!

This is like pecan pie but lots better. Have never taken it anywhere that I have not been asked for the recipe. In place of the mixed nuts you can use any combination of pecans, walnuts or cashews also.

1 cup sugar
1 1/2 cups corn syrup
4 eggs
1/4 cup butter
1 1/2 teaspoons vanilla
2 cups mixed nuts
1 unbaked 9-inch pie shell

Steps:

  • In a saucepan boil the sugar and corn syrup together for 3 minutes to dissolve the sugar. Cool slightly.
  • In a large bowl beat eggs lightly and slowly pour the sugar/corn syrup mixture into the eggs, stirring constantly.
  • Stir in the butter, vanilla and nuts and pour into crust.
  • Bake at 350 degrees for about 60 minutes or until set in the middle.
  • If getting too brown cover with aluminum foil.during last 15 minutes of cooking.

I got this recipe from a pie cookbook I recieved as a gift a long time ago. When the apples are ready in our backyard I like to try all different kinds of pie to change things up a bit. This one has walnuts in it and is fabulous. I also like the fact that you don't need a crust for this. I serve this with whipped cream.

1 cup sugar
1/3 cup soft butter
1 egg
1 cup flour
1 teaspoon ground cinnamon
1 teaspoon nutmeg
1 teaspoon baking soda

1/4 cup warm water
2 cups green apples, pared and diced
1/2 cup chopped walnuts
whipped cream

Steps:

  • Cream sugar and butter until smooth.
  • Add egg and beat until fluffy.
  • Stir flour with cinnamon, nutmeg and salt.
  • Mix baking soda with warm water.
  • Add flour mixture along with baking soda and water to creamed mixture.
  • Beat until smooth and fluffy.
  • Fold in apples and nuts.
  • Spread into well buttered pie pan.
  • Bake at 350 for 40 to 45 minutes.
